STEAMED CHICKEN SALAD WITH SESAME SAUCE



Steamed Chicken Salad with Sesame Sauce image

Number Of Ingredients 18

3-4 green onions
salt and pepper
2 small cucumbers
10 oz. boneless chicken thighs with skin
1 tablespoon sake
1 teaspoon sesame oil
small piece crushed ginger
For the Sesame Sauce:
1/4 cup liquid made up from the juices of the cooked chicken (and water if necessary)
4 tablespoons sesame paste
2 tablespoons soy sauce
2 tablespoons superfine sugar
1/2 tablespoon rice vinegar
2 teaspoons chili paste or to-ban-jan
2 tablespoons roughly ground sesame seeds
2 tablespoons finely shredded green onions
2 teaspoons finely chopped ginger
2 teaspoons finely chopped garlic

Steps:

  • 1. Finely chop the green onion diagonally, reserving the green part for use during cooking the chicken. Soak in cold water for a few minutes to remove the bitterness of the onion, then drain and put aside to use later.
  • 2. On a chopping board, sprinkle the cucumbers with a few pinches of salt, rubbing it into the flesh, then rinse. This lessens the aroma of the cucumber and gives it a good green color. Hit the cucumbers with a pestle (if you don't have a pestle, use a bottle) and break it apart with your hands, to make uneven pieces.
  • 3. Pierce the chicken pieces with a skewer and place in a microwave-safe bowl. Add the salt, pepper, and oil and then place the green part of the green onion and the crushed ginger on top. Cover and microwave on medium for 4 minutes, or until cooked. Leave to cool. Keep the juice from the chicken to use in the sesame sauce.
  • 4. Shred the chicken with your hands and place in a serving dish. Mix in the cucumber and put the chopped green onion on top.
  • 5. Mix all the ingredients for the sesame sauce in a small bowl and pour over the chicken and cucumber.

1 lb ground chicken
1/4 cup unsweetened coconut milk
1/4 cup coarsely shredded carrot
2 Thai chiles, minced
2 tablespoons chopped basil
2 tablespoons asian fish sauce
2 tablespoons sugar
2 teaspoons fresh lime juice
1 garlic clove, minced
1 large egg, beaten
1 small shallot, minced
1/2 teaspoon minced fresh ginger
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
40 wonton wrappers
green leaf lettuce leaf, for steaming
sriracha chili sauce, for serving

Steps:

  • In a large bowl, combine the ground chicken with the coconut milk, carrot, chiles, basil, fish sauce, sugar, lime juice, garlic, egg, shallot, ginger, salt and pepper. Using your hands, mix thoroughly.
  • Hold a wonton wrapper in the palm of your hand; keep the rest covered with plastic wrap. Place a rounded tablespoon of filling in the center of the wrapper and pinch the edges all around to form a cup that is open about 1 inch at the top. Keep the shumai covered with plastic wrap. Repeat with the remaining wonton wrappers and filling.
  • Fill a wok or a very large skillet with 2 inches of water and bring to a boil. Line a double-tiered bamboo steamer with lettuce leaves and arrange the shumai in the steamer without crowding. Cover and steam over moderate heat until cooked through, about 10 minutes. Repeat with the remaining shumai. Serve right away, passing the chili sauce at the table.

A recipe for microwave/steamed chicken breasts with sesame sauce made from ground sesame seeds. It's so delicious and a perfect meal for lunch because it's light. I've topped it with broccoli sprouts which gave the dish just the right balance.

300 g chicken breasts
1/4 teaspoon salt
1 garlic clove, thinly sliced
1 tablespoon sake
2 tablespoons toasted sesame seeds, ground
1 teaspoon sugar
2 teaspoons soy sauce
20 g broccoli sprouts

Steps:

  • Sprinkle salt on chicken then spread it with your hands to distribute the salt evenly.
  • Put the chicken in a microwave-safe bowl then add sake and put the thinly sliced garlic on top.
  • Prepare the sesame sauce by mixing the sesame seeds, sugar and soy sauce.
  • Put the lid or cover the chicken with a cling wrap then microwave for 4 minutes using 600W.
  • Take out the chicken from the microwave then let it cool. Once it cools, shred it into smaller bite-size pieces.
  • Remove the roots of the sprouts then distribute it on top of the chicken.
  • Add the sesame sauce on top before serving.
