MINCEMEAT COFFEE CAKE
This recipe comes from the 1952 cookbook(let) 21 "NONE SUCH" Mince Meat Recipes for Winter, Spring, Summer and Fall, which I, in turn, received as a wonderful gift from my partner in the current Cookbook Swap! Thought I'd share this recipe with all of you mincemeat fans!

Steps:
- Preheat oven to 350 degrees F, then grease a 9" cake pan.
- Combine biscuit mix & sugar, then add milk, stirring to make a soft dough.
- On lightly floured board, roll out dough into 12"x10" rectangle.
- Combine marmalade & mincemeat, & spread mixture evenly over dough, to within 1/2 inch of edges.
- Roll jelly-roll-fashion, then cut into 10 pieces.
- Place pieces in prepared cake pan, more or less with 9 in a ring & 1 in the center.
- Bake until lightly browned, about 30-40 minutes.
- Remove from pan.
- Combine powdered sugar, 1 1/2 tablespoons milk & orange extract, & frost the warm cake with this mixture.
- Serve warm or cold.

MARY BERRY'S MINCEMEAT LOAF CAKES
This classic mincemeat loaf cake recipe from Mary Berry is a very useful recipe for using up leftover mincemeat and makes two loaves - one for yourself and one for a friend! A classic, light fruit cake that's perfect with a cup of tea or a glass of mulled wine.

- Preheat oven to 180C/160Fan/350F.
- Grease and line 2 1lb (450g) loaf tins.
- Simply mix all the ingredients except for the blanched almonds together until they are well incorporated.
- Spoon the mixture into your loaf tins. Stud with the blanched almonds/halved cherries.
- Bake for 1 hour if using 1lb loaf tins or 35-40 minutes for mini loaf tins or until the cakes are shrinking from the sides, risen and golden and a skewer inserted in the middle comes out clean.

HOLIDAY MINCEMEAT CAKE
I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

Steps:
- Stir the flour, baking powder, baking soda and salt together; set aside.
- Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
- Beat in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Blend in the mincemeat.
- Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
- Stir in the nuts.
- Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
- Preheat the oven to 350 degrees F.
- If using a Bundt pan, bake for 55 to 60 minutes or until done.
- If using a cake pan, bake for 45 to 50 minutes.
- In either case, cool in the pan for 10 minutes.
- Remove from the pan and cool completely.
- Dust with icing sugar before serving.
MINCEMEAT SPICE CAKE
Spice cake is baked halfway, then topped with a mincemeat and rolled oats mixture for a rich and delicious dessert.

- Heat oven to 350 degrees F. Line bottom of springform cake pan with wax paper and butter the sides.
- Place flour, baking powder, sugar and 1/2 cup butter in large bowl. Stir in milk, mincemeat, eggs and lemon peel. Mix on low speed of electric mixer 2 minutes or until thoroughly combined. Pour into prepared pan.
- Bake 30 minutes. While cake is baking, mix all topping ingredients in small bowl. Remove cake from oven and spoon on topping. Return cake to oven and bake an additional 30 minutes or until toothpick inserted in center comes out clean.

- 1. Preheat oven to 350 degrees. Grease a 9" x 13" baking pan and set aside.
- 2. In a large mixer bowl, cream the butter and sugar until completely mixed, add the vanilla and orange zest. Add the eggs, one at a time, beating well after each addition. In a small bowl, combine the flour and baking powder and then slowly add this to the butter mixture.
- 3. Spread 2/3 of the batter into the prepared pan. Spread the mincemeat on top of the batter. Drop the remaining batter by spoonfuls onto the mincemeat. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- 4. Combine the powdered sugar and orange juice to make a glaze. Drizzle over the warm cake and serve.
