1 c fresh red seedless grapes
1 c pineapple chunks, fresh
1 c strawberries, fresh slices
1 c honeydew melon, medium chunks
1 c cantaloupe, medium chunks
2 medium sunkist oranges, squeezed
1 mint leaf for garnishment

Steps:

  • 1. Clean and wash all fruit thoroughly and slice all fruit melon, pineapple, and cantaloupe into chunks. Slice grapes and strawberries in half.
  • 2. Place fruit into a large decorative bowl or serving platter and pour freshly squeezed orange juice over fruit.
  • 3. Dice mint leaf and sprinkle for garnishment.

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

1 (3.5 ounce) package instant vanilla pudding mix
1 ½ cups milk
⅓ cup frozen orange juice concentrate, thawed
¾ cup sour cream
1 (20 ounce) can pineapple tidbits, drained
1 (15 ounce) can sliced peaches, drained
1 (11 ounce) can mandarin orange segments
2 bananas, sliced
1 apple - peeled, cored and sliced

Steps:

  • In a medium mixing bowl, combine pudding mix, milk, and orange juice concentrate. Beat with an electric mixer on medium speed for 2 minutes. Mix in sour cream.
  • In a large salad bowl, combine fruits. Gently mix in orange dressing. Cover, and refrigerate for 2 hours.

1 can (20 ounces) pineapple tidbits, drained

  • In a large bowl, combine the bananas, strawberries, pineapple and oranges. In a small bowl, fold whipped topping into sour cream. Serve with fruit salad.
