CRUST:
4 cups coarsely shredded uncooked potatoes (about 4 large)
1/2 cup chopped onion
1 large egg, lightly beaten
1 cup all-purpose flour
1/2 teaspoon salt
FILLING:
1-1/2 cups shredded Colby cheese, divided
1/2 cup chopped onion
1-1/2 cups cubed fully cooked ham
1-1/2 cups fresh broccoli florets
3 large eggs, lightly beaten
1 cup half-and-half cream
1/2 teaspoon salt
Dash ground nutmeg
Paprika

Steps:

  • In a large bowl, combine crust ingredients; press into a well-greased 10-in. deep-dish pie plate. Bake at 400° for 20 minutes. , Remove from oven; reduce heat to 350°. Add 1 cup cheese, onion, ham and broccoli to crust. Whisk the eggs, cream, salt and nutmeg; pour over broccoli. Sprinkle with paprika. , Bake for 35-40 minutes or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before serving.

3 cups frozen bite-size potato nuggets (such as Ore-Ida® Crispy Crowns®)
3 tablespoons butter, melted
½ teaspoon salt
1 cup shredded Cheddar cheese
¾ cup diced ham
½ cup grated Parmesan cheese
3 tablespoons all-purpose flour
4 eggs
1 ¼ cups milk
⅓ cup diced onion
⅓ cup diced green bell pepper
1 teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place potato nuggets in a large microwave-safe bowl. Heat in the microwave until thawed, 1 to 2 minutes. Add butter and salt; mash together until potato nuggets are crumbled. Press evenly into a glass pie dish to make crust.
  • Bake crust in the preheated oven until golden brown, 20 to 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C).
  • Combine Cheddar cheese, ham, Parmesan cheese, and flour in a bowl.
  • Beat 4 eggs in a bowl until smooth. Add milk, onion, green bell pepper, salt, onion powder, and garlic powder. Stir into Cheddar cheese mixture until combined. Pour over crust.
  • Bake in the preheated oven until set and golden, about 45 minutes. Let cool before slicing, 10 to 15 minutes.

1 box (4.5 oz) Betty Crocker™ Seasoned Skillets® traditional recipe potatoes
Water and vegetable oil called for on potato box
1/2 cup crumbled cooked bacon
1/2 cup shredded Swiss cheese (2 oz)
3 eggs
1 cup whipping cream

Steps:

  • Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray.
  • Make potatoes as directed on box. Divide potato mixture evenly among muffin cups, pressing in bottom and up side of each cup to form crust. Sprinkle bacon and cheese evenly in cups. In medium bowl, beat eggs and cream. Pour filling evenly in cups, about 1/4 cup each.
  • Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
