CHERRY PISTACHIO BARK

This cherry and pistachio bark makes a lovely Christmas dessert.

1 1/4 cups dried cherries
2 tablespoons water
2 bags (12 oz each) white vanilla baking chips (4 cups)
12 oz vanilla-flavored candy coating (almond bark), chopped
1 1/4 cups chopped red or green pistachio nuts

Steps:

  • Line 15x10-inch pan with sides with waxed paper. In small microwavable bowl, microwave cherries and water uncovered on High 2 minutes; drain.
  • In 2-quart heavy saucepan, heat baking chips and candy coating over low heat, stirring frequently, until melted. Remove from heat; stir in cherries and nuts. Spread in pan.
  • Refrigerate 1 hour or until firm. Cut with 3-inch tree-shaped cookie cutter (or desired shape). Store tightly covered at room temperature.

WHITE CHOCOLATE BARK WITH PISTACHIOS AND DRIED CRANBERRIES



White Chocolate Bark with Pistachios and Dried Cranberries image

12 ounces good-quality white chocolate, finely chopped
1/3 cup roasted salted shelled pistachios
1/3 cup dried cranberries
1/4 teaspoon flaky sea salt

Steps:

  • Line a rimmed baking sheet with parchment.
  • Put 9 ounces of the chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each, until just melted. Stir in the remaining 3 ounces chocolate and let stand 3 minutes. Stir until completely smooth. If there are still some lumps, microwave in 15-second intervals, stirring well after each, to melt any remaining chocolate, but take care not to heat more than necessary.
  • Pour the chocolate onto the parchment and gently spread to a thickness of 1/4 inch. Sprinkle the pistachios and cranberries on top, pressing very lightly so they adhere. Sprinkle with the flaky salt.
  • Refrigerate until set, about 20 minutes. Break into pieces and keep refrigerated until ready to serve.

1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup sugar
3 large eggs
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
3/4 cup chopped dried cherries
1/2 cup chopped pistachios

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Using a stand mixer, beat the butter and the sugar together until fluffy, about 5 minutes. Add the eggs, one at a time, incorporating each egg fully before adding the next. Add the vanilla. In a small bowl, whisk together the flour, baking powder and salt. With the mixer on low, stir the flour mixture into the butter mixture until just combined. Stir in the dried cherries and pistachios. Cut the dough in half and place the dough on the prepared baking sheet. Shape into 2 logs, each about 12 inches long.
  • Bake until just starting to brown at the edges, about 20 minutes. Cut each log on the diagonal into 1/2-inch-wide slices. Place the slices back on the baking sheet. Bake on the first side for 5 minutes. Remove, turn the biscotti over to the second side and bake until the biscotti are crisp, an additional 5 minutes. Let cool.

1 lb semi-sweet chocolate, coarsely chopped
8 oz white chocolate, coarsely chopped
8 oz dried cherries
12 oz pistachio nuts, shelled
1/2 c dark chocolate chips

Steps:

  • 1. Place semisweet chocolate & dark chips in microwave safe 8c. measuring cup or large bowl. In a microwave safe 2c. measuring cup or medium bowl. Heat semisweet chocolate,covered with wax paper on High 3 minutes or until almost melted,stir once. Remove and stir till smooth. Heat white chocolate on High 2 minutes stir once. Remove and stir until smooth.
  • 2. Pulse nuts in food processor to chop. Add to Semisweet chocolate with the cherries. On a sprayed cookie sheet spread chocolate mixture to 1/4" thickness. Spoon dollops of white chocolate on and with a knife swirl to marble the chocolates. Sprinkle with remaining pistachios and cherries. (I chop the pistachios in processor to top the bark too)
  • 3. Refrigerate bark 1 hour. Break bark into pieces. Store in airtight container in fridge up to a month. Pack in decorative plastic wrap or in decorative boxed with colored wax paper for gift giving.

PISTACHIO AND TART CHERRY CHOCOLATE BARK

  • Place white chocolate in microwave-safe 2-cup measuring cup or medium bowl.
  • Heat semisweet chocolate in microwave, covered with waxed paper, on High 2 to 3 minutes or until almost melted, stirring once. Remove from microwave and stir until smooth.
  • Heat white chocolate in microwave, covered with waxed paper, on High 1 to 2 minutes or until almost melted, stirring once. Remove from microwave and stir until smooth.
  • Stir 1 cup pistachios and 1 cup cherries into semisweet chocolate.
  • On large cookie sheet, spread chocolate mixture to about 1/4-inch thickness.
  • Spoon dollops of white chocolate onto semisweet-chocolate mixture.
  • With tip of knife, swirl chocolates together for marbled look.
  • Sprinkle with remaining pistachios and cherries.
  • Refrigerate bark 1 hour or until firm.
  • Break bark into pieces.
  • Store in tightly sealed container in refrigerator up to 1 month.
  • Pack in decorative boxes lined with waxed tissue paper or colored cellophane for gift giving.

2 cups semisweet chocolate chips
1 cup chopped pistachios, toasted, divided
3/4 cup dried cranberries, divided
5 ounces white candy coating, melted

Steps:

  • In a microwave-safe bowl, microwave chocolate chips until melted; stir until smooth. Stir in 3/4 cup pistachios and half of the cranberries; spread onto a waxed paper-lined baking sheet. Drizzle with melted candy coating. Cut through layers with a knife to swirl., Sprinkle with the remaining pistachios and cranberries. Refrigerate until firm., Cut or break into pieces. 2 tablespoons water
2 (12 ounce) packages white chocolate chips
6 (2 ounce) vanilla candy coating, squares
1 1/4 cups chopped red pistachios or 1 1/4 cups green pistachios

Steps:

  • Microwave cherries and 2 tablespoons water in a small glass bowl at HIGH 2 minutes; drain.
  • Melt chocolate and candy coating in a heavy saucepan over low heat. Remove from heat; stir in cherries and pistachios. Spread into a wax paper-lined 15- x 10-inch jellyroll pan.
  • Chill 1 hour or until firm. Cut with a 3-inch heart-shaped cookie cutter. (Lightly grease cutter with cooking spray to make cutting easier).
  • Store in airtight container.
