This quick recipe uses regular cake mix, any brand, and any type of whipped topping. It is a great dessert for after dinner, or anytime and especially a treat for St. Patrick's Day (easy way to get something "green"). You can use creme de menthe flavoring if you don't have the actual liqueur.

1 (18.25 ounce) package white cake mix
3 tablespoons creme de menthe liqueur
1 (16 ounce) can chocolate syrup
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons creme de menthe liqueur

Steps:

  • Prepare 1 box white cake mix as directed, except substitute 3 tablespoons Creme de Menthe flavoring or liqueur, for 3 tablespoons water.
  • Pour into 13x9 inch pan and bake according to package directions.
  • Remove from oven and while HOT, poke holes in cake with fork. Then pour chocolate syrup over the top. Refrigerate (or freeze, if desired). After cooling, mix whipped topping with 2 tablespoons of creme de menthe and spread on cake. Keep refrigerated. Freezes great!!

Mint Chocolate Chip Bundt Cake with Creme de Menthe Recipe - (4/5) image

For the cake:
3 cups (378 g) AP flour
1/2 tsp baking soda
3/4 tsp salt
2 cups mini chocolate chips
1/2 lb (2 sticks) unsalted butter, softened
3 cups sugar
6 large eggs
3/4 tsp peppermint extract
2 tsp vanilla
3 Tbs creme de menthe
1 Tbs heavy cream
3/4 cup low fat sour cream
For the glaze:
12 oz semi sweet chocolate chips
1/2 cup heavy cream
3-4 T creme de menthe, to taste
a few drops of peppermint extract, to taste

Steps:

  • 1. Preheat the oven to 325 F. Spray a nonstick bundt pan thoroughly with flour/grease mixture. Also spray some bundlettes or mini loaves for the excess batter. Set aside. 2. Whisk together the flour, baking soda and salt. Remove 1 tablespoon and toss with the chocolate chips. Set the chips and the flour mixture aside. 3. Whisk together the peppermint extract, vanilla, creme de menthe, heavy cream and sour cream. Set aside. 4. Cream the butter in large bowl of mixer on moderate speed for 4 mins. Add the sugar in 4 additions, beating for 1 minute after each portion is added. Add the eggs, one at a time, beating for 30 secs after each addition and scraping down the sides of bowl. On low speed, add the sifted flour mixture in 3 additions, alternating with sour cream mixture in 2 additions, beginning and ending with the flour mixture. Remember to keep scraping sides and bottom of bowl. Fold in the chocolate chips by hand. Try not to just eat the batter. 5. Scrape batter into prepared pan(s) and smooth top with rubber spatula. 6. How long you bake the cake will depend on the size(s). A 10 inch tube cake will take 1 hour and 15 minutes. A 9-10 inch bundt cake will take approximately 1 hour. 1 cup size bundlettes take around 25 minutes. You will just need to watch for whatever sizes you choose to make. 7. Bake the cake(s) for the recommended time, or until a toothpick inserted comes out clean (it may hit chocolate chip and be smeared with melted chocolate, which is fine). The baked cake will pull also slightly away from the sides of the pan. 8. While the cake is baking, make the glaze. Combine all ingredients into a small saucepan over low heat. As it melts, stir to incorporate. When it is completely melted, set aside to let it cool and thicken slightly. 9. Cool the cake in the pan(s) on a rack for 10-15 mins, then invert onto another cooling rack. Cool completely. Drizzle with the cooled glaze. Let set before slicing. 3/4 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
2-1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 package (10 ounces) Andes creme de menthe baking chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and vanilla until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips., Drop dough by rounded tablespoonfuls 3 in. apart onto greased baking sheets. Bake 10-12 minutes or until light brown. Remove from pans to wire racks to cool.

Yummy cake to make anytime, but especially good around the holidays. You can use chocolate cake mix in place of the yellow cake mix, as pictured in the photos. You can also change the puddings and liqueurs to your favorite, and add toppings of your choice for variety.

1 cup peppermint candies, like powder or 1 cup candy cane, very finely crushed like powder
1 (18 1/4 ounce) package yellow cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
4 eggs
1/4 cup water
1/2 cup vegetable oil
3/4 cup creme de menthe (liqueur) or 3/4 cup irish cream (liqueur)
1/2 cup butter
1/4 cup water
1 cup sugar
1/4 cup creme de menthe (liqueur) or 1/4 cup irish cream (liqueur)

Steps:

  • Preheat oven to 325. Grease and flour a 10" Bundt pan.
  • In a large bowl, combine cake mix and pudding mix.
  • Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Creme de Menthe or Irish Creme. Beat for 5 minutes at high speed. Pour batter in pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean.
  • Cool for 10 minutes in the pan, then invert onto the serving dish.
  • Prick top and sides of cake.
  • Spoon glaze over top and brush onto sides of cake.
  • Allow to absorb glaze. Repeat until all glaze is used up.
  • Sprinkle fine peppermint dust on top of cake.
  • Glaze:.
  • In a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil, and continue boiling for 5 minutes, stirring constantly.
  • Remove from heat, and stir in 1/4 cup Creme de Menthe or Irish Cream.
