MICROWAVE CARAMEL POPCORN
Caramel popcorn made in under 15 minutes with the miracle of the microwave. Easy and fun - not to mention delicious.

Steps:
- Place the popped popcorn into a large brown paper bag. Set aside.
- In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 1/2 minutes. Remove from microwave, and stir in the baking soda.
- Pour syrup over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. Place bag into the microwave, and cook for 1 minute and 10 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Store in an airtight container.

Heat at full power for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 minute and 30 seconds more. Remove from the microwave, and stir in the baking soda. Pour the syrup mixture over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the popcorn. Place bag into the microwave, and cook for 1 minute 10 seconds. Remove, shake, flip the bag over and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Serve immediately or store in an airtight container.
QUICK MICROWAVE CARAMEL POPCORN
One of my students brought this to class to share with the kids for a party.The kids devoured it and I liked it so much I got it as a gift for Christmas! EDIT: Please make sure to watch this very closely as you may need to cut back the cooking time depending on the power of your microwave. Also- Please see Mamophet's review. I don't recommend reducing this recipe- If you absolutely must reduce it, please use accurate measurements in order to have edible popcorn. The ratio of popcorn to caramel needs to be maintained and the cooking time should be reduced as well.

- Pop popcorn and pour into a brown paper bag.
- Put all ingredients except soda and popcorn into a bowl and microwave on high for 3 minutes.
- Stir, and microwave 3 minutes more.
- Stir, add soda, and stir again.
- Pour over popcorn in paper bag and stir to coat evenly.

- Microwave 1 minute, stir.

- Mix together butter, sugar and white syrup in microwave safe bowl.
- Microwave on high for 2 - 4 minutes, uncovered. Microwaves can vary so please watch closely.
- Remove and stir.
- Microwave on high 2 minutes longer.

- 1. Place popcorn in a large microwave-safe glass bowl, set aside.
- 2. In another glass bowl, microwave the butter until melted, about 45 seconds. Stir in brown sugar and corn syrup. Microwave on high until mixture boils, 1 to 3 minutes, stirring once, then on high for 3 minutes without stirring. Remove bowl and stir in soda and vanilla.
- 3. Pour the caramel mixture over the popcorn and stir until most of the popcorn is coated. Microwave on 70% power for 1 minute. Remove and stir, then microwave at 70% for 1 more minute. Remove and stir again to coat popcorn evenly. Pour popcorn onto wax paper and cool completely, about ten minutes. Break apart and serve, or store in an airtight container.

OLD FASHIONED CARAMEL POPCORN IN THE MICROWAVE!
My mother used to make caramel popcorn for us kids on special occasions, except she made it in the oven and it took FOREVER! This replicates the old fashioned hardened caramel coated popcorn. She got her first Amana "Radarange" and this recipe from a lady named Pat Tyner at church and our lives were forever changed... yummy caramel popcorn that was easy for mom and no waiting for us impatient, whiny kids. We've been making this recipe for many, MANY years. Posting the original recipe for safe keeping. I've added a few updates... feel free to do the same!

- Pop popcorn. (Update: 2- 3.5 oz bags popped microwave popcorn can be substituted, approximately same volume).
- Put popped popcorn in a large, brown paper grocery bag.
- Stovetop: Add syrup, sugar and butter to a pan and bring to a boil for two minutes. (Update: In a microwave safe bowl, nuke until ingredients are melted and bubbly, 3-5 minutes.).
- Add vanilla and baking powder and stir briefly.
- While foaming, quickly pour caramel into the brown bag, over the popped popcorn. Roll the top of the bag together until closed and shake well.
- Place brown bag into the microwave and nuke 45 seconds.
- Remove bag from the microwave and shake well. Do not open the bag.
- Repeat steps: nuke for 45 seconds, remove, shake well, 3 more times.
- Nuke again for 30 seconds, remove, shake well and pour onto baking sheets to cool. Toss the bag.
- Caramel will harden as it cools, break apart and enjoy!

- Pop popcorn, remove seeds and place in a large store sized paper bag. Set aside. In a microwave safe bowl, add butter, corn syrup, brown sugar and salt. Microwave on high for 2 minutes. Stir. Microwave on high for 4 minutes. Stir. Add vanilla and baking soda and stir well. Pour over popcorn in brown paper bag. Roll shut and shake well. Place paper bag with popcorn in it into the microwave and cook on high for 1 1/2 minutes. Remove from microwave and shake well. Pour onto a jelly roll cookie sheet and spread out. Allow to cool and eat immediately!

- Pop the popcorn according to the instructions and empty into a large bowl (be sure to remove any unpopped kernels).
- Mix the corn syrup and brown sugar together in a microwave safe bowl and microwave on hight for 3 minutes.
- Stir butter and vanilla into the brown sugar/syrup mixture and stir until the butter is melted.
- Pour over the popcorn and stir until thoroughly coated.
- Spread on cookie sheets (greased or sprayed with cooking spray) and dry until desired hardness. (When hard, I break it up a little more as I put it into the serving bowl to make it truly bite sized.).
- Prep time includes time to pop popcorn (about 3 minute per bag -- I usually measure out everything else while the popcorn's popping).
