I could not believe how high this bread was - and it was an experiment too! Wonderful flavours of bacon & onion with just a smidge of mixed herbs. Just crisp up your bacon & fry your onion, and then it all goes in the breadmaker for a delectable bread! Just think - you can have an English Breakfast just by adding some scrambled eggs on top of a slice of this bread!

Number Of Ingredients 10

150 g smoked lardons or 150 g finely diced smoked bacon
1/2 red onion, very finely diced
360 ml tepid water
2 tablespoons dried nonfat dry milk powder
3 tablespoons olive oil
1 1/2 teaspoons salt
2 1/2 teaspoons sugar
1/2 teaspoon mixed herbs
560 g strong white bread flour
7 g dried yeast

Steps:

  • Fry your bacon in it's own fat in a frying pan and when nearly crispy & cooked, add the diced onion. Stir around thoroughly & continue to cook until the bacon is crispy & the onion soft.
  • Drain well & allow to cool slightly.
  • Put the ingredients into your bread machine in the order that is written in your manual; mine is wet first & dry last.
  • Make sure that the yeast does not come into contact with the liquid.
  • Select the 1 kilo or 2lb setting on White Rapid or White Normal; choose your crust finish.
  • Do not add the bacon and onion to the Extras tray - there is too much!
  • Add the bacon & onion when extras are added in the cycle - towards the end of the kneading time.
  • When cooked, take out straight away with OVEN GLOVES & turn out to cool on a wire cooling rack.
  • If the paddle stays in the bread - remember to take it out BEFORE cutting the bread.
  • Serve with butter, eggs, cheese or by its self with salad.
  • This is also wonderful toasted too!

Steps:

  • Place ingredients in bread machine pan in order suggested by manufacturer.

Another wonderful onion bread, somewhat simpler than one I've posted earlier. Bread is slightly moist from the onions, makes the most wonderful sandwiches and toast. From Gold Medal.

Number Of Ingredients 8

1 tablespoon butter
2 medium onions, sliced
1 1/4 cups water
1 tablespoon olive oil
4 cups bread flour
2 tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons bread machine yeast or 2 teaspoons active dry yeast

Steps:

  • Melt butter in skillet over medium-low heat. Cook onions in butter 10 to 15 minutes, stirring occasionally, until onions are brown and caramelized. Do not hurry the process. Remove from heat.
  • Place all remaining ingredients in bread machine pan in the order recommended by the manufacturer.
  • Set to basic cycle with medium or light crust. Add onions at beep signal or 5 to 10 minute before end of kneading cycle.
  • Alternatively, use dough cycle. Remove dough at end of cycle, shape as desired, place on cornmeal-sprinkled baking sheet and let rise. Bake for app. 30 to 40 minutes in a 400 deg. oven. Exact time depends on shape.
  • Note: I generally substitute one cup of whole wheat or rye flour for one cup of the bread flour. Rye is particularly excellent.

Savory quick bread flavored with bacon and onions. Delicious and unusual for sandwiches to go with soup or toast to go with omelets. The quality of the bacon will make a difference in the taste, so it's worth the extra cost for the good stuff. Plain nonfat yogurt can be used in place of the cottage cheese or sour cream to lower the calories.

6 slices bacon
2 tablespoons reserved bacon grease
1 small onion, peeled & finely chopped
2 cups flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
2 large eggs, beaten
1 cup small curd cottage cheese or 1 cup sour cream
1/4 cup butter, melted (1/2 stick)

Steps:

  • Adjust oven rack to top third position, and pre-heat oven to 350°F.
  • Coat 9"x5"x3" loaf pan with cooking spray.
  • In a skillet, cook the bacon just until crisp.
  • Using a slotted spoon, transfer bacon to paper towels to drain; then coarsely dice.
  • Discard all but 2 tablespoons of the bacon grease.
  • Add onion, and saute over medium-low heat until tranlucent (2-3 minutes).
  • In a large bowl, thoroughly mix the flour, baking powder, sugar, salt, black pepper, and cayenne pepper.
  • Blend together the eggs, cottage cheese, and butter until smooth; then stir in the bacon and onion.
  • Pour the wet ingredients over the dry ingredients and mix together just until combined (Do NOT over mix).
  • Spoon batter into the prepared loaf pan, smoothing it on top.
  • Bake in pre-heated oven for 50 minutes or until tester comes out clean when inserted.
  • Turn out onto a wire rack to cool before slicing.

1 1/2 tablespoons nonfat dry milk powder
2 tablespoons sugar
1 1/2 teaspoons salt

1 package active dry yeast

Steps:

  • Put the ingredients in the bread machine in the order recommended by the manufacturer.
  • (Mine says wet stuff first, so I do the flour and yeast last-- the order of everything else doesn't matter.) Press START on the machine!
  • (I personally prefer Light crust setting.).

I wasn't all that pleased with the results of this therefore it will need a bit more tweaking I think. Using Spelt flour means that the weight of the finished product will be a bit heavier then usual. I think perhaps adding a little more yeast and maybe some vital gluten flour would help here.

1/2 cup chopped onion
1 cup soymilk
2 cups white spelt flour

2 Tbsp vegetable oil
1 tsp salt
2 Tbsp sugar
4 c all purpose flour
3 Tbsp nonfat dry milk powder
2 tsp active dry yeast
ADD AFTER THE BEEP:
2 c shredded cheddar cheese (i use sharp)
1/2 c cooked, crumbled bacon (or real bacon bits)
1/4 c dried onion flakes

Steps:

  • 1. Place all ingredients (except cheese, bacon and onion) in machine in order recommended by manufacturer.
  • 2. Set on Fruit and Nut (or raisin) cycle. When machine beeps, add cheese, bacon and onion.
  • 3. If your machine doesn't have this cycle, you can add everything at once, but it will "pulverize" the bacon (but you will still have the flavor).

2 cups best for bread flour
1 cup whole wheat flour (best for bread works best if you have it on hand)

2 tablespoons dried onion flakes
1 1/4 teaspoons dried dried leaf basil
1/2 cup cheddar cheese, shredded (or cubed small)
1 teaspoon bread machine yeast

Steps:

  • Loaf size is 11/2 lb/ 3 cup or 2lb/ 4 cup.
  • Select loaf size.
  • Add ingredients to machine according to manufactures directions.
  • Select white cycle.
  • Note: I add the ingredients as listed.
  • I use the basic cycle for the black and decker ( all in one Machine).
  • 11/2lb with a medium crust. Works great for me.( takes about a 3 hour cycle).
