MEXICAN RED CHILE SAUCE

Salsa de Chile Rojo. This is based on a recipe from Sunset's Mexican Cook Book. Sunset recommends mild dried chiles, ones that are large and dusky-red. Use as an enchilada sauce.

6 ounces whole dried chilies (ancho, pasilla, or California green chiles, about 10 to 12 chiles, in any combination)
3 cups hot water
1/4 cup tomato sauce (or tomato paste)
1 small garlic clove, minced (or pressed)
1/4 cup salad oil
1 1/2 teaspoons salt
1 teaspoon oregano leaves, crumbled
1/4 teaspoon ground cumin

Steps:

  • Preheat oven to 400 degrees F.
  • Place chiles on a baking sheet. Toast lightly in oven, 3 or 4 minutes, until they give off a mild aroma. Do not burn, otherwise, chiles will be very bitter.
  • Remove chiles from oven and set aside until cool enough to handle.
  • Remove and discard stems, seeds, and any pink pithy materials.
  • Rinse chiles in cool water, drain briefly, then cover with hot water and soak for an hour.
  • Process chiles in blender with enough of the soaking water to obtain a nice, blended consistency.
  • Add remaining water, tomato sauce, garlic, oil, salt, oregano, and cumin. Simmer, uncovered, for 10 minutes, stirring occasionally.
  • Sauce can be refrigerated for up to 1 week or frozen for later use.

1 medium red onion, finely diced
1 jalapeno, finely diced
2 cloves garlic, finely chopped
2 tablespoons ancho chili powder
1/2 teaspoon ground coriander
1 to 2 chipotle peppers in adobo, processed until smooth
One 28-ounce can plum tomatoes and their juice, processed until smooth
Kosher salt and freshly ground black pepper
Clover honey, to taste, optional
1 to 2 tablespoons Mexican crema
Fresh cilantro leaves, for garnish
1/3 pound chorizo, very cold, cubed
1/3 pound chuck, very cold, cubed
1/3 pound pork butt, very cold, cubed
3 cloves garlic, finely chopped
1 large egg, lightly beaten
1/2 cup finely chopped cilantro, plus extra for garnish
1/4 cup freshly grated Cotija cheese
1 tablespoon New Mexico chili powder
2 teaspoons Mexican oregano
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
3/4 cup panko breadcrumbs
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 3/4 cups chicken stock
Queso fresco, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • For the red chile tomato sauce: Heat the oil in a 12-inch high-sided saute pan over high heat. Cook the onions and jalapenos until softened, about 5 minutes. Add the garlic and cook 30 seconds, and then stir in the chili powder and coriander and cook 1 minute. Pour in 1 cup water and cook until reduced. Mix in the chipotles and tomatoes and bring a boil, and then reduce to a simmer and cook until the sauce is slightly thickened, about 20 minutes. Season with salt, black pepper and honey, if using. Whisk in the crema, followed by the cilantro, and adjust the seasoning, if needed.
  • For the mexican meatballs: Grind the cubed meats using a hand-operated meat grinder fit with a medium dye. Combine the ground meats with the garlic and egg in a large bowl, and then add in 1/4 cup of the cilantro, the cheese, New Mexico chili powder, Mexican oregano, cumin and cayenne pepper. Gently mix together until combined. Begin mixing in the breadcrumbs, 1 tablespoon at a time, until the mixture holds together. Mix in some salt and black pepper, and form the meat into 2-inch balls. Heat the olive oil in a medium saute pan over medium heat. Cook the meatballs, turning occasionally, until brown all over, 3 to 4 minutes. Pour in the chicken stock and cook until the liquid is mostly reduced and the meatballs are just cooked through, 5 to 7 minutes longer. Transfer to a serving platter and top with the Red Chile Tomato Sauce, queso fresco and additional cilantro leaves.

This is a red sauce that I found on some website and slightly made adjustments. It's an excellent sauce for tamales, enchiladas and Mexican chicken casseroles.

