Number Of Ingredients 4

2 cups long grain rice
3 1/2 cups water or stock
1 1/2 teaspoons butter or oil
Salt and freshly ground black pepper

Steps:

  • Place all ingredients in a large glass measuring or any microwave safe bowl. Note: the rice expands during cooking, so be sure to choose a container that is large enough. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.

I was looking for a side dish tonight and came up with this. My grandson loved it!

Number Of Ingredients 8

1 lb pkg of frozen chopped spinach
2 c cooked rice
1/2 c chopped onion
3 Tbsp butter
3 Tbsp flour
1 c 1/2 and 1/2 or whole milk
2 c shredded cheddar cheese
salt and pepper

Steps:

  • 1. Preheat oven to 350
  • 2. Place frozen spinach in a 7 or 8 cup microwave/oven safe dish. Microwave for 6 minutes stirring 1/2 way through.
  • 3. Drain excess liquid from spinach but don't squeeze it
  • 4. Saute onions in the butter until tender
  • 5. Add flour to the pan and cook for a few minutes
  • 6. Add the 1/2 and 1/2 and stir until smooth. Cook until thickened. It should be fairly stiff, there is some moisture in the spinach that will thin it a little.
  • 7. Add salt and pepper and 1 1/2 cups of the cheese. Stir until melted.
  • 8. Add spinach and rice and mix well. Heat through.
  • 9. Pour into the oven safe dish you microwaved the spinach in.
  • 10. Top with remaining cheese.
  • 11. Bake for 30 minutes. Cheese should be melted and slightly browned and the casserole should be bubbly.

The best part about this cheesy rice recipe is that it's great both hot or cold. It's a dish I make often since cheese and rice are staples in my pantry and because it travels well, I like to take it to a picnic or a barbecue.

1 cup water
1/2 cup uncooked long grain rice
1/4 teaspoon salt
1/4 cup cubed process cheese (Velveeta)
1 tablespoon minced fresh parsley, optional

Steps:

  • In a small saucepan, bring the water, rice and salt to a boil. Reduce heat; cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. , Remove from the heat; stir in cheese and parsley if desired. Cover and let stand for 2 minutes or until cheese is melted. Stir until blended.

I made this one up and my little sister loves it! I do too! It's so easy! :P Use leftover cooked rice to make this as another side for another day...:D

Number Of Ingredients 6

1 -2 cup cooked white rice (we prefer jasmine but use the one u love!)
2 -3 tablespoons cream cheese (or sour cream...whatever soft cheese you want or have)
1/4 cup mozzarella cheese, shredded
parmesan cheese (optional)
1 teaspoon butter
salt, only if needed (optional)

Steps:

  • Put cooked rice in a microwaveable bowl large enough to fit the rice and to mix all the ingredients in it.
  • Add the butter. Place bowl in microwave for 15 seconds.
  • Remove bowl from microwave, mix rice and add the cheeses. Place in microwave one more time until the cheeses have melted (make sure to cover the bowl so you dont make a mess! :P).
  • Mix well and taste. Add salt if needed!
