BLT BISCUIT SLIDERS

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Combine the flour, baking powder, sugar and 1 teaspoon salt in a food processor and pulse until combined. Add the butter; pulse until it is in pea-size pieces. Add the cheddar and scallions and pulse 2 or 3 times to incorporate. Add the buttermilk and pulse a couple of times until the dough just comes together.
- Turn out the dough onto a lightly floured surface. Pat into a 6-by-7-inch rectangle (1/2 to 3/4 inch thick). Cut out biscuits with a floured 2-inch biscuit cutter and transfer to the prepared baking sheet. Pat the scraps together and repeat to make 16 biscuits total. Brush the tops with buttermilk. Bake until lightly golden and puffed, 12 to 15 minutes. Transfer to a rack and let cool.
- Meanwhile, working in batches, cook the bacon in a large skillet over medium heat, turning, until crisp, about 5 minutes. Drain on paper towels. Break each slice into thirds.
- Mash the avocado in a small bowl with the lime juice and jalapeno brine; stir in the chopped jalapenos and season with salt. Season the tomatoes with salt.
- Split the biscuits; spread the top halves with the mashed avocado. Fill with the bacon, lettuce and tomatoes.

- 1. For cranberry ketchup: In a small saucepan, combine brown sugar, cranberries, mustard, ketchup, molasses, Worcestershire sauce, chili powder and paprika.Bring to boiling over medium-high heat and boil gently. uncovered, about 10 minutes or until thickened, stirring occasionally. Remove from heat; cover and set aside.
- 2. In a large skillet, cook bacon until crisp. Stir together maple syrup and pepper. Drizzle over bacon slices in skillet. Cook covered 1 to 2 minutes more. remove bacon from skillet. cut bacon slices in half crosswise and wrap bacon in foil.
- 3. In a large bowl, combine ground chicken, shallots, basil, salt, pepper,thyme,garlic and sage, mix well. Shape into 12 patties.
- 4. Place patties on greased charcoal grill directly on medium heat. grill for 14 minutes or until no longer pink. turning once. During the last 2 minutes, add the bacon packet to the grill and top patties with cheese.
MOLASSES BLT SLIDERS

- MIX ground beef, 1 tablespoon of the Seasoning and cheese in medium bowl until blended. Shape into 8 patties.
- GRILL over medium heat 3 minutes per side or until burgers are cooked through (internal temperature of 160 degrees F).
- MIX mayonnaise and remaining 1 teaspoon of the Seasoning in small bowl. Spread on rolls. Top with burgers, lettuce and tomato slices.

- Preheat waffle maker. Whisk together first five ingredients. In another bowl, whisk egg yolks, milk and butter. Stir into dry ingredients just until moistened. Stir in cheese., In a separate bowl, beat egg whites until stiff but not dry. Fold into batter. Drop 1 heaping tablespoon of batter in the center of each waffle iron quadrant; bake according to manufacturer's directions until golden brown, about 5 minutes. Cool on wire rack. Repeat with remaining batter., Spread mayonnaise evenly over half of the waffle pieces; top with bacon, tomatoes, lettuce, seasonings and remaining waffle pieces to make sliders. Serve immediately.

- Place bacon in a food processor; cover and process until finely chopped. In a large bowl, combine the milk, egg, bread crumbs, onion and seasonings.