2 (14 1/2 ounce) cans tomatoes (diced)
1 (6 ounce) can tomato paste
1 medium onion, chopped
1 cup water (set aside 1/2 cup)
1/4 cup olive oil
1 clove garlic, crushed
2 tablespoons cilantro (leaves only, chopped fine)
1 teaspoon lemon juice
1/4 cup green pepper (diced)
1 medium jalapeno, chopped (optional)
1 tablespoon cumin
1 teaspoon chili powder
1 teaspoon paprika
1/4 cup sugar
1 teaspoon salt, to taste

Steps:

  • Combine all ingredients, except for the 1/2 cup of water in a food processor or blender and blend until smooth.
  • Pour sauce into a medium sauce pan and add remaining 1/2 cup of water.
  • Bring to a boil then reduce heat to a simmer and allow to cook through for about 20 minutes.
  • Note: Makes Aprox 2 quarts.

I've played about with a lot of ingredients, talked to a lot of people South of the Border, and tried it with over a dozen different chili powders... Today was my final test... I'll give you a hint: 90% of this...

PLAN/PURCHASE
3 Tbsp olive oil, extra virgin
1/2 medium yellow onion, small dice
1/2 medium red bell pepper, small dice
2 clove garlic, minced
2 Tbsp tomato paste
1/4 c chili powder, your choice
1 tsp ground cumin
1 tsp ground paprika
2 c chicken or beef stock (not broth), or filtered water
2 Tbsp flour, all-purpose variety
10 oz (1 can) tomato puree
1 pinch cayenne pepper, or to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather and prep all your ingredients.
  • 3. Add the olive oil to a saucepan over medium heat.
  • 4. Add the diced onions and red bell pepper.
  • 5. Sauté, until softened... but not browned, about 5 - 6 minutes.
  • 6. Add the garlic and stir until fragrant, about 1 minute.
  • 7. Add the tomato paste, and stir for about 2 minutes.
  • 8. Add the chili powder, cumin, and paprika, and then stir to combine, about 1 minute.
  • 9. Chef's Note: I tried this recipe with over a dozen different chili powders, and the one that I think takes it WAY over the top is: New Mexico Red Chile (http://www.loschileros.com). I get it shipped in, and it is totally worth it. It comes in heat levels from 1 to 5, and in this recipe I'm using heat level 3.
  • 10. Whisk the flour into the stock, or water.
  • 11. Add the stock or water, and the tomato puree, and stir until fully incorporated.
  • 12. Take the mixture to a light simmer, and cook for 15 minutes, it should be slightly thickened
  • 13. Chef's Note: At this time add the cayenne pepper, to taste.
  • 14. Chef's Note: Remember good chefs cook and taste, cook and taste. If you're using a hotter brand of chili powder, you might not need so much cayenne pepper.
  • 15. Remove from heat, and place into a blender fitted with an S-Blade.
  • 16. Blend until pureed, and then reserve.
  • 17. Chef's Note: This sauce goes great, as is, for pork, chicken, or beef enchiladas... it also works in Mexican casseroles, but you might need to thin it a bit with more stock.
  • 18. This is one AMAZING sauce. Enjoy.

While trying to help my dear friend Mommy Diva find some New Mexico style red chile sauce, I came across this recipe. I just have to try it! According to Diana Kennedy[http://en.wikipedia.org/wiki/Diana_Kennedy], Pasilla chilies are a long and skinny variety of chile, while Ancho chilies (dried poblanos) are shorter and wider. However, in certain parts of Mexico, the Ancho chile is called Pasilla, and because of immigration, is commonly known as Pasilla in many parts of the US. 3 dried ancho chiles or 2 ancho chilies
2 guajillo chilies, only use these if you are using ancho's
water
1 large garlic clove
2 cloves, whole, crushed
2 peppercorns, black, crushed
1/2 teaspoon salt, more to taste

Steps:

