MINI LEMON CHEESECAKES

This is a great recipe- a combination of smooth creamy sweet cheese, zingy lemon and crunchy biscuit base. However it is so versatile, you can add any flavourings and change it to suit your tastes (however I think the lemon tastes best!). I made up this recipe whilst searching out a good snack. This recipe makes 12 mini cheesecakes.

You need:
- 2 tubs of 200g Cream Cheese (I use Philedelphia)
- 50g of icing sugar (a good shaking)
- 2 lemons (juice and rind)
- Splash of double cream (if your cheesecake seems runny, add more of this and stir so more air is incorporated into it, however if it is thick, this is good, the thicker the better!)
- Chunk of butter (50-75g)
- Half a pack of digestive biscuits (150g ish, you can use any biscuits, however)

Steps:

  • Mix all of the cheesecake ingredients together (the cream cheese, lemon, icing sugar and double cream) make sure it is well mixed, and you are getting lots of air into the mixture. Also make sure the lemon juice and rind is mixed in evenly into the mixture.
  • Heat up your butter until it is melted (either on the hob or in the microwave).
  • Mash up your biscuits into tiny pieces and put them in a bowl and mix in your melted butter.
  • Press your biscuit base into moulds (you can use cake cases or no mould, but I find it easier to use one than not).
  • Pile your cheesecake mix on top of the biscuit base in each mould, smoothing down the mixture on top and then leave in the fridge until serving (leave in the fridge for a minimum of half an hour, as the cheesecake is much better when served cool). When they are ready to serve, simply pop them out of the moulds, and enjoy!

1/3 cup graham cracker crumbs
1 tablespoon white sugar
2 tablespoons melted butter
1 (8 ounce) package cream cheese, softened
1/4 cup white sugar
1 1/2 teaspoons lemon juice
1/2 teaspoon grated lemon zest
1/4 teaspoon vanilla extract
1 egg

Steps:

  • Preheat oven to 325.
  • Grease a 6 cup muffin pan (see note).
  • In a medium bowl, mix together the graham cracker crumbs, sugar and butter with a fork until combined.
  • measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pushing it down firmly.
  • bake in preheated oven for 5 minutes, then remove and cool.
  • Beat together cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy.
  • Mix in egg.
  • Pour cream cheese mixture into muffin cups to about 3/4 full.
  • Bake at 325 for 25 minutes.
  • Cool completely in pan before removing. Refrigerate until ready to serve.

1 pkg (4 oz) bakers white chocolate, divided
28 square shortbread cookies, divided
2 tbsp., butter, melted
1/2 cup plus 2 Tbsp sugar, divided
2 pkg (8oz each) Philadelphia Cream Cheese, softened
1 tsp vanilla
1 tsp zest and 1/4 cup juice from 2 lemons
2 eggs

Steps:

  • Heat oven to 325 Melt 2 oz chocolate as directed on package; set aside for later use. Use pulsing action of food processor to process 16 cookies until finely crushed; spoon into medium bowl. Add butter and 2 Tbsp. sugar; mix well. Press onto bottoms of 12 paper-lined muffin cups, adding about t Tbsp. crumb mixture to each prepared cup. Beat cream cheese, vanilla and remaining sugar in large bowl with mixer until blended. Add lemon zest, lemon juice and melted chocolate; mix well. Add eggs, 1 at a time, mixing on a low speed after each just until blended. Spoon over crusts. Bake 17 to 20 min or until centers are almost set. Cool completely. Melt remaining chocolate. Coarsely chop remaining cookies; sprinkle over cheesecakes. Drizzle with melted chocolate. Refrigerate 2 hours.

1/2 cup graham cracker crumbs (8 squares)
1 teaspoon sugar
2 tablespoons unsalted butter, melted, slightly cooled
Filling
1 package (8 oz) cream cheese, softened
1/4 cup sugar
1 egg
1 teaspoon grated lemon peel
4 1/2 teaspoons fresh lemon juice
1/2 cup white vanilla baking chips
1 teaspoon vegetable oil

Steps:

  • Heat oven to 300°F. Place mini paper baking cup in each of 18 mini muffin cups; spray paper cups with cooking spray. In small bowl, mix crust ingredients until crumbs are moistened. Spoon and lightly press 1 teaspoon mixture in bottom of each cup. 2 In large bowl, beat cream cheese and 1/4 cup sugar with electric mixer on medium speed until well blended. On low, beat in egg just until blended. Add lemon peel and lemon juice; beat until smooth. Spoon about 1 teaspoon cream cheese mixture over crumb mixture in each cup. Place 5 to 6 of the white baking chips on top of each (using 1/4 cup total). Divide remaining cream cheese mixture evenly among cups (about 2 heaping teaspoons each). 3 Bake 25 to 30 minutes or just until filling looks set. Cool on cooling racks 30 minutes. Not sure where i got this from, i have made a few small changes, but made this for Easter dessert and it was a favorite!! very rich and filling. For extra flavor in the milk mixture add a little orange and lemon zest!! Suprisingly good! Individual serving sizes: makes about 8 6oz cakes (in ramekins or custard cups)

1/4 cup all-purpose flour
1 1/2 cups sugar
3 large eggs (room temp)
16 ounces whole milk ricotta cheese (room temp)

Steps:

  • 1. preheat oven to 350 degrees F. Have a large pan (deep) and a kettle of water (bring kettle of water to a boil).
  • 2. mix cream cheese with flour and sugar untill smooth w/electric mixer on medium speed. add eggs one at a time, stir in ricotta, milk, vanilla, lemon zest, and kemon juice. pour in the custard cups or ramekins.
  • 3.set each cup in the pan.
  • 4. place pan in the oven, pour enough of the boiling water in the pan to reach halfway up the sides of cups. bake untill cheesecakes are set, and no longer jiggly in the middles. (about 40-50 min depending on oven) Remove the pan from oven, but leave the cheesecakes in the water for about 15 minutes. Remove the cups from the pan, set on a wire rack untill completely cool. Cover each one individually (saran wrap) and refrigerate for at least 4 hours.
  • 5. Top each cheesecake with berries and mint or cookie crumbs (i use strawberry slices, blueberries and raspberries w/mint leaves, color is beautiful as the cakes will have a slightly yellow color.

1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
1 cup milk
4 oz. PHILADELPHIA Neufchatel Cheese, softened to room temperature
juice and zest of 1/2 a lemon
6 individual serving-size pre-made or homemade mini graham cracker pie crusts
whipped cream (optional)
lemon peel (optional)

Steps:

  • Whisk together pudding mix and milk for 3 minutes, or until completely smooth. Set aside.
  • Using either a stand mixer fitted with a whisk attachment or a hand mixer, whip cream cheese with the lemon juice and zest until it is loose and smooth. Add lemon pudding mixture and mix until everything is evenly combined and smooth.
  • Divide the mixture between the crusts and refrigerate for at least 30 minutes before serving. If desired, garnish with a generous amount of whipped cream and lemon peel.
