From the August issue of Family Circle magazine. I haven't tried this recipe yet, but it received very good reviews in the magazine. Any kind of fruit may be used.

Number Of Ingredients 9

0.5 (15 ounce) package refrigerated pie crusts (1 pie crust)
2 cups sliced peaches
2 cups raspberries
1 cup half-and-half
1 egg
2/3 cup sugar
1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • Heat oven to 400 degrees F.
  • Fit piecrust into a 9 inch pie dish. Place fruit in pie crust and spread evenly.
  • Combine half and half, egg, sugar, flour, cinnamon and salt in a small bowl and mix until well blended. Pour over fruit.
  • Bake for approximately 50 minutes or until center is set. Cool completely before serving.

I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

Number Of Ingredients 7

1 1/4 cups sugar
3 1/2 tablespoons cocoa
1/4 cup butter, melted
1 teaspoon vanilla
5 ounces Pet milk (evaporated)
2 eggs
1 pie crust, uncooked

Steps:

  • Preheat oven to 325°F.
  • Mix everything together in one big bowl.
  • You don't have to bake the crust first, prick the bottom of it.
  • Pour filling into crust.
  • Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
  • If you'd like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!

While digging through my recipe card, I ran across my belated friend Millie's Pecan Pie. She introduced me into the world of pies and pastries in the 70's. She passed away from Lou Garrets disease. So I will post this in memory of Millie and any other person that is facing the battle of any disease. Gone but never forgotten! ...

Number Of Ingredients 8

1 c chopped pecans
1 pkg unbaked pie shell
3 large eggs
1 1/4 c white karo syrup
1 Tbsp melted butter
1/2 tsp pure vanilla extract
1 Tbsp flour
1 1/4 c sugar

Steps:

  • 1. Sprinkle the pecans into the unbaked pie shell
  • 2. Beat eggs in a bowl. add karo syrup, melted butter and the vanilla; mix well (by hand)
  • 3. Add mixture of flour and sugar (mix together dry ingredients). Mix into the egg mixture stir until well blended.
  • 4. Pour mixture over the pecans in the unbaked pie shell. Let the pie set until the pecans rise to the surface. Approximately 3-5 minutes. Have the pie shell on a cookie sheet
  • 5. Bake the pie in a preheated oven set at 350 degrees. Bake for 45 minutes, or until a butter knife inserted in the middle will come out clean. Let pie rest before cutting! Serves 6-8 people
  • 6. Garnish with whip cream
