MICROWAVE REUBEN CASSEROLE
You'll find all the flavor of a Reuben sandwich (and none of the mess) in this satisfying casserole from Terri Holmgren of Swanville, Minnesota. It's prepared lickety-split in the microwave, so you can serve your hungry family fast.

- Place the sauerkraut in a greased 2-qt. microwave-safe dish; sprinkle with caraway seeds and half of the cheese. Top with the salad dressing, pastrami and remaining cheese. Toss bread cubes with butter; sprinkle over the top. Cover and microwave at 60% power for 5-7 minutes or until heated through.

This is such an easy recipe and great served as an appetizer at brunch or club. It has just the right bite. My family and friends always enjoy this recipe. Steps:
- 1. Drain and rinse sauerkraut and place on bottom of a buttered 9x13 inch glass dish.
- 2. Place corned beef evenly crumbled on top of sauerkraut. Sprinkle cheese on top of sauerkraut.
- 3. Combine both dressings and lemon juice and spread evenly over cheese.
- 4. Top with tomato slices sprinkle with basil. .Microwave for 3 minutes or until cheese has melted. Remove from microwave and sprinkle with toasted bread crumbs. Let set for 2 to 3 minutes and serve on or with rye bread.
