1 cup mayonnaise
2 canned chipotle chiles in adobo
4 soft rolls
4 plum tomatoes, cut into 20 thin slices
1 Hass avocado, peeled, seeded, and cut into 16 thin slices
8 ounces monterey jack pepper cheese, sliced thin
1/4 cup lemon juice
1 garlic clove, crushed
1 teaspoon salt
1 teaspoon paprika
1/2 cup olive oil
4 boneless skinless chicken breasts

Steps:

  • Combine marinade ingredients add chicken breasts 2 to 24 hours.
  • Grill chicken breasts.
  • Preheat oven to 350 degrees F.
  • Place the mayonnaise and chipotle chiles in a food processor and blend until smooth. Generously spread the cut sides of the rolls with the chipotle mayonnaise. Cover the bottom half of each roll with 1 thinly sliced chicken breast, overlapping the slices. Top each portion of chicken with 5 slices of tomato and 4 slices of avocado. Cover with 2 slices of cheese.
  • Place assembled sandwiches open faced on a sheet pan and bake until cheese is melted, about 8 minutes. Cover the sandwiches, slice in half and serve immediately.

It was just not for my family." i'm not sure why she tried my recipe if her family doesnt like the ingredients or why she didnt comment in her review, but i have an idea; careful what you say around here, people can leave bad reviews even if they havent tried your recipe..sucks :( if you can, start by going to a carniceria & picking up some pre-marinated carne asada & some bolillos. if thats not available to you then i suggest you marinate the steaks in Recipe #220759 only through step 6 using ingredients vinegar through paprika & you can use any soft roll type bread if you cant find bolillos. these are so tasty you HAVE to try 'em!!

Steps:

  • start by making the salsa fresca; combine all salsa ingredients & chill for an hour.
  • about 20 minutes before you're ready to cook the meat combine guacamole ingredients with a electric mixer until smooth. i'd suggest bring out the salsa now & hav some tortilla chips for dipping while waiting for the rest of the meal.
  • turn oven on 250 for toasting.
  • heat beans on med-low until hot.
  • in a large skillet or on a bbq cook steaks until light brown on the outside & still slightly pink in the middle -- carne asada should not be dark brown & charred.
  • once done let sit for 5 minutes.
  • while the meat is resting slice bolillos in half & toast for 4 minutes.
  • cut carne asada into small pieces or strips.
  • spread one half of the bolillos with guacamole.
  • spread the other half with hot beans.
  • sprinkle cheese on beans, if using, & top with carne asada, lettuce, salsa fresca & hot sauce, if using.
  • close sandwich, press down & cut in half.
  • serve with extra salsa & guacamole (if there's any left still!).

Steps:

  • Preheat grill or frying pan to hot.
  • Slice zucchini into thin circles. Brush one side of each strip with a little oil.
  • Lay the zucchini slices, oil side down, on the hot surface. Cook for 2 minutes on each side until done. Sprinkle with sea salt.
  • Slice the bread, spread Mexican Tofu Spread, and layer the zucchini on top.
  • Add herbs if using, chilli flakes or chive.
  • Top with other slice or leave open.

MEXICAN GRILLED CHEESE SANDWICH



Mexican Grilled Cheese Sandwich image

A lovely, slightly spicy, change from traditional grilled cheese sandwiches. The roasted jalapenos and taco seasoning in the butter take this over the top. Guaranteed comfort food! I roasted the jalapenos over the gas burner for several minutes until black, then cooled in a closed paper bag for about 15 minutes before scraping off the blackened skin. Then I minced them and froze the surplus for occasions just like this one! You could even dip your sandwich into a nice salsa as well. OH GOD NO! SAY IT ISN'T SO! BE STILL MY BLOOD PRESSURE!! (*ahem*.... sorry) Anyway, this went so incredibly well with Recipe #107281... I almost couldn't get it all in my mouth fast enough. :D Hope you enjoy it!

4 slices French bread
2 slices swiss cheese
1/2 cup shredded cheddar cheese
2 teaspoons roasted jalapenos, minced
1 1/2 tablespoons butter, softened
1 teaspoon taco seasoning

Steps:

  • In a small bowl, combine taco seasoning with the butter until fully mixed.
  • Thinly coat 1 side of each bread slice with butter mixture.
  • Heat skillet to medium. When hot, lay down 2 of the four slices of bread, buttered side down.
  • On each slice in the skillet, layer 1 slice of Swiss cheese, 1 teaspoon of the minced roasted jalapenos and 1/2 of the cheddar. Top each sandwich with the remaining bread slices, buttered side UP. (I actually put a little bit more of the jalapeno pieces into the butter mixture before spreading it.).
  • Cover skillet and turn pan to medium low. Cook for 5 minutes.
  • Uncover and flip when sandwiches have reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
  • Goes perfectly with a good bowl of soup!

