This recipe is similar to one in my Better Homes cookbook. It's a lower fat version (feel free to use regular versions of ingredients) a great little sauce to dress up any thing. I am submitting so that I can add this to my online cookbook. I hope you enjoy it too

Yield 1 cup sauce

Number Of Ingredients 5

1/2 cup fat-free mayonnaise or 1/2 cup Miracle Whip
4 ounces fat free sour cream
1 teaspoon prepared mustard
2 teaspoons lemon juice
skim milk

Steps:

  • Whisk mayo, sour cream, mustard and lemon juice together over low heat until hot.
  • Add milk a little at a time if needed to reach desired consistency.
  • Start to finish approx 10 min!

1 tablespoon cornstarch
1 cup cold water
2 tablespoons olive oil
2 tablespoons white vinegar
2 tablespoons plain low-fat yogurt
1 teaspoon prepared yellow mustard
1/2 teaspoon prepared horseradish

Steps:

  • Place the cornstarch in a small saucepan, whisk in the cold water, and set the pan over medium heat. Cook, stirring constantly, until the mixture comes to a boil. Boil for 1 to 2 minutes or until the mixture is clear. Remove from the heat and transfer to a small bowl.
  • Whisk in the olive oil, vinegar, yogurt, mustard, and horseradish. Store tightly covered in the refrigerator for up to 2 weeks.

This sauce is great on poultry, fish, rare beef, steamed veggies (especially asparagus, broccoli, or cauliflower), whole grains, and wild rice.

3 ounces cream cheese, softened
2 egg yolks
2 tablespoons lemon juice
¼ teaspoon fine salt
½ cup milk, or as needed

Steps:

  • Mix cream cheese and egg yolks together in a bowl with an electric mixer. Stir lemon juice and salt together in a separate small bowl.
  • Transfer cream cheese mixture to saucepan over low heat; whisk in lemon juice mixture. Increase heat to medium-low; bring cream cheese mixture to a boil, whisking constantly, about 3 minutes. Whisk milk in gradually until desired consistency is reached. Continue to cook, whisking constantly, until smooth sauce forms, 1 to 2 minutes.

When I need a quick and easy sauce for veggies or poached eggs, I stir this together for instant 'Hollandaise'.

1/2 c melted butter
1/2 c real mayonnaise
1/2 tsp lemon juice (or to taste)

Steps:

  • 1. Melt the butter (I use 'I can't believe it's not butter' light) in the microwave
  • 2. Whisk in the mayonnaise (I use Hellmann's light) and the lemon juice
  • 3. Let sit at room temperature until veggies are cooked, then pour sauce directly onto them. The heat from the veggies heats the sauce.
  • 4. This is a great quickie sauce for broccoli, asparagus or quick eggs benedict.

1 part mayonnaise
1 part butter
to taste lemon juice, fresh

Steps:

  • 1. In a small microwaveable bowl, melt the butter and let cool. Mix in mayonnaise (NOT Miracle Whip) and add a squeeze of fresh lemon juice to taste. Whisk together until smooth. If it is too thick, warm slightly or add a tiny bit of hot melted butter and rewhisk. Serve over anything savory. (My option)
  • 2. If you like cauliflower or broccoli with lemon and butter, try it with this sauce, topped with some shredded cheddar. It is soooooo yummy. Or use it for any recipe calling for Hollandaise sauce.
