2 cups quick-cooking oats
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup corn syrup
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine oats and brown sugar. Stir in butter and corn syrup. Press into a greased 9-in. square microwave-safe dish. , Microwave, uncovered, on high for 1-1/2 minutes. Rotate a half turn; microwave 1-1/2 minutes longer. Sprinkle with chocolate chips. Microwave at 30% power for 4-1/2 minutes or until chips are glossy; spread chocolate evenly over top. , Refrigerate 15-20 minutes before cutting.

It's like having unbaked cookies for breakfast, without the butter and extra sugar. When I haven't had chocolate chips, I've used other chocolate. (Dove Promises are really good. I've also used Godiva cocoa.) I recommend using a large microwaveable dish (I use a 4-cup Pyrex); I discovered the hard way what a mess this can be in too small a bowl. And I always just eyeball the ingredients (except the oatmeal), so feel free to play with the measurements. It's not low fat, but it's soooo good.

1/2 cup oatmeal
3 -4 tablespoons creamy peanut butter
3 -4 tablespoons semi-sweet chocolate chips
1/2-2/3 cup milk

Steps:

  • In microwaveable bowl, put oatmeal, peanut butter and milk. Microwave on high for 1 1/2 minutes. (1 min 44 seconds for old fashioned oats.).
  • Add chocolate chips. Stir until melted.
  • Microwave another 1 1/2 minutes. (1 minute 44 sec. for old fashioned oats.).
  • Stir. Let stand until desired consistency.

1/2 cup quick oats
1 tablespoon creamy peanut butter
1 tablespoon semisweet chocolate morsel
1/2 teaspoon unsweetened cocoa
1 teaspoon sugar (or splenda)

Steps:

  • Bring milk just to a simmer and add oats.
  • Stir until oats get creamy.
  • Add peanut butter and chocolate chips and stir until they melt.
  • Add unsweetend cocoa and sugar.
  • Feel free to add more milk depending on your desired consistency.

1/4 cup hot chocolate powder (I use the sugar-free mix from this site, my variation in the review)
1/4 cup large flake oatmeal
1/2 cup water
1 tablespoon natural chunky peanut butter

Steps:

  • Combine the hot chocolate mix and oat flakes.
  • Add the water, stir, and microwave for approximately one minute on high.
  • Stir well, and add the peanut butter. This will melt into the oatmeal as you continue to stir.
  • I eat it without adding milk, but that is up to you.
