QUICK SKILLET STEAK WITH ONIONS AND MUSHROOMS



Quick Skillet Steak with Onions and Mushrooms image

This easy weeknight steak dinner with onions and mushrooms takes about 15 minutes to make and is always a hit with my whole family.

Number Of Ingredients 7

1/2 lb thin sliced beef round or sirloin steaks
1/2 large onion (sliced into rings)
1/2 tsp olive oil
8 oz sliced mushrooms
4 olive oil spray
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt and fresh cracked pepper to taste

Steps:

  • Slice beef into thin strips. Season with salt, garlic powder and fresh pepper to taste.
  • Heat a large skillet over high heat. When the skillet is very hot, spray with cooking spray and add half of the beef.
  • Cook 1 minute, then turn steak and cook an additional 30 seconds.
  • Set aside in a large dish.
  • Spray the skillet again and when it gets hot add the remaining steak, cooking one minute, then turning and cooking 30 seconds more.
  • Add remaining steak to the dish.
  • Return skillet to heat and spray once again with cooking spray; add onions and season with salt and pepper.
  • Cook one minute, then turn and cook onions an additional 30 seconds or until onions are golden.
  • Lower heat to medium and add 1/2 tsp olive oil to the skillet, add mushrooms, salt and pepper and lightly spray the top of the mushrooms with oil.
  • Cook 1 1/2 minutes, then turn mushrooms and cook another minute and a half.
  • Add to dish with steak and onions and stir to combine.
  • Serve over rice.

Flank Steak with Merlot Mushrooms and Pearl Onions over Toasted Polenta image

Cooking spray
2 flank steaks, about 1 pound each
Salt
Freshly ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 (11-ounce) tube prepared polenta, plain or seasoned, sliced crosswise into 1-inch thick slices
1 tablespoon olive oil
2 cups frozen or jarred pearl onions
2 cups cremini mushrooms, sliced
1 teaspoon dried thyme
1 cup Merlot or dry red wine

Steps:

  • Heat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of flank steaks with salt, black pepper, garlic powder, and onion powder. Place steaks on hot pan and cook 5 minutes per side for medium meat. Let steaks rest 10 minutes before slicing crosswise into 1/4-inch thick slices.
  • While the steaks are cooking, season both sides of polenta with salt and black pepper. Arrange slices alongside steak for the last few minutes of cooking; cooking slices 1 to 2 minutes per side, until golden brown.
  • While the steak and polenta are cooking, heat oil in a large skillet over medium-high heat. Add pearl onions and cook 3 minutes, until golden brown stirring with a spoon. Add mushrooms and cook 3 minutes, until mushrooms soften. Add thyme and cook 1 minute, until fragrant. Add wine and bring to a simmer, for 5 minutes, until sauce reduces to 1/4 cup.
  • Serve half of the steak over toasted polenta slices with all of the onion-mushroom mixture spooned over top. Reserve remaining steak for sandwiches.

One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

4 minute steaks (if you don't see this cut of meat, ask the butcher)
oil, for frying
salt
self-rising flour, for dredging
2 (10 ounce) cans cream of mushroom soup
1 (10 ounce) can milk
1 (4 ounce) can mushrooms or 1/2 lb fresh mushrooms, sliced
1 tablespoon butter

Steps:

  • Slice mushrooms (if using fresh) and saute in butter until tender.
  • If using a can, drain well.
  • Set aside.
  • In a large skillet, heat oil.
  • Salt minute steaks and dredge in flour.
  • Fry until breading is brown.
  • **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
  • This is what makes it GOOOOD!
  • When the meat is fried, place on paper towels to drain excess oil.
  • Place in a 2 quart casserole dish and keep warm.
  • Leave 2 tablespoons of oil in the skillet and remove the rest.
  • Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
  • Let soup simmer on med-low heat until throughly heated.
  • Pour over warm meat and serve.

WINE SOAKED MUSHROOMS

Mushrooms are sauteed with onions and garlic. Red wine and beef broth are added and the sauce is reduced down until there is almost no liquid left. Makes a great side dish to beef recipes...also goes great on top of steaks. Use a good quality red wine that you would actually drink.

