"We converted some bread recipes from my husband's grandmother for use in the bread machine," writes Jeannie Thomas, Kokomo, Indiana. "This dark, slightly sweet bread is great toasted."

1 cup warm milk (70° to 80°)
2 tablespoons butter, softened
2 tablespoons molasses
1 egg
1-1/2 teaspoons salt
2-1/2 cups bread flour
4-1/2 teaspoons sugar
1/2 cup rye flour
1/4 cup whole wheat flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

4 cups bread flour
2 tablespoons butter
2 tablespoons dry milk powder
⅓ cup molasses
1 tablespoon active dry yeast
2 teaspoons salt

Steps:

  • Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
  • If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
  • To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

Number Of Ingredients 9

2 cups boiling water
1 cup quick-cooking oats
1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup molasses
1 tablespoon canola oil
1 teaspoon salt
6 to 6-1/2 cups all-purpose flour
1 teaspoon butter, melted

Steps:

  • In a bowl, pour boiling water over oats. Let stand until mixture cools to 110° to 115°, stirring occasionally. , In a bowl, dissolve yeast in warm water. Add the molasses, oil, salt, oat mixture and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cove rand let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two 9x5-in. loaf pans coated with cooking spray. Cover and let rise until doubled, about 1 hour., Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on wire racks. Brush with melted butter.

2 cups old-fashioned oats
1 cup molasses
1/4 cup sugar
3 tablespoons canola oil

Oatmeal Molasses Bread via the bread machine. I often just use the dough cycle, take the dough out when done, and let it rise on more time. I then bake it in the oven at 350 degrees F (175 degrees C) for about 28 minutes. The texture is just like a real homemade loaf. Enjoy!!!!!

3/4 cup boiling water
1 cup warm water (105°F to 115°F)
1 envelope dry yeast
6 tablespoons lightly unsulfured molasses
2 tablespoons (1/4 stick) butter, room temperature
1 1/4 teaspoons salt
4 1/2 cups (about) unbleached all purpose flour
1 tablespoon melted butter mixed with 1 teaspoon light unsulfured molasses (glaze)
1 tablespoon old-fashioned oats

Steps:

  • Place 1/2 cup oats in large bowl of electric mixer fitted with dough hook; pour 3/4 cup boiling water over. Let stand 30 minutes (water will be absorbed and oatmeal will be very soft).
  • Pour 1 cup warm water into 2-cup glass measuring cup. Sprinkle yeast over; stir to blend. Let stand until yeast dissolves, about 10 minutes. Mix molasses, 2 tablespoons butter and salt into oat mixture in bowl. Mix in yeast mixture. Add enough flour, 1 cup at a time, to form medium-soft dough, mixing at medium speed until well blended, about 3 minutes. Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if dough is too sticky, about 5 minutes. Form dough into ball. Butter large bowl; add dough, turning to coat. Cover bowl with plastic wrap, then towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Position rack in center of oven and preheat to 400°F. Butter 9x5-inch loaf pan. Punch down dough; turn out into floured surface and knead 3 minutes. Form into 8-inch-long loaf. Transfer to prepared pan. Cover with plastic, then towel; let rise in warm draft-free area until dough has risen about 1/2 inch above rim of pan, about 45 minutes.
  • Bake bread 10 minutes; reduce temperature to 350°F. Bake 25 minutes longer. Brush top of bread with glaze; sprinkle 1 tablespoon oats over. Bake until bread is golden and sounds hollow when tapped on bottom, about 10 minutes longer. Transfer to rack; cool in pan 10 minutes. Turn out brad onto rack; cool completely. (Can be made 2 weeks ahead. Wrap tightly in foil and freeze. If desired, reheat wrapped bread in 350°F oven about 15 minutes.

1 cup rolled oats
¾ cup molasses
2 tablespoons butter
1 teaspoon salt
1 ½ cups boiling water
1 tablespoon white sugar, divided
¼ cup warm water (about 100 degrees F/38 degrees C)
2 ½ teaspoons active dry yeast
4 ½ cups bread flour
1 ½ cups raisins

Steps:

  • Place oats, molasses, butter, and salt into the bread maker bowl; add the boiling water.
  • Measure 1/4 teaspoon sugar into a small cup and set aside. Pour remaining sugar into the oat mixture and stir. Let mixture cool to about 100 degrees F/38 degrees C, about 20 minutes.
  • Pour warm water into the reserved sugar in the small cup; add yeast.
  • Pour bread flour atop the oat mixture. Pour yeast mixture over the flour.

A hearty nutritious bread from your bread machine. I've been experimenting with many Molasses Oatmeal Bread recipes. By experimentation, I've created my favorite. The foundation for this recipe was from CaramelPie.

1 1/4 cups lukewarm water
1 egg
1 tablespoon vegetable oil
1/2 cup molasses
1 teaspoon salt
3 cups bread flour
1 cup oatmeal

  • Add 1 cup water to measuring cup.
  • Crack egg into water.
  • Add additional lukewarm water to make 1 1/4 cup.
  • Mix egg and water with fork and pour into bread machine pan.

  • Set bread machine settings to basic white setting with light crust.
  • If dough appears too sticky, add a small amount of bread flour to pan. Keep adding until dough leaves side of pan.

