3 cups diced fresh or frozen rhubarb, thawed
1 cup water
1/2 cup sugar
1 package (3 ounces) cook-and-serve vanilla pudding mix
Vanilla ice cream, optional

Steps:

  • In a microwave-safe bowl, combine the rhubarb, water and sugar. Microwave, uncovered, on high for 6-8 minutes or until rhubarb is tender, stirring occasionally. Stir in pudding mix until blended; cook for 30-90 seconds or until thickened, stirring occasionally. Serve over ice cream if desired. ,

This easy Strawberry Rhubarb Sauce will make a great topping for ice cream, cakes, or even breakfast! You can use fresh or frozen fruit and this sauce is freezer friendly!

3 cups (340g) chopped rhubarb
1½ cups (175g) quartered strawberries
½ cup (110g) sugar
1 teaspoon vanilla

Steps:

  • Place fruit and sugar in a medium saucepan. Add 2 tablespoons of water and bring to a boil over medium low heat. Reduce to a simmer and cook for 15-20 minutes or until slightly thickened stirring occasionally. Can use a potato masher to help release fruit juices and mash the fruit.
  • Remove from heat, stir in the vanilla, and allow to cool. This sauce will thicken as it cools.

1 cup sliced fresh or frozen rhubarb
2/3 cup sugar
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a small saucepan, combine strawberries, rhubarb and sugar; bring to a boil over medium heat, stirring to dissolve sugar. In a small bowl, mix cornstarch and water until smooth; stir into fruit mixture. Cook and stir until thickened, 1-2 minutes. Serve warm or refrigerate, covered, and serve cold.

2-1/2 cups chopped fresh or frozen rhubarb (1-inch pieces)
1 cup water
1/2 cup sugar
2 tablespoons grated lemon zest
1/4 teaspoon salt
1 cup sliced fresh or frozen unsweetened strawberries
2 tablespoons lemon juice
1/4 teaspoon ground cinnamon
3 to 4 drops red food coloring, optional
Pound or angel food cake

Steps:

  • In a saucepan, combine rhubarb, water, sugar, lemon zest and salt; bring to a boil. Reduce heat. Cook, uncovered, over medium heat until rhubarb is soft, about 10-15 minutes. Remove from the heat and let stand for 5 minutes. Stir in strawberries, lemon juice and cinnamon. If desired, add food coloring. Cool. Serve over cake.

1/3 to 1/2 cup sugar, depending on desired tartness
1/3 cup water
1 pound rhubarb stalks, cleaned and diced
1 quart strawberries, cleaned, hulled and halved
1/2 tablespoon lemon juice

Steps:

  • In a heavy saucepan over medium heat combine sugar and water. Stir to dissolve sugar. Add rhubarb and allow to simmer for 15 minutes or until tender. Add strawberries and lemon juice and simmer for 10 minutes more. Allow mixture to cool for about 10 minutes.
  • In batches, if necessary, puree mixture in blender. Add water if mixture appears too thick. Drizzle over yogurt or ice cream or serve with crumpets and sweetened whipped cream.

6 c rhubarb, cut up
1 1/2 c sugar
6 Tbsp flour
1/2 c margarine, softened
1/2 c flour
3/4 c brown sugar, firmly packed
1 tsp cinnamon
1 c quick oatmeal

Steps:

  • 1. Mix the first 3 ingredients in glass casserole or cake pan that will fit in your microwave. Use glass dish (Mom used to use a Corning Ware 2 inch deep large dish). Cook on high for 3 minutes, rotate dish - unless you have a turntable. Then cook for 3 more minutes on high. While that is cooking, stir together margarine, flour, brown sugar, cinnamon, and quick oatmeal. Mix well and put on top of rhubarb mixture. Microwave on high for 10 minutes - rotating once if you do not have a turntable.