3/4 cup (6 ounces) heavy cream
6 whole graham crackers
1 cup candied walnuts, roughly chopped
1 pint dulce de leche ice cream

Steps:

  • For the Mexican chocolate ganache: Put the chocolate in a heatproof bowl. Bring the cream just to a boil in a small pan. Pour immediately over the chocolate and let sit for a minute or 2. Whisk until the chocolate is melted and the ganache is completely smooth. Set aside to cool.
  • For the ice cream sandwiches: Break the graham crackers in half. Put the candied walnuts on a small plate. Turn the pint of ice cream on its side and use a serrated knife to slice through the carton, creating 6 ice cream discs. Spread some of the Mexican chocolate ganache on each graham cracker half. Add an ice cream disc (remove the carton) to 6 of the graham cracker halves and top with the remaining graham crackers. Roll the edges in the candied walnuts. Serve immediately.

3/4 c cider vinegar2

1 pound Yukon Gold potatoes, skin-on, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil, plus extra if necessary
1 pound fresh Mexican chorizo, removed from casing
1 large supermarket-style French or Italian loaf (about 16-by4-inches)
1/3 cup mayonnaise
1/2 cup refried pinto beans
1/4 cup jarred salsa verde
1/3 cup pickled jalapeno slices, roughly chopped
1/4 cup crumbled Cotija cheese
1 large ripe tomato, thinly sliced
1/2 cup loosely packed fresh cilantro leaves and soft stems, coarsely chopped

1 1/2 cups thinly shredded iceberg lettuce

Steps:

  • Put the potatoes in a large nonstick skillet and cover with water by 1/2 inch. Season with enough salt to taste like seawater. Bring to a boil and turn down to a simmer. Simmer the potatoes until mostly cooked through, 3 to 4 minutes. Drain and let cool on a plate in a single layer.
  • Rinse and dry the skillet; place over medium-high heat with 1 tablespoon oil. When the skillet is hot, add the chorizo and cook, breaking up with a wooden spoon, until crisp and brown, about 6 minutes,. Transfer to a plate with a slotted spoon. With about 1 tablespoon of fat left in the pan - remove some if there's too much or add more oil if there's too little - add the cooled potatoes and cook, stirring periodically, until golden brown all over, 4 to 6 minutes. Add the chorizo back to the pan and stir for about a minute. Remove from the heat and let cool completely.
  • Slice the bread loaf in half horizontally and lay the two halves cut-side up. Pull out some of the bread from both halves (reserve for another use), leaving a 1/4-inch border. Spread mayonnaise on both halves. On the bottom half, layer ingredients in this order: refried beans, chorizo and potato, salsa, pickled jalapenos, Cotija, tomato, cilantro, shredded lettuce, some salt and pepper, and the top half of bread. Wrap tightly in parchment, wax paper or plastic wrap and secure with twine if necessary. Press at least 3 hours with a brick (see Cook's Note) or cast-iron skillet on top to flatten the sandwich, refrigerated. About 45 minutes before serving, bring the sandwich to room temperature.

Tortas are kind of like a sub sandwich and served alot in South Texas. We use a bread called Bollios. It will not let me add Bollios to the ingredients so you will need 8 of them, 4" in length.

1/2 cup mayonnaise
1 cup fresh pico de gallo
1 avocado, peeled and thinly sliced
tomatoes, slices

  • First, split bollios in half, lengthwise.
  • Spread mayo on the top halves. (you don't have to use mayo if you don't want to).

1/3 cup canned black beans
2 teaspoons lime juice
1 pinch cumin
1 pinch salt

  • Bring a medium pot of water and vinegar to a simmer (vinegar helps the eggs to set). Meanwhile, in a medium bowl, use a fork to coarsely mash the beans with lime juice, cumin and salt. Stir in half the coriander. In a small bowl, stir peanut butter with mayonnaise and adobo peppers.
  • Crack one egg into a small ramekin or bowl. Slide egg into simmering water. Repeat with the second egg. Simmer for 3 minutes. While eggs are cooking, split and toast English muffins. Remove eggs, one at a time, using a slotted spoon. Pat dry with paper towel and set on a plate.

1 pound beef sirloin steak or top round
1/2 teaspoon garlic powder
1 cup refried beans
1/2 cup sharp cheddar cheese grated
3 tablespoons onions minced
1 tablespoon taco sauce
6 slices Italian breads about 1/2 -inch thick
2 tablespoons butter real, softened
Salt and freshly ground pepper to taste
1 avocado thinly sliced
1 cup lettuce shredded iceberg
2 tomatoes peeled and diced
Taco sauce

Steps:

  • Have the butcher slice the meat or do it yourself by placing meat in freezer until firm but not frozen. Using sharp knife, trim and slice into 1/8 -inch thick strips. Lightly sprinkle with garlic powder let set at room temperature. Heat beans in small saucepan mix in cheese, onion, and 1 tablespoon taco sauce. Butter bread slices and place on baking sheet. Spread each with refried bean mixture and lightly sprinkle with salt and pepper. Layer meat slices over beans. Broil 4 inches from heat for 5 minutes, watching carefully. Remove from oven and layer with slices of avocado, lettuce, and tomatoes. Pass taco sauce separately.
