3 slices bacon, cut in half lengthwise
8 ounces mushrooms, finely chopped, about 2 cups
3 teaspoons minced garlic, divided
1 tablespoon butter or 1 tablespoon margarine, melted
4 slices French bread (1/2 inches thick)
1 lb ground beef
2 tablespoons Worcestershire sauce
1 egg yolk
3/4 teaspoon salt
1 teaspoon cracked black pepper
1/3 cup red wine or 1/3 cup beef broth
1 tablespoon Dijon mustard
1/4 teaspoon dried rosemary, crumbled

Steps:

  • In skillet over medium-high heat, cook bacon until just beginning to brown, 3-4 minutes. Drain on paper towel; reserve.
  • Remove and reserve all but 1 t drippings from pan. Add mushrooms; cook until liquid evaporates, 6-8 minutes.
  • Add 2 t garlic; cook 1 minute.
  • Transfer mushrooms to bowl; cool 10 minutes.
  • Meanwhile, preheat oven to 425 degrees.
  • Combine butter and remaining garlic; brush over both sides of bread. Place on baking sheet. Bake until golden, 4-5 minutes.
  • In bowl with mushrooms, mix in beef, Worcestershire sauce, egg yolk and salt just until combined; shape into 4 patties.
  • Wrap reserved bacon around patties; secure with toothpicks.
  • Sprinkle with pepper.
  • In same pan, heat 1 T reserved bacon fat and add the patties. Cook, turning once, 5-6 minutes per side until no longer pink inside.
  • Remove from pan; discard all but 2 T drippings.
  • Add wine, mustard and rosemary. Cook, stirring, until thickened, about 30 seconds. Remove toothpicks.
  • Serve the sauce with the beef patties.
  • You can top the bread with the beef patties or you could just eat the garlic bread on the side.

1 pound ground beef
¾ cup bread crumbs
2 eggs, beaten
2 tablespoons chopped onion
1 ½ teaspoons salt
⅛ teaspoon pepper
6 slices bacon
½ cup ketchup
2 tablespoons brown sugar
¼ teaspoon dry mustard

Steps:

  • Preheat your oven's broiler.
  • In a medium bowl, mix ground beef and bread crumbs. Add eggs, onion, salt and pepper; mix well. Shape into 6 thick patties. Wrap bacon around the outside rim of each patty, and secure with a toothpick or kitchen string.
  • Place on rack in broiler pan or casserole dish and broil 5 inches from heat source for 10 minutes. Take out of oven and turn patties over.
  • Mix ketchup, brown sugar and mustard in small bowl. Spoon over patties, and return to broil for 5 minutes longer or until meat is firm, and no longer pink in the center.

2 boneless, skinless chicken breasts
1 cup dill pickle juice
1 1/2 cups milk, divided
1 cup peanut oil
1 large egg
1/2 cup all-purpose flour
1 tablespoon confectioners' sugar
Kosher salt and freshly ground black pepper, to taste
4 hamburger buns, split
1 head green leaf lettuce, leaves separated
1 beefsteak tomato, sliced
Dill pickle slices

Steps:

  • Place a chicken breast on a cutting board. With your hand flat on top of it, carefully slice the chicken in half horizontally. Trim excess fat as needed. In a large shallow baking dish, combine chicken, pickle juice and 1/2 cup milk; marinate for at least 30 minutes. Drain well. Heat peanut oil in a large skillet over medium high heat. In another large shallow baking dish, whisk together remaining 1 cup milk and egg. Stir in chicken to coat and drain excess milk mixture. In a gallon size Ziploc bag or large bowl, combine chicken, flour and confectioners' sugar; season with salt and pepper, to taste. Working in batches, add chicken to the skillet and cook until evenly golden and crispy, about 4-5 minutes. Transfer to a paper towel-lined plate. Serve chicken immediately on burger buns with green leaf lettuce, tomato and pickles.
