There are days you're just bored with the same old same old! I figured a twist on the old standby of Shephard's Pie would be to give it a "south of the border" flair... so gave this a try. Made a hit and tasted great! For those who like the heat, add some green chilis or hot sauce to kick it up a notch.

2 lb hamburger
1 can(s) diced tomatoes
1 medium onion, diced
2 Tbsp chili powder
1 can(s) black beans
TOPPING
2 boxes of jiffy corn bread mix
2 eggs
2/3 c milk
2 c mexican blend shredded cheese

Steps:

  • 1. Brown hamburger with onions in skillet. Add seasoning, diced tomatoes and black beans. Heat through and pour into a 13x9" pan. (You can add hot sauce to make this more spicy. I like it mild!)
  • 2. Spread one cup of the cheese on top of the hamburger mixture.
  • 3. In a separate bowl, mix the corn bread, eggs, and milk. Spoon on top of the hamburg mixture. Then sprinkle the remaining cheese on top of the corn bread.
  • 4. Bake in 350 degree oven for 30 minutes. Let sit 5 minutes before serving!

2 (8.5 oz) Jiffy corn muffin mix boxes
2/3 cup milk
2 eggs
1 (16 oz) can cream style corn
1 large onion, chopped
1/4 cup chopped jalapeño peppers, without the seeds
1 1/2 to 2 cups shredded sharp cheese
1/4 pound crumbled, cooked bacon
1/2 pound turkey/pork sausage, cooked, drained
1/2 pound ground beef, cooked, drained
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
sour cream and chives for garnish

Steps:

  • Preheat oven to 425°.
  • Coat with cooking spray a 9" skillet pan.
  • Brown hamburger and sausage on medium high and drain.
  • Sauté onions in meat, add peppers and bacon; set aside.
  • In a mixing bowl combine jiffy muffin mix, eggs, milk, creamed corn, and garlic and chili powder.
  • Stir to combine; do not over mix.
  • Pour half of batter into prepared skillet.
  • Spread meat mixture over batter.
  • Sprinkle with cheese.
  • Spread remaining batter over cheese.
  • Bake 30 to 45 minutes or until lightly browned.
  • Cool 5-10 minutes before cutting.
  • Top with a dollop of sour cream and chives

1/2 cup sliced green onions
1 cup Old El Paso™ Thick 'n Chunky Salsa
1 1/2 teaspoons chili powder
3/4 teaspoon cumin
1 can (11 oz) corn, drained
1 pouch (4.7 oz) Betty Crocker™ loaded mashed potatoes
Water, milk and butter called for on potatoes pouch
1/2 cup shredded Cheddar cheese (2 oz)
1 medium tomato, sliced into thin wedges
Tortilla chips, if desired

Steps:

  • In 10-inch skillet, cook ground beef and 1/4 cup of the green onions over medium-high heat 5 to 7 minutes, stirring occasionally until beef is thoroughly cooked; drain. Stir in salsa, chili powder and cumin. Spoon corn evenly over beef mixture in skillet. Cover and cook over low heat until mixture is thoroughly heated.
  • Meanwhile, make potatoes as directed on pouch, using water, milk and butter.
  • Spoon potatoes over corn in skillet; spread evenly. Sprinkle with cheese and remaining 1/4 cup green onions. Cover; cook over low heat about 5 minutes or until cheese is melted. Arrange tomato wedges in spoke fashion over potatoes. Garnish with tortilla chips around outside edge of skillet.

1 ½ pounds ground beef
1 onion, finely chopped
garlic powder to taste
salt and pepper to taste
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
¾ cup hot water
1 (11 ounce) can whole kernel corn, drained
1 (8.5 ounce) package corn muffin mix
1 cup shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.
  • Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.
  • Bake 20 minutes in the preheated oven, or until puffed and golden. Garnish with olives and cheese.

1 lb ground beef
1 1/4 ounces taco seasoning mix
2 cups canned corn niblets
2 lbs potatoes, peeled and diced
1 cup cheddar cheese, shredded

Steps:

  • Brown and drain ground beef.
  • Add taco seasoning to taste [we prefer a less spicy mix, so I only use half the envelope].
  • Add corn.
  • Meanwhile, boil potatoes until tender, then mash.
  • If you like, you can add butter and milk.
  • Spread about one third of the potatoes in a round 2 quart casserole dish.
  • Top with the ground beef mixture, then the cheese. Finish with the remaining potatoes.
  • To use right away, bake at 350 about 30 minutes.
  • To freeze, cover and freeze until solid. Lift out of casserole dish and wrap in foil. Place in zipper bag, label with name and date. Use within 3 months.
  • To reheat, unwrap and place in original dish, defrost completely. Bake at 375 for 40-45 minutes.

This recipe came to The Times in a 2006 magazine article about the 75th anniversary edition of The Joy of Cooking, the soup-to-nuts cookbook found on practically every home cook's shelf since its first publication in 1931. Like many of the book's beloved recipes, this dish is a crowd-pleasing, homespun classic that is incredibly simple to put together. First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. If you're trying to eat less red meat, ground turkey or chicken would make a fine substitute for the beef.
