TACO BELL STYLE MEXICAN PIZZAS
A homemade Taco Bell-style Mexican pizza. If you like Taco Bell's you'll really like these. A treat for your family and friends.

Steps:
- Prepare taco meat per package directions.
- Warm refried beans.
- Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
- Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
- Drain on paper towels.
- Top on tortilla with a thin layer of refried beans.
- Then top beans with a layer of taco meat.
- Put another tortilla on top of the taco meat.
- Put red sauce on top of the tortilla.
- Put a few diced tomatoes and green chiles on top of red sauce.
- Top with the Mexican blend cheese.
- Finally top with a few chopped green onions.
- Put finished Mexican pizzas on cookie sheet and broil in oven until cheese is melted.
- Cut into fourths and serve.

MEXICAN MINI-PIZZAS

Steps:
- Cook the chorizo in a medium-size skillet over medium heat. Drain on paper towels.
- Preheat the oven to 375 degrees F.
- Put the dough out onto a well-floured surface. Divide the dough into 4 equal pieces. Roll into 4inch circles, using a rolling pin or stretching it into circles by hand. Arrange the circles on 2 baking sheets lightly brushed with oil.
- Top each pizza with tomato slices and crumbled cooked chorizo. Top with shredded cheese and sprinkle with dried oregano.
- Bake until the dough is golden brown and cheese is bubbly, about 20 minutes.
MEXICAN TORTILLA PIZZAS WITH CHORIZO
Steps:
- Preheat the oven to 400 degrees F. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the chorizo and cook, stirring occasionally, until browned, about 4 minutes. Remove the chorizo to a plate with a slotted spoon. Transfer all but 1 tablespoon of the drippings to a small bowl; stir the remaining 1 tablespoon olive oil into the bowl (reserve the skillet). Divide the tortillas between 2 baking sheets and brush the tops with the drippings mixture. Bake until the tortillas are crisp and lightly golden, about 5 minutes.
- Heat the skillet with the reserved 1 tablespoon drippings over medium-high heat. Add the refried beans and cook, stirring, until warm and spreadable, about 2 minutes. Spread the beans over the tortillas and sprinkle with the chorizo and cheese. Bake until the cheese melts, about 5 minutes.
- Meanwhile, combine the lettuce, cilantro, radishes, jalapeño and lime juice in a large bowl; season with salt and toss. Top each tortilla with the salad, avocado and crema.

- Preheat oven to 375°F.
- While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
- Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
- Lightly spray two medium sized cookie sheets with cooking spray.
- Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
- Bake tortillas until lightly browned, about 6 to 8 minutes.
- Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.
- Divide ground beef, corn, onions, and tomatoes evenly over each tortilla.
- Divide cheese evenly over the top of ground beef mixture.
- Bake for 10 to 12 minutes or until cheese is melted.

- Heat oven to 425°F. Spray 2 cookie sheets with cooking spray. Spray both sides of tortillas; place on cookie sheets. Bake about 3 minutes or until bottoms are slightly crisp; turn tortillas, and rotate pans. Bake 2 to 3 minutes longer or until bottoms are slightly crisp (tortillas will continue to crisp upon cooling). Remove tortillas to cooling rack; let cool. Reduce oven temperature to 350°F.

QUICK & EASY VEGETARIAN MEXICAN PIZZAS
I always thought that Mexican pizzas sounded really cool and fun to make but always got discouraged at the lack of vegetarian options, since I think a lot of the commercial non-meat ground beef substitutes usually have a soapy taste plus tend to be expensive. Feel free to use homemade refried beans, I prefer the convenience of canned and many brands make vegetarian/vegan varieties. I use ID #389616, All Purpose Mexican Seasoning, feel free to use a commercial type or another mix.

- Place 4 eight-inch tortillas onto an ungreased cookie sheet. Spread the refried beans across each tortilla and season with the taco seasoning/Mexican spices. Leave about 1/2" of space around the edges like putting sauce on a regular pizza.
- Bake at 400F for 10 minutes. While they're baking, mix up the cheeses (or measure out 1 cup premade cheddarjack blend) in a small bowl, and the veggies in another.
- When the tortillas are done baking, top each one with 1/4 cup cheese, and equal amounts of the veggie mix and serve immediately.

- Brown tortillas one at a time in two tsp. olive oil and place on a cookie sheet. Bake at 400 for 5 minutes or until crisp and brown.
- Heat refried beans on stove until they're soft. divide into fourths and spread on each individual tortilla.
- Divide salsa in fourths and spread over refried beans like pizza sauce.
- Sprinkle each tortilla with 1 Tbsp. green chiles and 1/2 cup vegitarian crumbles.
- Sprinkle 2 oz. of shredded cheese over each tortilla then sprinkle with veggies you like, reserving lettuce if you're using it.
- Bake in oven at 400 degrees until cheese is melted. Remove from oven. Sprinkle with shredded lettuce if you're using it then slice into quarters with a pizza cutter. Yield 4 personal pizzas.

- Marinate turkey pieces in oil and vinegar dressing for an hour or longer.
- Toast tortillas.
- Saute onion, red pepper and jalapeno in olive oil until onion is golden. Add puree and basil and cook until sauce thickens. Stir in turkey and season with pepper.
- Divide topping among four tortillas and spread evenly over tops. Sprinkle with goat cheese and broil for a minute or less until edges of tortillas begin to brown.
