S'MORES POPCORN
Steps:
- Heat a large saucepan over high heat for 3 minutes. Add the oil and the popcorn kernels, and cover the pan with a lid. Cook, shaking the pan frequently, until you begin to hear popping. Cook on high for 1 minute more, then lower the heat to medium and continue cooking, shaking the pan, until the popping begins to slow down.
- Turn off the heat and pour the popcorn into a large bowl. Toss with the melted butter, salt and graham cracker crumbs. Add the marshmallows and toss again. Spread the mixture out on a parchment-lined baking sheet and drizzle with the chocolate. Toss gently to incorporate. Set aside until the chocolate hardens, about 1 hour. Store in an airtight container.

Steps:
- Spread peanut butter on a tortilla.
- Scatter a few chips and marshmallows on the peanut butter.
- Fold sides in on tortilla.
- Roll up tortilla.
- Wrap tightly in foil.
- Bake at 350 for 10 minutes or grill til melted.
MEXA S'MORES
Steps:
- Preheat the oven to 400 degrees F.
- Simmer the cream in a small saucepan. Remove from the heat. Add the chocolate and whisk until smooth. Set aside.
- Spray a baking sheet with nonstick cooking spray. Place 6 of the Maria crackers on the baking sheet and top each with half a marshmallow. Bake until the marshmallow starts to brown, about 5 minutes. Carefully arrange the crackers on a serving dish.
- Top each with 1 tablespoon chocolate ganache and another Maria cracker. Serve warm or at room temperature.
MEXICAN S'MORES
These are a variation to the classic s'mores fixed over a campfire.My husband and I camp almost all summer long and I like to keep a dozen or so of these in my freezer to share with our campfire friends. The kids especially love them!!

- 1. Lay the tortillas out on your clean countertop. Spread peanut butter on each tortilla. Sprinkle each torilla with mini choc. chips and mini marshmellows. Roll tortillas up, rolling once, then tucking in the sides before rolling the remaining shell. Wrap in aluminum foil. Can be cooked over a campfire by laying the wrapped, filled tortilla on a large, long handled spatula or leave in the refridgerator or even frozen for later use. Choc. chips can be substituted w/any flavor chip you prefer. White choc., butterscotch, etc. You can pretty much fill the tortillas with what ever you want! Enjoy!!
