A spring tradition in my family. This wonderful recipe passed down from my great-grandmother combines the sweetness of a crumb topping with a tart custard-style rhubarb pie.

1 cup white sugar
2 tablespoons all-purpose flour
1 egg
½ teaspoon vanilla extract
¾ cup all-purpose flour
½ cup brown sugar
⅓ cup butter, softened
2 cups 1-inch pieces rhubarb
1 (9 inch) unbaked pie crust

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix white sugar, 2 tablespoons flour, egg, and vanilla in a small bowl until combined.
  • Place 3/4 cup flour, brown sugar, and butter in another small bowl; mix until crumbly.
  • Place rhubarb into pie crust. Pour white sugar mixture over the rhubarb. Sprinkle with brown sugar mixture.
  • Bake in the preheated oven until filling is bubbly and crust is golden brown, 30 to 40 minutes.

1 unbaked pie shell
3 cups chopped rhubarb
1 (3 ounce) package strawberry Jell-O gelatin dessert
3/4 cup brown sugar
1/2 cup all-purpose flour
1/2 cup butter or 1/2 cup margarine

Steps:

  • Cut rhubarb in small pieces.
  • Pile the rhubarb pieces in the pie shell.
  • Sprinkle with the Jello.
  • Mix together the flour & sugar.
  • Cut in the margarine.
  • Sprinkle on top of rhubarb and Jello.
  • Bake at 350 for 45 minutes; serve with Cool Whip.

1 unbaked pie crust
2 cups finely diced fresh rhubarb
1 1/4 cups sugar
1/2 cup half-and-half
3 egg yolks, beaten
1/2 teaspoon salt
2 tablespoons flour
3 egg whites
6 tablespoons sugar

Steps:

  • Mix the eggs and cream.
  • Add sugar, salt and flour.
  • Add diced rhubarb in unbaked pie crust.
  • Pour egg mixture over rhubarb.
  • Bake 10 minutes at 400 degrees.
  • Reduce heat to 350 degrees and continue baking additional 45 minutes.
  • Whip egg whites until peaks form.
  • Add sugar.
  • Add meringue mixture sealing pie and bake additional 5-10 minutes- until lightly browned.
  • Cool and enjoy.

This was my dad's favorite pie, and my mom got the recipe from his mother. It's been replicated all over the internet in the past few years. I think the first incidence can be documented to 1995.

1/2 pie crust
1 1/2 cups cut rhubarb, in 1 inch pieces
1/2 cup sugar
2 large eggs, beaten (extra large eggs are even better)
1/2 cup sugar (yes, another 1/2 cup)
1 cup whole milk (not skim milk)
cinnamon

Steps:

  • Place 1/2 pie crust into pie plate.
  • Put the rhubarb in the crust and cover with 1/2 cup sugar.
  • Add the other 1/2 cup sugar to the milk and beaten eggs, and pour mixture over rhubarb.
  • Sprinkle top with cinnamon.
  • Bake at 350 degrees for 45 minutes; let cool before serving to allow custard to set.
  • Note from Julie: this was my dad's favorite pie, and my mom got the recipe from his mother.
  • Note, again: I've been on the 'net for a very, very long time, and this is one of the earliest recipes that I submitted to any search engines. What I can say: it's a tried and true recipe, one we've been using for well over 50 years. It's what my mom will be serving at Christmas this year... what else can I say?

I am a pie-lover and this is hands down my favorite pie. This recipe is my mom's and I've never found one I like better. You can't improve on perfection! I make this as a two-crust pie. My mom's recipe says to bake for 30 min. but I've always needed about 15 minutes more.

4 cups rhubarb
1 1/2 cups sugar
3 tablespoons flour
1 tablespoon butter, melted
2 eggs, beaten
2 unbaked pie crusts

Steps:

  • Preheat oven to 450 degrees.
  • Cut rhubarb stalks into bit-size pieces.
  • In a large mixing bowl, combine sugar, flour, butter and eggs; mix well.
  • Add rhubarb and stir well.
  • Turn into a prepared pie crust and top with the second crust; seal and cut slits to vent steam.
  • Optional: Brush the top crust with another beaten egg (may be thinned with water) and then sprinkle regular sugar generously over the top.
  • Put in 450 degree oven for 10 minutes, then turn down to 350 degrees.
  • Bake 30 minutes. I generally need to add another 15-20 minutes to the baking time; the crust will be a deep golden brown.
