MEXICAN QUESADILLA CASSEROLE

1 pound ground beef
½ cup chopped onion
1 (15 ounce) can tomato sauce
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes with lime juice and cilantro (such as RO*TEL®)
1 (8.75 ounce) can whole kernel sweet corn, drained
1 (4.5 ounce) can chopped green chiles, drained
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon minced garlic
½ teaspoon dried oregano
½ teaspoon red pepper flakes
6 flour tortillas
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease.
  • Stir tomato sauce, black beans, diced tomatoes with lime juice and cilantro, corn, and chopped green chiles into the ground beef mixture; season with chili powder, cumin, garlic, oregano, and red pepper flakes. Reduce heat to low and cook mixture at a simmer for 5 minutes.
  • Spread about 1/2 cup beef mixture into the bottom of the prepared baking dish; top with 3 tortillas, overlapping as needed. Spread another 1/2 cup beef mixture over the tortillas. Sprinkle 1 cup Cheddar cheese over beef. Finish with layers of remaining tortillas, beef mixture, and Cheddar cheese, respectively.
  • Bake in preheated oven until heated throughout and the cheese is melted, about 15 minutes. Cool 5 minutes before serving.

8 small whole wheat tortillas
1 cup black beans, rinsed and drained
1/2 cup red green or yellow bell pepper
3 green onions, chopped
2 tablespoons cilantro or 2 tablespoons parsley, chopped
2 cups jalapeno havarti cheese, diced

Steps:

  • Evenly distribute toppings on 4 tortillas.
  • Top with remaining four tortillas.
  • Heat skillet over medium heat and cook tortilla sandwiches approximately 4 minutes on each side or until cheese is melted and tortillas are browned.

MEXICAN QUESADILLA

1/2 pound ground beef
1/2 cup onion, diced
1/2 a packet of taco seasoning or 1 Tablespoon of homemade
1 teaspoon garlic paste or 2 teaspoons minced garlic
1 {10 ounce} can Ro*tel mild tomatoes
4 cup shredded cheese
Flour tortillas

Steps:

  • In a large skillet, add ground beef, onion, taco seasoning, onion and Ro*tel. Cook on medium heat until meat is cooked through, onions are translucent and most of the moisture is cooked off. {We don't want soggy quesadillas!} While meat is cooking, butter one side of two tortillas. Place 1 tortilla in a large skillet or griddle butter side down. Layer with cheese then ground beef mixture then more cheese. Don't be shy with the cheese! Place second buttered tortilla on top of cheese butter side UP. Cook quesadillas for approximately 4 minutes on each side over medium heat. You don't want to cook too fast or the cheese wont melt. And you don't want to cook too slow or the cheese will never melt! Medium heat should do it. Once tortilla turns a golden color on the bottom, flip it and cook additional 3 - 4 minutes on other side. If you aren't sure how to flip it because it's so big, place a plate face down onto your quesadilla. Then using a spatula scoop up the quesadilla onto the plate then flip plate over so it's in the correct position and slide quesadilla off. This will ensure no spillage of yummy insides! Once done, use a knife or pizza cutter to cut into 6 pieces.

1 pound ground beef
1 small onion (chopped)
2 8 ounce cans tomato sauce
1 15 ounce can diced tomatoes (don't drain)
1 15 ounce can black beans (or pinto beans) (drained)
1 8 ounce can of whole kernel corn (drained)
1 4 ounce can chopped green chiles (don't drain)
2 teaspoons chili powder
1 teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
4 8 inch flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Brown beef and onion in large skillet on medium-high heat, drain. Add tomato sauce, diced tomatoes, beans, corn and green chiles to skillet. Mix well.
  • Add chili powder, cumin and red pepper flakes to skillet. Continue mixing.
  • Bring to a boil and then simmer for 5 minutes on low heat.
  • Spread ½ cup of the beef mixture in a 13x9 baking dish. Add 2 tortillas on top, overlapping them in the middle.
  • Add ½ of the remaining beef mixture on top of the tortillas. Add ½ cup cheese on top of ground beef. Repeat again with tortillas, beef mixture and cheese.
  • Bake for 20 minutes. Let stand for 10 minutes before serving.

I have cooked and eaten a many a quesadilla in my time, but this is by far THE BEST thing I've ever had on a tortilla!!!! This is my new go to, soul satisfying meal or snack!

2 - tomatoes, sliced
1/2-1 cup(s) grated asadero or favorite cheese
6 - carb balance wheat tortillas
- **chili sauce
- **olive oil
- **spray olive oil
- **black pepper and salt to taste, opt
- **cilantro

Steps:

  • Grate your favorite cheese. Slice tomatoes and place on a griddle or in skillet drizzled with a little olive oil. Add pepper/salt if desired. Cook for just a couple of minutes till tomatoes become tender.
  • This is the chili sauce I used.
  • Spread chili sauce onto one side of each tortilla. You will want the chili sauce to be on the INSIDE of the quesadilla. Spray griddle or skillet with non stick spray, place plain side of tortilla on bottom.
  • Sprinkle with a little cheese, then add tomato slices, cilantro, more cheese, then other tortilla. Spray the top side of the tortilla with spray oil to help in the browning and crisping process. Cook over med. high-high heat on each side for a couple of minutes, just until cheese melts and tortilla browns a little and becomes crispy.
