MIMI'S MONSTER COOKIES

These are huge cookies that the kids will love to get their little hands on. They are great to take to picnics or gatherings. I used to take them to Sunday School picnics when my grandkids were little. I even did a double batch for a treat at AWANA. Adults like them, too. They have delicious flavor. You may notice that there is no flour in the recipe--that is correct--there is no flour. The oats bind it together.

1 1/2 cups peanut butter
1/2 cup butter
1 cup packed brown sugar
1 cup granulated sugar
3 eggs
2 teaspoons vanilla
3 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal
3/4 cup semi-sweet chocolate bit
3/4 cup candy-coated chocolates (I use M&M's)
3/4 cup chopped walnuts (could use peanuts)

Steps:

  • In a large bowl with mixer at medium speed, beat together the first 4 ingredients till light and fluffy.
  • Add eggs and vanilla; beat 2 minutes.
  • Blend in baking soda.
  • Stir in oats and remaining ingredients.
  • Dough will be very stiff and crumbly.
  • Drop dough by 1/3 cup measures, 4" apart on a ungreased baking sheet.
  • Flatten with a spatula to 3 1/2" cookies.
  • Bake in 350 oven for 12-14 minutes or till golden.
  • Remove and cool on racks.
  • NOTE:.
  • If you need more than 22 cookies, you may use a 1/4 cup measure, but they will not be quite as huge as the other measure.

I found this recipe on the internet to make cookies with a bag of mini M&M's. I liked that it has oatmeal in it which make them a bit more chewy than your average cookie. You can also substitude chocolate chips if you don't have M&M's.

Number Of Ingredients 12

1 (12 ounce) bag miniature M&M baking bits
1 cup brown sugar
1 cup white sugar
1/2 cup shortening
1/2 cup margarine
2 eggs
2 cups flour
2 cups oatmeal (either quick or long cook)
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • In a large bowl, mix together sugars, shortening, margarine, vanilla and eggs with an electric mixer.
  • In a seperate bowl, combine flour, oatmeal, salt, baking powder and soda.
  • Add dry ingredients to mixing bowl a cup at a time until it is mixed together completely.
  • Open bag of M&M baking bits and pour out 1/3 cup to reserve for later. Add the rest of the chips and fold into batter.
  • Chill cookie dough for 1 hour.
  • Later, preheat oven to 350 degrees. On ungreased cookie sheets, or using parchment paper on cookie sheets, drop dough by spoonfuls with room for spreading.
  • Take 2 or 3 of the reserve M&M's and place on top of each cookie. This way, some clearly show after the cookie bakes.
  • Bake in 350 oven for 10-12 minutes or until lightly brown.
  • Remove cookies from sheet and place on cooling rack.

My grandkids love making these cookies with me...I love making them with my grandkids!!

1 box(es) yellow butter-flavored cake mix
2 cup(s) oatmeal (not instant)
1 cup(s) sugar
1 cup(s) oil
2 - eggs
1 teaspoon(s) vanilla
1 cup(s) pecans and/or walnuts (1 cup total)
- raisins

Steps:

  • Pre-heat oven to 350 degrees. Mix dry ingredients. Add oil, eggs and vanilla and mix well. Add nuts and/or raisins. Roll into walnut-sized balls. Bake on ungreased cookie sheets for about 12 minutes. Remove cookies from baking sheets and let cool. store in an airtight container. Chocolate chips or butterscotch chips can be substituted for raisins if desired,.