  • Working on one chile at a time, use a kitchen shears to cut a slit all the way down one side of a chile. Open up the chile and remove the stem and seeds. Remove as much of the veins as you can. Reserve a few of the seeds or veins for adding later if you want added heat.
  • Heat a large skillet on medium heat. Flatten out the dried chilies as well as you can and place on the skillet to heat. Press down on the opened chilies with a metal spatula for a few seconds. You may hear some sizzle or popping. You do not want to toast or burn the chilies, just heat them enough to draw out more of the flavor.
  • Add the chilies to a small saucepan and add enough water so that they are just covered. Bring to a boil. Remove from heat and let sit for 10 minutes, until the chilies have softened and plumped up. (OR pour place the chilies in a small saucepan and pour boiling water over them to cover. Let sit for 15 minutes, until softened.).
  • Reserving the soaking water, remove the chilies from the pan and place in a blender. Add the garlic, salt, ground pepper, ground cloves, and 1 1/2 cups of the soaking liquid (taste the soaking water first, if it seems bitter, use water or even broth instead). Purée for 2 minutes, until the sauce is completely smooth. Taste the sauce and adjust the seasoning. If you want more heat, add in a few of the seeds or veins and purée some more. Add more salt if needed.
  • Pour the sauce through a sieve into a skillet. Add a tablespoon of olive oil to the sauce. Bring to a simmer and reduce heat to maintain the simmer, cook for 10 minutes. Skim off the foam. Remove from heat. Use immediately or pour into a glass jar (plastic will get stained) and refrigerate.

2 lb dried ancho chiles seeds & stems removed
2 lb dried pasilla chile peppers seeds & stems removed
1 lb dried black mulatos chiles seeds & stems removed if no mulatos avail use guajillos
3 large tablets of mexican drinking chocolate
10 clove large cloves of fresh garlic peeled
6 tsp peanut butter smooth not chunky
1 large onion peeled and cut in quarters
5 tsp fresh ground cumino, cumin powder
2 tsp ground oregano powder
5 tsp salt
1 tsp garlic powder

Steps:

  • 1. Clean the dried peppers by removing the stems and opening them up and removing the seeds. Please be sure to remove all the seeds. After cleaning all of the dried chile peppers put into a large pot with the quarted onions and cover with cold water bring to a steady boil over high heat. Let boil fast for 3 minutes, then reduce the flame to medium low and let simmer for 12 minutes. Remove from the flame and let cool on a back burner for an hour or so.
  • 2. Next working in batches remove with a large slotted spoon; to a blender add a clove of garlic, break a piece of chocolate of of the tablet, (I place the tablets in a plastic freezer bag and hit the tablets with a wooden meat mallet to break in small pieces) do not break up to small. Add a tsp of peanut butter, a piece of the boiled onion and just about a 1/4 cup of the chile water where you boiled the chiles in. Process in the blender on high until you have a smooth paste. With a rubber spatula scrape out all of the chile paste into a deep bowl. Continue this step again until you have processed all of the chiles with the garlic, onion,peanut butter, chocolate and chile water. After all is ground into a chile sauce add the dry seasonings ground cumin, oregano salt and garlic powder.
  • 3. Stir the chile sauce until all of the seasonings are well incorporated. With a measuring cup measure out 8 ounces into each small freezer bag until you have used all of the chile sauce. Seal each bag and freeze. If you wont be using this much sauce you can cut down your chiles to about one pound of each type of dried chiles mentioned above; and reduce your seasonings and garlic cloves and chocolate. Figure one medium onion, 2 cloves of garlic per pound of chiles, Half tablet of chocolate per pound, reduce seasonins to 3 tsps of cumin, half teaspoon of oregano, 3 tsps salt 1/2 tsp garlic powder.
  • 4. Freeze bags and enjoy the real authentic Mexican flavor for your Mexican dishes. This chile freezes well and can be kept frozen for up to a year. Enjoy
  • 5. This chile sauce cannot be eaten like this. This is the base beginning to many truly authentic Mexican dishes.

TRADITIONAL NEW MEXICAN RED CHILE SAUCE

The dried red chiles have a distintive earthy taste. You may enrich the sauce with a bit of cream. Use in Carne Adovada or enchiladas. Just remember to cover the rubber or plastic parts of your blender with plastic wrap and use metal spoons. These red chiles will stain rubber and plastic permanently.

