Bulgarian Vegetarian Mish Mash image

Great vegetarian dish. Very simple to make with just a few ingredients. Could be served either as a main course or as a side dish. You can use 2 yellow (instead of green) and 2 red bell peppers if you prefer. If you like feta, you could use more. I personally, love feta and double the amounts for the feta. This super cheese dish goes great with a crispy crust bread like ciabatta. Enjoy!

Number Of Ingredients 10

2 onions (chopped)
1 green bell pepper (chopped)
3 red bell peppers (chopped)
4 tomatoes (cubed)
2 minced garlic cloves (optional)
8 eggs
8 ounces feta cheese (crumbled)
4 tablespoons olive oil
parsley
black pepper

Steps:

  • In a pot on medium heat, saute onions till transparent. Reduce heat to low and add bell peppers and garlic. Continue sauteing for about 15 minutes or until soft.
  • Add the tomatoes and continue to saute for another 15 minutes.
  • Add the cheese and all eggs and stir until well mixed .
  • Season with black pepper and remove from heat. You can serve each portion sprinkled with parsley.

1/2 onion, chopped
1 clove garlic, chopped
1 lb 90% lean ground beef or ground turkey
1 lb spinach leaves, cleaned
Nutmeg
Salt and pepper
Sour cream or yogurt

Steps:

  • In a pan large enough to hold the full pound of spinach, brown ground beef. Add chopped onion, cooking just til soft. Add garlic. Add spinach on top of ground beef and onion mixture. Cover and wilt for 2-3 minutes. Remove lid and stire to combine beef, onion, and spinach. Grate fresh nutmeg to taste. Add salt and peper to taste. (Use a slotted spoon to dish up to keep the juices under control.) Serve with a dollop of sour cream or yogurt. Excellent with crusty bread on the side.

MISH MASH SOUP



Mish Mash Soup image

You can pretty much add any veggies you want to this soup, the base is the best and tastiest part of it.

6 large yukon gold potatoes
1 - whole onion
1 - beet, trimmed
5 - stalks of celery
1 package(s) jimmy dean sage flavored sausage
4 - carrots, chopped
- spoonfuls of "better than buillion" to taste

Steps:

  • Grab a large cooking pot, and fill it with 3-6 quarts of water (depending on how many you are feeding). Bring the water to a boil, add the potatoes and any other veggies.
  • In a separate skillet (while your veggies are boiling), cook the sausage into bite size pieces, and cook thoroughly.
  • When the sausage is done, and your veggies are soft when speared with a fork, add the sausage into the pot. Add 2-3 spoonfuls of beef buillion paste, I use "Better Than Buillion" to taste.

Number Of Ingredients 10

•1 onion, roughly chopped
•2 cloves of garlic
•3 tablespoons coconut oil, ghee or butter
•6 cups roughly chopped vegetables (zucchini, broccoli, celery – whatever you have)
•1 litre vegetable stock or chicken stock (buy her book for Basic Chicken stock recipe)
•1 cup rocket or watercress (optional)
•1 cup roughly chopped coriander, basil or flat-leaf parsley
•Pinch of salt
•Juice of 1 lemon
•½ cup crumbled sharp cheddar

Steps:

  • In a large saucepan, sauté the onion and garlic in coconut oil. 2. Add the green vegetables and stir for a minute, then pour over the stock and bring to boil. 3. Reduce the heat and simmer for 10 – 15 minutes. 4. Stir in the rocket, herbs and salt. 5. Turn off the heat and puree until smooth using a stick blender, or transfer to a blender and pulse in batches. 6. Whisk in the lemon juice and stir through the cheese. 7. Serve

MISH MASH CEREAL BARS

Use what ever cereal you have left in the cupboard (you know, the boxes you only have a small amount left that no one wants to finish)...About 2 to 3 cups worth.

1 favorite basic cookie recipe
2 c any type of leftover cereal you have in your cupboard
1 pkg chocolate chips, mini
1 pkg peanut butter chips or candies
1 c (optional) coconut
1 c (optional) raisins or dried cranberries

Steps:

  • 1. Mix wet and dry ingredients together as indicated by the cookie recipe of your choice.
  • 2. Add mini chocolate chips (replacing regular sized chips), cereal, and optional ingredients if desired.
  • 3. Bake (as directed by cookie recipe) in greased muffin tins. Cool and serve or freeze.