1 2/3 cups buttermilk or plain yogurt, or 1 1/2 cups milk and 2 tablespoons white vinegar (see Step 2)
2 1/2 cups (about 12 ounces) whole wheat flour
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon baking soda
1/2 cup molasses

Steps:

  • Heat oven to 325 degrees. Grease an 8-by-4-inch or 9-by 5-inch loaf pan, preferably nonstick.
  • If using buttermilk or yogurt, ignore this step. Make soured milk: warm milk gently -- 1 minute in the microwave is sufficient, just enough to take the chill off -- and add vinegar. Set aside.
  • Mix together dry ingredients. Stir molasses into buttermilk, yogurt or soured milk. Stir liquid into dry ingredients (just enough to combine) then pour into loaf pan. Bake until firm and a toothpick inserted into center comes out clean, 45 minutes to 1 hour. Cool on a rack for 15 minutes before removing from pan.

This is a dark "quick bread" that is fast and easy to prepare. Because it doesn't use yeast, you don't need to knead it or let it rise. Don't be put off by the long list of instructions. It's just that the recipe is very detailed. I am not a breadmaker and managed this recipe quite successfully. From Cooking Light, October 2002. This was published as part of an article pairing soup recipes with bread recipes. The "partner" for this recipe is Mexican Ham and Bean Soup, which is also delicious. This is also nice spread with a little butter for breakfast.

1/2 cup oats
1/4 cup unsulphured molasses
2 tablespoons vegetable oil

1 teaspoon baking powder
1 teaspoon baking soda
1 cup raisins or 1 cup currants
1 tablespoon yellow cornmeal or 1 tablespoon polenta

Steps:

  • Preheat oven to 400°F.
  • Combine milk, oats, molasses and oil in a bowl.
  • Measure flours by lightly spooning into measuring cups and levelling with a knife. As you may know, "scooping" flour will cause you to use too much.
  • Whisk or sift together flours, sugar, salt, baking powder and baking soda.
  • Add wet mixture to dry mixture and stir just until combined.
  • Add raisins, stirring "until the dough pulls together in a shaggy mass". The original recipe suggests a wooden spoon for this.
  • Split dough in half. With each half, turn out onto a floured surface and knead for 1 minute. Expect the dough to be sticky and wet. Form into a 6-inch round loaf and place on a baking tray sprinkled with cornmeal.
  • Make 3, 1/4 inch deep, diagonal cuts across each loaf.
  • Bake at 400°F for 20 minutes, then for 15 minutes more at 375°F These loaves will look browned before they are actually finished, so test for doneness by "knocking" on the bottom of the loaf. It will sound hollow when finished.
  • Let stand about 15 minutes before slicing to serve.

1 cup water (70° to 80°)
1/4 cup molasses
1 tablespoon vegetable oil
1/4 cup cornmeal
1/2 teaspoon salt
3 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

½ cup butter, softened
1 egg
1 cup molasses
2 cups mashed banana
1 cup whole wheat flour
¾ cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream the butter. Beat in egg, molasses and banana. Mix in whole wheat flour, all-purpose flour, baking soda, salt, nutmeg and walnuts; stir until well blended. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 65 minutes, or until a toothpick inserted into center of the loaf comes out clean.

2 cups whole wheat flour
1 cup all-purpose flour
1 ¼ teaspoons baking powder
1 ¼ teaspoons salt
4 teaspoons vegetable oil
⅞ cup boiling water
3 tablespoons honey
3 tablespoons molasses
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet. Whisk the whole wheat flour, all-purpose flour, baking powder, and salt together in a bowl.
  • Mix vegetable oil, boiling water, honey, and molasses into the flour mixture, and stir until thoroughly combined. Turn the dough out onto a well-floured work surface, and knead a few times to be sure the dough is completely mixed. Divide the dough into quarters, and roll each quarter into a ball. Press each dough ball into a circle about 1/4-inch thick, and place on prepared baking sheet. If desired, use a kitchen knife to lightly score the breads with 2 criss-cross lines to break the breads apart later.
  • Bake in the preheated oven until browned, about 15 minutes. If desired, brush the breads with melted butter after removing from oven.

Steps:

  • Set oven to 350 degrees F.
  • Grease an 8 x 4-inch loaf pan.
  • In a bowl sift together white and whole wheat flour, oats, baking soda, cinnamon and salt.
  • In another bowl beat the butter with sugar and molasses for about 2 minutes.
  • Add in eggs, beat until combined.
  • Add in bananas, sour cream applesauce and vanilla; beat until blended.
  • Add in the flour mixture; beat at low speed just until moistened.
  • Spoon the batter into prepared baking pan.
  • Bake for about 1 hour, or until bread tests done.

MOLASSES GOLDEN RAISIN BREAD

This is an old recipe that I have scaled down for use with a bread machine(to make the dough only). Called Lassy Bread in Newfoundland, it is sweet with molasses and chock full of raisins. Best served warm or toasted with butter. Note: Edited to correct errors - thanks to reviewer

1/2 cup warm water
1/2 cup milk, warm but not hot
1/4 cup molasses
2 teaspoons active dry yeast
2 tablespoons vegetable oil
1 egg, beaten
1 teaspoon salt
3 cups all-purpose flour
1 teaspoon cinnamon
1 cup golden seedless raisins

Steps:

  • Add all the ingredients except the raisins to the breadmaker and run on the dough cycle, for my breadmaker this is the order given and the dough cycle lasts 90 minutes. Note: I like to mix the warm water, milk and molasses and "proof" the yeast in it for about 10 minutes before adding the remaining ingredients.
  • When the dough cycle has finished start it again, and add the raisins, let it run for 5 to 10 minutes to mix all the raisins in and then stop it.
  • Make dough into a smooth loaf and place in a greased 9" x 5" loaf pan.
  • Cover with plastic wrap and let raise until doubled.
  • Bake in a preheated 350F oven about 35-45 minutes, loaf should be golden and sound hollow when tapped.