1 lb dried New Mexico chile, remove stems (leave seeds and veins if you like a hotter sauce)
2 heads garlic, peeled
1 large onion, chopped
2 tablespoons oregano, dried
1 teaspoon salt
water, as necessary

Steps:

  • Place the chile pods on a foil lined cookie sheet and warm in a 375º F.
  • oven for just a few minutes until they become soft and leathery.
  • Working in small batches at a time, fit pods into a blender or food processor.
  • Purée with the onion, garlic, oregano and salt until smooth, adding small amounts of water as needed to make a sauce the consistency of thick cream.
  • Place each batch of puréed mixture in a large bowl until all have been blended.
  • Stir the batches together.
  • Store in refrigerator.

24 dried corn husks
1/2 cup fat-free, less-sodium chicken broth
1/3 cup dried cherries
1 ancho chile, stemmed
1 cup chopped onion
2 tablespoons brown sugar
3 tablespoons fresh lime juice
1 teaspoon ground cumin
1/2 teaspoon salt
5 garlic cloves
1 (1-pound) pork tenderloin
Cooking spray
4 1/2 cups Basic Masa Dough
2 cups hot water
1 1/4 cups Mexican hot-style tomato sauce
Lime wedges (optional)

Steps:

  • Place corn husks in a large bowl; cover with water. Weight husks down with a can; soak 30 minutes. Drain husks.2. Combine broth, cherries, and ancho chile in a microwave-safe dish. Microwave at HIGH for 2 minutes or until cherries and ancho are tender. Combine broth mixture, onion, and next 5 ingredients (through garlic) in a blender; process until mixture is smooth. Reserve 1/2 cup broth mixture; cover and chill. Place remaining broth mixture in a large zip-top plastic bag. Add pork; seal and marinate in refrigerator 1 hour, turning bag occasionally.3. Preheat oven to 450°.4. Remove pork from bag, and discard marinade. Place pork on a broiler pan coated with cooking spray. Bake at 450° for 30 minutes or until a thermometer registers 155° (slightly pink). Let pork stand 20 minutes; shred pork with 2 forks. Toss shredded pork with reserved 1/2 cup broth mixture.5. Working with one husk at a time, place about 3 tablespoons Basic Masa Dough in the center of husk, about 1/2 inch from top of husk; press dough into a 4-inch-long by 3-inch-wide rectangle. Spoon about 1 heaping tablespoon pork mixture down one side of dough. Using the corn husk as your guide, fold husk over tamale, being sure to cover filling with dough; fold over 1 more time. Fold bottom end of husk under. Place tamale, seam side down, on the rack of a broiler pan lined with a damp towel. Repeat procedure with remaining husks, Basic Masa Dough, and filling. Cover filled tamales with another damp towel. Pour 2 cups hot water in the bottom of a broiler pan; top with prepared rack.6. Steam tamales at 450° for 55 minutes, adding water as necessary to maintain a depth of about 1/2 inch. Let tamales stand 10 minutes. Serve with sauce and lime wedges, if desired.

4 pounds boneless pork or loin trimmed and cut into 1-2 inch pieces
1 dash kosher salt
6 ounces dried new mexico chilies cleaned stemmed seeded and torn into 1 inch pieces
4 cups boiling water
2 tablespoons honey
2 tablespoons white vinegar
6 garlic cloves peeled
2 teaspoons mexican oregano dried
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
1/4 teaspoons ground cloves

Steps:

  • toss pork with salt and refrigerate one hour
  • place chilies in bowl pour boiling water over and submerge completely. let stand until soft about 30 minutes. pre-heat oven to 325 degrees
  • drain chilies, reserving 2 cups soaking liquid. Process chilies, honey, vinegar, garlic, oregano, cumin, cayenne, cloves and teaspoon salt in a blender until chilies are finely ground and a thick paste forms. With blender running add 1 cup reserve liquid and process until smooth 2 minutes, add another 1/4 cup liquid, then add remaining liquid and blend completely.
  • combine pork and sauce in dutch oven, stir to evenly coat. Bring to boil over high heat. Cover pot and transfer to oven and cook until pork is tender about 2-2.5 hours.
  • Use wooden spoon to stir up, loosen browned bits, and blend thoroughly. Let stand about 15 minutes, season with salt and pepper to taste and serve with lime wedges and corn tortillas.

