CLASSIC NEW ORLEANS SEAFOOD SAUCE



Classic New Orleans Seafood Sauce image

This could be found in every Oyster Bar in Town. Take a freshly shucked oyster, dunk it in this sauce, pop it on a saltine cracker and eat immediately. It is also very good with cold shrimp/prawns or crawfish. We like it spread on a cold rare roast beef sandwich. It is a very flexible sauce; you can add more Tabasco if you need the heat. Less or more horseradish is fine too.

1 1/2 cups ketchup
1/2 cup grated horseradish (not horseradish cream!)
1/2 lemon, juice of
1/8 teaspoon Lea & Perrins Worcestershire Sauce
1/8 teaspoon Tabasco sauce
pepper

Steps:

  • Combine all ingredients with a fork and keep refrigerated until using.
  • It will keep for a week or so.

1 (28 ounce) can san marzano tomatoes, crushed
1 cup onion, chopped
4 garlic cloves, minced
1 shallot, minced
2 -3 tablespoons olive oil
1/2 teaspoon red pepper flakes
1 teaspoon salt
1 teaspoon black pepper, ground
1 cup dry white wine or 1 cup white vermouth
1 cup seafood stock (or clam juice)
1 tablespoon fresh thyme, minced
1 fresh bay leaf, minced
1 lb shrimp, shelled and deveined

Steps:

  • Saute onion in olive oil over medium heat until translucent, about 10 minutes. Add garlic and shallot and saute for three to five minutes. Add red pepper, salt and pepper and saute for a minute or two. Add tomatoes, wine, thyme and bay leaf and cook, over low heat, for 15 - 30 minutes.
  • Add shrimp just before serving and either cook until pink, if fresh, or simply heat through. Toss in 3/4 lb cooked linguine.

There is a very famous restaurant in Baffin Bay, Texas (East of Riviera, Texas), called King's Inn. The specialties of the house are sliced avocado salad, onion rings, shrimp, and their tartar sauce/seafood sauce. It is absolutely to die for and I have the recipe!!! It's definitely a restaurant recipe, as it makes a huge amount...so reduce the recipe as needed.

1 quart mayonnaise
1 quart Miracle Whip
10 eggs, hard-boiled, peeled
saltine crackers (3 tubes or 3/4 box)
5 stalks celery
jalapeno pepper, seeded (to taste)
2 1/2 ounces Worcestershire sauce
salt (to taste)
2 small bell peppers, seeded
1 (4 ounce) jar pimientos
1 (2 ounce) can anchovy fillets
1 large onion
fresh garlic (to taste)

Steps:

  • Finely chop celery, jalapenos, bell peppers, anchovies, garlic, and onion.
  • Add salt and Worcestershire sauce.
  • Break crackers into small pieces.
  • Mash the hard-boiled eggs.
  • Mix all ingredients together with the mayonnaise and Miracle Whip.

I love pasta so this is one of my favorites. The recipe calls for shrimp and scallops but I usually throw whatever seafood I have on hand into the mix. It's from the Favorite Brand Names Cookbook.

3 tablespoons olive oil
1 large onion, finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
2 cups canned meatless spaghetti sauce
2 tablespoons chopped parsley
1 bay leaf, crumbled
2 teaspoons dried basil leaves
3/4 teaspoon Tabasco sauce
1/2 teaspoon salt
3/4 lb medium shrimp, peeled and deveined
3/4 lb sea scallops or 3/4 lb bay scallop, quartered
12 ounces linguine, cooked and drained

Steps:

  • In large heavy saucepot or Dutch oven heat oil; cook onion and garlic 5 minutes or until golden. Add wine; simmer until reduced by half.
  • Stir in spaghetti sauce, parsley, bay leaf, basil, Tabasco sauce and salt. Cover; simmer 10 minutes.
  • Add shrimp and scallops. Cover; simmer 4-5 minutes or until seafood is done. Server over linguine.
