125 g mayonnaise (4oz)
40 g tomato sauce (ketchup)
Worcestershire sauce (to taste)
Tabasco sauce (to taste)

Steps:

  • Stir the tomato sauce and mayonnaise together in a small bowl.
  • Add a few drops of Worcestershire and Tabasco and stir to combine.
  • Cover with cling film and chill till required.
  • Serve with seafood and lemon wedges.

CLASSIC NEW ORLEANS SEAFOOD SAUCE



Classic New Orleans Seafood Sauce image

This could be found in every Oyster Bar in Town. Take a freshly shucked oyster, dunk it in this sauce, pop it on a saltine cracker and eat immediately. It is also very good with cold shrimp/prawns or crawfish. We like it spread on a cold rare roast beef sandwich. It is a very flexible sauce; you can add more Tabasco if you need the heat. Less or more horseradish is fine too.

1/2 cup grated horseradish (not horseradish cream!)
1/2 lemon, juice of
1/8 teaspoon Lea & Perrins Worcestershire Sauce

  • Combine all ingredients with a fork and keep refrigerated until using.
  • It will keep for a week or so.

1 (28 ounce) can san marzano tomatoes, crushed
1 cup onion, chopped
4 garlic cloves, minced
1 shallot, minced
2 -3 tablespoons olive oil
1/2 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon black pepper, ground
1 cup dry white wine or 1 cup white vermouth
1 cup seafood stock (or clam juice)
1 tablespoon fresh thyme, minced
1 fresh bay leaf, minced
1 lb shrimp, shelled and deveined

Steps:

  • Saute onion in olive oil over medium heat until translucent, about 10 minutes. Add garlic and shallot and saute for three to five minutes. Add red pepper, salt and pepper and saute for a minute or two. Add tomatoes, wine, thyme and bay leaf and cook, over low heat, for 15 - 30 minutes.
  • Add shrimp just before serving and either cook until pink, if fresh, or simply heat through. Toss in 3/4 lb cooked linguine.

8 dash(es) tabasco sauce
1/2 tsp dry mustard

1 tsp fresh ground black pepper

  • 1. Combine all ingredients. Chill before serving.
