MEDITERRANEAN SAVOURY MUFFINS
Recipe video above. Savoury Muffins are cheesy muffins studded with Mediterranean flavours! These stay moist and fresh for several days, making them ideal for gift, make ahead for for afternoon tea , a school fete, or a lunchbox filler idea.

Steps:
- Preheat oven to 180°C/350°F (160°C/320°F fan).
- Brush a 12 hole standard muffin tin generously with butter
- Whisk Dry ingredients in a bowl.
- Whisk Wet ingredients in a separate bowl.
- Pour Wet into the Dry ingredients bowl. Mix 8 times.
- Add cheese, feta, sun dried tomato, capsicum, olives and green onion. Mix as few times as possible just to incorporate remaining bits of flour - no more than 7 big stirs (secret to soft muffs).
- Divide between 12 holes in muffin in (I use an ice cream scooper). Batter should be thick and fill muffin tin slightly mounded (see video)
- Bake for 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.
- Cool for 10 minutes, then transfer to cooling rack. Serve warm for optimum experience!

HERBED FETA STUFFED MINI BELL PEPPERS
I recently got two pounds of mini bell peppers at Costco, and after eating about half of them raw (yum! they're so sweet and tasty!) we got to the point where I needed to find something else to do with them. Here's what I came up with, and having just eaten one, I can assure you they're absolutely delicious! These can be either baked (which I usually do), or eaten uncooked.

Steps:
- Cut the tops off the mini bell peppers and take out the seeds and larger white veins; rinse out with water, then set aside.
- Put the crumbled feta cheese in a bowl and add the sherry; toss to coat.
- Mix together well the remaining ingredients in a separate bowl, then add the mixture to the feta cheese and toss to mix them all well.
- Spray a large casserole dish (I use a large oval white Corning Ware) with an olive oil mister or pan spray.
- Preheat oven to 350 degrees F.
- Stuff each mini bell pepper with the herbed feta mixture, making sure there's a good amount of feta in each pepper; place peppers in the casserole dish.
- When all peppers are stuffed, place cover on casserole dish and bake in oven for 30 to 45 minutes until peppers are nice and soft and the cheese is melted. If too much of the cheese melts out of the peppers, use a spoon to put it back in. :)
- Serve and enjoy!

- Preheat the oven to 395 degrees F (200 degrees C). Spray muffin pan with non-stick cooking spray.
- Combine eggs, milk, salt, and pepper in a bowl; beat with a fork until blended evenly.
- Distribute tomatoes and green peppers amongst the muffin cups and sprinkle with Colby-Jack cheese. Pour egg mixture into each muffin cup until filled to the top. Mix each muffin cup carefully with a fork to distribute ingredients evenly.
- Bake in the preheated oven until tops start to brown, about 20 minutes. Remove and let cool in the pan for 5 minutes before serving.

MINI BELL PEPPER & FETA MUFFINS
I found this recipe in a Greek food magazine in 2015 Made these muffins for a party I had. All my guests loved them, they disappeared in no time. I've been asked to make them quite often. So translated and I'm glad to be sharing with you.to enjoy also.

Steps:
- 1. Preheat oven at 33o degrees. Prepare 30 mini muffin cups, with mini muffin liners or grease & flour your muffin pan.
- 2. With kitchen paper towel pat dry roasted pepper & dice. Shift flour & baking powder. Add peppers, salt & parsley.
- 3. In another bowl whisk together the milk, butter & egg to combine Pour the wet ingredients in the center of the dry ingredients. With a wooden spoon or spatula lightly fold the wet ingredients into the dry ingredients to combine. Don't overmix.
- 4. Half fill the muffin cups with the batter, add the feta cheese & then cover with some batter.
- 5. If making mini muffins bake 12-15 minutes, till toothpick comes out clean. Let cool & ENJOY!
- 6. TIP:: 1. If you don't have a miNi muffin pan you could use a regular muffin pan, where you will make 15 muffins, like my picture.
