Mini turkey burgers are a fun and easy way to satisfy appetites of all ages.Make our delicious Sweet Potato Fries to go with them!

2 slices white sandwich bread (about 1 ounce each)
1 pound (93 percent lean) ground turkey
2 ounces cheddar cheese, coarsely grated (about 1/2 cup)
1/2 small onion, coarsely grated
Coarse salt and freshly ground pepper
1 teaspoon olive oil
12 party-size rolls
Lettuce, sliced tomatoes, ketchup, and mustard, for serving (optional)

Steps:

  • In a food processor, pulse bread until fine crumbs form. Transfer to a medium bowl; add turkey, cheese, and onion. Season with salt and pepper, and mix gently just until combined. Form twelve 2-inch patties (about 3 tablespoons each).
  • In a large nonstick skillet, heat oil over medium heat. Cook patties until browned and cooked through, about 5 minutes per side. Serve on rolls with lettuce, tomatoes, ketchup, and mustard, if desired.

I whipped these Parmesan Crusted Turkey Burgers based on how much I liked the breading found in another recipe on this site (Parmesan Crusted Tilapia: http://www.food.com/recipe/parmesan-crusted-tilapia-169764 ) My girlfriend and I enjoyed these so much, that I had to share them with the public!

Number Of Ingredients 9

2 eggs
1 lb ground turkey, cut into 6 equal pieces
1/4 cup grated parmesan cheese
1/4 cup breadcrumbs
1 teaspoon lemon juice
1 tablespoon italian seasoning
1 teaspoon garlic powder
6 hamburger buns
6 slices cheese

Steps:

  • Preheat oven to 350 degrees.
  • Blend Parmesan Cheese, Bread Crumbs, Italian Seasoning, and Garlic Powder on a plate.
  • Blend eggs and lemon juice together on a separate plate.
  • Mold pieces of turkey into burger-like shapes.
  • Dip each piece of turkey into the egg mixture.
  • Flip the pieces of turkey, and dip other side into egg mixture.
  • Put each piece of turkey on the bread crumb mixture.
  • Flip the pieces of turkey, and put the other side onto the bread crumb mixture.
  • Repeat steps 6-8 a second time, (it gets a little messy, but it will put a thicker coat on the burger.).
  • Cover remaining bits of turkey with bread crumb mixture.
  • Place covered pieces of turkey onto a baking rack, and place in oven.
  • Cook for 35-45 minutes until outside is golden-brown.
  • When your turkey is nearly cooked (within 5 minutes), Butter each bun, placing on a skillet set on medium-heat.
  • Occasionally rotate the buns so that they are evenly cooked. Watch them closely, as they will burn fast if you're not careful. Continue to cook until the bottom-side of each bun is golden brown.
  • Place slices of cheese on hot buns, put the turkey on the bun, add condiments of your choice (I personally recommend mayonnaise!), and enjoy!

1 (12 ounce) can refrigerated buttermilk biscuits
water
sesame seeds
20 ounces turkey meatballs, frozen
8 ounces whole berry cranberry sauce
1 cup baby spinach leaves
7 ounces double cream brie cheese, thinly sliced

Steps:

  • Preheat oven to 375°F Open and separate biscuit dough into 10 pieces as directed. PINCH each piece of dough in thirds (don't roll out). Very gently roll into a smoother ball, to make 3 mini buns from each piece. Place on parchment paper lined baking sheet. Lightly brush each one with water and sprinkle with 1/8 teaspoon sesame seeds. Bake until golden and cooked through, about 10 minutes. Let cool.
  • At the same time in oven, cook 30 meatballs according to package directions, 12 to 15 minutes, turning halfway through cooking time. While still hot, toss meatballs with 1/2 cup cranberry sauce adn salt and pepper to taste.
  • Cut each bun in half. Spoon a little cranberry sauce on each bun bottom, top with 3 spinach leaves folded in half and a small slice of brie cheese. Top each with a meatball, cap with bun top and secure with a small bamboo or wooden skewer.

For small snack-like dinners or get-togethers, I love making small versions of my favorite burgers.

1 lb ground turkey
6 clove garlic, minced
1 small onion, chopped
1 tsp italian seasoning
1 large egg
1/2 c italian bread crumbs
6 king's hawaiian dinner rolls
2 roma tomatoes
3 slice provolone cheese, cut in half
2 Tbsp extra-virgin olive oil
lettuce, optional
mayonnaise, optional

Steps:

  • 1. In a mixing bowl, combine ground turkey, garlic, onion and Italian seasoning and blend well using your hands. Once blended, add egg and bread crumbs, blend until combined. Once combined, pat down into small patties (about 2-3-inches in diameter and about an inch or so thick).
  • 2. Heat 2 tablespoons of Extra-Virgin Olive Oil in large skillet. Place patties in oil and cook for about 4 minutes. Gently and carefully turn the patties over and cook an additional 3-4 minutes.
  • 3. While the meat is cooking, split the rolls in half horizontally. Place in toaster or oven and toast.
  • 4. Once meat is cooked, place on paper-towel lined plate to drain off any grease.
  • 5. Place turkey patty on the heel of the roll, add a slice of cheese, tomato and lettuce. Add mayonnaise on crown of bun if desired.

1 cup KRAFT Original Barbecue Sauce
1 Tbsp. soy sauce
1-1/4 lb. ground turkey
1/4 cup chopped roasted red peppers
2 Tbsp. KRAFT Zesty Italian Dressing
1 green onion, finely chopped
1/4 tsp. crushed red pepper
12 dinner rolls (2 inch), split
4 red leaf lettuce leaves, each torn into 3 pieces

Steps:

  • Mix juice, zest, barbecue sauce and soy sauce; set aside half for serving with cooked burgers. Combine next 5 ingredients; shape into 12 patties, using scant 1/4 cup meat mixture for each.
  • Cook patties on griddle on medium-high heat 10 min. or until done (165ºF), turning and brushing occasionally with remaining barbecue sauce mixture.
  • Fill rolls with lettuce and burgers. Serve with reserved barbecue sauce mixture.
