1 1/2 cups coconut milk
1/4 cup peanut butter
2 tablespoons fresh lime juice
1/4 cup soy sauce
4 cloves garlic, minced
2 Thai chile pepper, seeded and finely chopped
2 tablespoons cilantro
Salt
1 1/2 pounds pork tenderloin, cut into 1-inch thick cubes
Wooden skewers
1 tablespoon vegetable oil
1/2 cup finely chopped onion
2 cloves garlic, finely chopped
1 Thai red chile pepper, finely chopped
1/4 cup soy sauce
2 tablespoons lime juice
1 1/2 cups coconut milk
1 teaspoon ground coriander
1 teaspoon cumin
1 cup chunky peanut butter
1 tablespoon minced fresh cilantro

Steps:

  • Combine all ingredients in a medium bowl, add pork and let marinate 2 to 4 hours.
  • Heat the oil in a skillet and add the onion, garlic and chili. Saute for about 4 minutes. Stir in the soy sauce, lime juice, coconut milk, coriander, and cumin. Thoroughly blend the peanut butter into the mixture. Bring the sauce to a simmer over low heat, stirring frequently. Stir in the cilantro and remove from the heat.
  • Preheat the grill.
  • Remove the pork from the marinade and thread on skewers. Grill for 7 to 8 minutes or until cooked through. Serve with the sauce.

1 tablespoon butter or 1 tablespoon margarine, melted
2 tablespoons flour
1/4 teaspoon salt (optional)
1 cup milk
1/2-3/4 cup grated cheddar cheese
1 -2 teaspoon curry powder
1 teaspoon prepared horseradish
2 tablespoons prepared mustard
1 dash Worcestershire sauce

Steps:

  • Combine melted butter, flour and salt in a medium bowl.
  • Gradually add milk and stir until smooth.
  • Cook, stirring occasionally, at MEDIUM heat in a microwave for 6 to 7 minutes, or until the sauce is thickened.
  • For Cheese Sauce: Stir in 1/2 to 3/4 cup grated cheddar cheese.
  • Cook at HIGH for 1 to 2 minutes, if necessary, to completely melt cheese.
  • For Curry Sauce: Stir in 1 to 2 teaspoons curry powder.
  • For Horseradish Sauce: Add 1 teaspoon prepared horseradish.
  • For Mustard Sauce: Add 2 tablespoons prepared mustard and a dash of Worcestershire sauce.

½ lime, juiced
1 tsp clear honey
1 tbsp soy sauce
1 tbsp curry powder
3 tbsp smooth peanut butter
165ml can coconut milk

Steps:

  • Mix the lime juice, honey, soy sauce, curry powder and peanut butter in a small bowl. Add a splash of water if it's too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.