1 tablespoon butter
1 tablespoon olive oil
1 pound button mushrooms, sliced
2 medium onions, sliced
3 cloves garlic, chopped
2 teaspoons dried thyme
1 (750 milliliter) bottle red wine
1 (14.5 ounce) can beef broth
1 tablespoon white sugar
1 pinch salt and pepper to taste

Steps:

  • Heat the butter and olive oil in a large skillet over medium heat. Add the onions; cook and stir until translucent, 5 to 10 minutes. Stir in the garlic and thyme; cook and stir for a few minutes, then add the mushrooms. Cook for about 8 minutes, stirring occasionally, until the liquid from the mushrooms evaporates.
  • Pour in the whole bottle of wine and the beef broth. Bring to a boil, then reduce the heat to medium and stir in the sugar. Cook, stirring occasionally, until the liquid is almost entirely gone, about 1 1/2 hours. Season with salt and pepper. Serve as a side, or topping for steaks or crostini.

DAD'S MINUTE STEAK WITH GOLDEN ONIONS



Dad's minute steak with golden onions image

A special Father's Day treat

5 tbsp red wine
2 tbsp soy sauce
1 tbsp Dijon mustard
1 tsp light muscovado sugar
450g minute or sandwich steak , cut into strips
1 tbsp olive oil
1 large onion , thinly sliced
4 thick slices of bread (choose Dad's favourite, either white or brown)
50g garlic butter
watercress , to serve

Steps:

  • Mix the wine, soy sauce, mustard and sugar in a big bowl. Toss in the steak strips, season well with pepper and leave to sit and soak while you get everything else ready.
  • Pour the oil into a large frying pan and heat it up over a medium heat for a minute or so. Tip in the onion slices, turn the heat up to very high and cook for 3-4 minutes, stirring often to get the onions really golden brown. Take the onions out and keep them warm.
  • Lift the steak strips out of the marinade with a slotted spoon and stir fry them in the onion pan over a very high heat for 30 seconds (do it in two batches if it's easier). Pour in the marinade from the bowl and boil for a few seconds until it sticks to the meat but is still juicy. Season with salt and pepper and keep warm.
  • Toast the bread and then spread with the garlic butter and cut each slice in half. Overlap two pieces of toast on each plate, top with a spoonful of onions, then the steak and more onions. Put a little pile of watercress on each plate and serve straightaway.

Swiss Steak With Mushrooms and Red Wine image

1 thick chuck steak (about 4 pounds), bone in, or a 2- to 3-pound piece of round steak
1 clove garlic
Flour seasoned with salt and pepper (1/2 teaspoon salt and 1/4 teaspoon pepper per half-cup of flour)
1/4 cup olive oil or bacon fat
1 large Spanish onion, chopped
1 12-ounce package fresh mushrooms, sliced thick
1/2 cup tomato puree
1/4 cup Cognac
1 cup red wine
1 cup chicken (or other) stock
1/2 teaspoon thyme
1/2 teaspoon savory
1/2 teaspoon marjoram
1 bay leaf
Salt and pepper as desired

Steps:

  • Rub the steak all over with the garlic clove. Using a tenderizing mallet, the back edge of a cleaver or the edge of a heavy plate, pound into both sides of the steak as much of the seasoned flour as it will hold.
  • Heat the oil in a large skillet, brown the steak on both sides and remove to a suitable covered baking dish. Pre-heat oven to 300 degrees.
  • Add onion to the skillet and cook, stirring often, until lightly browned. Add mushrooms and cook, stirring, until lightly browned. Add tomato puree, Cognac, wine, stock, thyme, savory, marjoram, bay leaf, salt and pepper, and bring to a boil. Pour mixture over steak, cover and bake 2 hours or until very tender.
  • Carefully remove steak to a deep serving platter. Skim surface fat from the sauce in the baking dish, check seasonings and pour around steak. Pass any extra sauce at the table. Serve with mashed potatoes.

8 minute steaks, enough for 4
garlic powder, to taste
Lawry's Seasoned Salt, to taste
1/4-3/8 cup margarine
2 large onions, cut up
12 large mushrooms, thickly sliced
1/2 cup red wine

Steps:

  • Season the steaks with garlic and season salt on both sides and set aside.
  • Melt the margarine in a skillet and saute the onions and mushrooms.
  • Add the wine and cover the skillet and simmer until vegetables are tender.
  • Meanwhile, in the oven, broil steaks for 5 minutes on each side, until done.
  • Add to the pan and coat with sauce mix.
  • Serve sliced with sauce.