1 1/2 tsp dehydrated onions, finely ground

1/2 tsp garlic powder
1/4 tsp sugar, granulated variety
1/4 tsp sweet paprika
1/4 Tbsp cayenne pepper

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a saucepan, and a non-reactive jar to store the sauce in.
  • 3. Gather your ingredients (mise en place).
  • 4. Add the tomato sauce, water, and vinegar to a small saucepan over medium heat, and bring up to a simmer.
  • 5. Place the dry ingredients into a spice blender, and blend until finely ground.
  • 6. Add to the simmering sauce.
  • 7. Continue to simmer for 5 - 7 minutes.
  • 8. Remove from the heat, allow to cool.
  • 9. Store in a non-reactive container in the fridge, until ready to use.
  • 10. PLATE/PRESENT
  • 11. Use anywhere you want a piquant sauce for your Mexican recipes. Enjoy.

1/2 cup toasted slivered almonds
1 large onion, finely chopped
1 garlic clove, crushed (I use1/2 tsp liquid-y chopped garlic)
2 tablespoons olive oil
1 (8 ounce) can tomato sauce
2 teaspoons paprika
1 teaspoon ground red chile (I used red pepper flakes)
1/4 teaspoon ground red pepper (I used cayenne)

Steps:

  • Put the almonds in a food processor and pulverize until finely ground.
  • Cook onion and garlic in oil over medium heat, stirring frequently, until onion is tender (about 10-15 minutes).
  • Stir in all the other ingredients except the ground almonds. (I found it easier to turn the heat off first, then add the tomato sauce followed by everything else, then put the heat back on.).
  • Heat to boiling; reduce heat. Simmer 1 minute stirring constantly;.
  • stir in almonds.
  • Serve hot with some corn chips and/or arepas, and enjoy!. Makes about 1 3/4 cups of sauce.

  • Heat oil in a large saucepan over medium-high heat. Add onion; saute 4 minutes. Add chile powder and garlic; saute 1 minute. Stir in tomatoes and remaining ingredients. Bring to a boil; reduce heat, and simmer 10 minutes.

2 tablespoons olive oil
2 3/4 cups chicken stock

Steps:

  • For the red chile tomato sauce: Heat the oil in a 12-inch high-sided saute pan over high heat. Cook the onions and jalapenos until softened, about 5 minutes. Add the garlic and cook 30 seconds, and then stir in the chili powder and coriander and cook 1 minute. Pour in 1 cup water and cook until reduced. Mix in the chipotles and tomatoes and bring a boil, and then reduce to a simmer and cook until the sauce is slightly thickened, about 20 minutes. Season with salt, black pepper and honey, if using. Whisk in the crema, followed by the cilantro, and adjust the seasoning, if needed.
  • For the mexican meatballs: Grind the cubed meats using a hand-operated meat grinder fit with a medium dye. Combine the ground meats with the garlic and egg in a large bowl, and then add in 1/4 cup of the cilantro, the cheese, New Mexico chili powder, Mexican oregano, cumin and cayenne pepper. Gently mix together until combined. Begin mixing in the breadcrumbs, 1 tablespoon at a time, until the mixture holds together. Mix in some salt and black pepper, and form the meat into 2-inch balls. Heat the olive oil in a medium saute pan over medium heat. Cook the meatballs, turning occasionally, until brown all over, 3 to 4 minutes. Pour in the chicken stock and cook until the liquid is mostly reduced and the meatballs are just cooked through, 5 to 7 minutes longer. Transfer to a serving platter and top with the Red Chile Tomato Sauce, queso fresco and additional cilantro leaves.
