Number Of Ingredients 16

1 tablespoon paprika
2 teaspoons black pepper
2 teaspoons chili powder
1 teaspoon cumin powder
1 tablespoon of butter
1 medium onion, finely chopped
4 cloves garlic, minced or pressed
1 green bell pepper, chopped
1 cup Lone Star beer (or any other lager). Drink any that is left over.
1/4 cup ketchup
1/4 cup apple cider vinegar
3 tablespoons Worcestershire sauce
3 tablespoons steak sauce
2 tablespoons brown sugar
Hot sauce to taste (start with 2 teaspoons of Tabasco sauce for mild heat)
2 cups beef, veal, or chicken stock

Steps:

  • Mix the paprika, black pepper, chili powder, and cumin in a small bowl. In a one quart saucepan, melt the butter or bacon fat and gently cook the onion over medium heat until translucent. Add the garlic, bell pepper, and the spice mix you made in step (1). Stir, and cook for two minutes to extract the flavors. Add the stock and the rest of the ingredients. Stir until well blended. Simmer on medium for 15 minutes. Leftovers will keep in the fridge for a month or so.

We 'mop' most meats when we grill here in Texas. It keeps the meat moist and juicy! This is great for chicken or brisket. You will need to double this for a brisket. They sell little mops with the kitchen supplies and they look just like a kitchen string mop. If you don't have one you could probably use a basting brush. Oh, and make sure that you use an old sauce pan because if your hubby is like mine, you may not see it again! lol Or it may come back with the handle destroyed by the fire! Updated 9-2008

1/2 cup butter
2 medium onions, chopped
3 garlic cloves, mashed
3 lemons, sliced
salt and pepper
2 tablespoons Worcestershire sauce
3 cups water
12 ounces beer, use whatever you drink
1 tablespoon pickling spices
1/4 cup cider vinegar
1 teaspoon cayenne

Steps:

  • Place all ingredients except for the butter in an old sauce pan, or at least one that is oven safe.
  • Cook until it comes to a boil. Turn heat down to a simmer and add butter. Keep it on low heat until meat is done.
  • When butter melts taste it and adjust seasoning if desired.
  • Mop meat liberally and often with this while your are smoking or grilling.
