This black bean enchilada casserole recipe is a one dish vegetarian Mexican casserole perfect for those busy nights.

2 cups chopped onion
1 1/2 cups chopped red pepper
2 garlic cloves , minced
3/4 cup salsa
2 teaspoons ground cumin
2 (15.8-ounce) cans black beans, drained
12 6-inch corn tortillas
2 cups Monterey Jack and Cheddar blend, shredded
3 tomatoes, chopped, optional
1/2 cup sour cream, optional
1/2 cup sliced black olives, optional

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Combine onion, pepper, garlic, salsa, cumin, and black beans in large skillet and bring to simmer over medium heat. Cook, frequently stirring, for 3 minutes.
  • Arrange 6 tortillas in bottom of 9 x 13-inch baking dish, overlapping them as necessary.
  • Spread half of bean mixture over tortillas and sprinkle with half of cheese. Repeat layering process with remaining tortillas, bean mixture, and cheese.
  • Cover dish with foil and bake 15 minutes. Carefully remove foil and serve warm. Garnish with tomatoes, sour cream, and olives.

12 ounce package of broad, flat noodles
Enough salted water to cover the noodles 1 inch
2 tablespoons vegetable oil
½ white onion, diced
2 cloves garlic, minced or 1 heaping teaspoon bottled, minced garlic
1 pound ground beef
2½ cups homemade enchilada sauce or 20 can of you favorite store bought
2 cups cheddar or longhorn cheese, grated
Garnish with shredded lettuce, diced tomatoes and avocado, sour cream, etc...

Steps:

  • Preheat oven to 350 degrees
  • Pour noodles into a large pot and cover with enough hot water for the noodles to float freely but, not an excessive amount. Salt the water.
  • Heat vegetable oil in a large skillet and brown onion until translucent and slightly brown, about 4 minutes. Add garlic and saute another minute or two. Add ground beef and cook until browned, about 8 to 10 minutes. Drain beef.
  • Pour enchilada sauce into the skillet and bring to a boil. Drain noodles and stir into beef. Add 1 cup of cheese and stir.
  • Pour noodle mixture int a baking dish and sprinkle with remaining cheese. Bake until cheese is melted and slightly golden brown.
  • Garnish with shredded lettuce, diced tomatoes, diced avocado and dab of sour cream.

1 cup of elbow macaroni
1 15 oz can of black beans (drained and rinsed)
1 cup frozen corn
1 large green pepper - chopped
2 cups fresh tomatoes - diced
1 10.75 ounce can of condensed tomato soup
1 package of taco seasoning mix
3/4 cup shredded taco blend cheese
2 jalapenos - chopped finely for garnish (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta until al dente. Drain.
  • Into a casserole baking dish add your elbow macaroni, black beans, corn, green pepper, tomatoes, tomato soup and taco seasoning mix. Stir the ingredients with a spoon.
  • Sprinkle shredded cheese on top of the casserole.
  • Add finely chopped up jalapenos on top. (optional)

I got this off of MSN and have modified it a little to our tastes. The recipe calls for making them in individual servings but I usually just make it as a casserole. Very rich and not for the fat conscious - we don't have this very often. It also makes for a few dishes.

12 ounces bow tie pasta, uncooked (about 5 cups)
1/2 cup onion, chopped
1/2 cup sweet red pepper, chopped
2 tablespoons butter
1/3 cup flour
2 tablespoons fresh cilantro, chopped and packed
1 teaspoon cumin
3 cups milk
6 ounces colby cheese, shredded
1 1/2 cups monterey jack cheese, shredded
1 cup salsa, chunky is best
2/3 cup olive, pitted
chili powder

Steps:

  • Preheat oven to 350 degrees. Butter six 12-1 6 ounce individual casserole dishes (or one 3 quart baking dish); set aside.
  • Cook pasta according to package directions. Drain and return to pan.
  • In a large saucepan, cook onion and sweet pepper in butter over medium heat about 5 minutes or until tender. Stir in flour, cilantro and cumin. Add milk all at once. Cook and stir until the mixture and thickened and bubbly. Reduce heat to low. Stir in Colby cheese and 1 cup of the Monterey Jack cheese; stir until melted.
  • Pour mixture over drained pasta; stir to combine.
  • Layer half the pasta mixture, all of the salsa and the remaining pasta mixture in the prepared casserole(s). Sprinkle with remaining 1/2 cup of Monterey Jack cheese and olives. Sprinkle lightly with chili powder on top.
  • Bake, uncovered, 15-20 minutes or until bubbly around the edges and heated through (if useing a large casserole, bake in 400 degree oven for about 20 minutes). Let stand for 5 minutes before serving.

1 (12 ounce) package extra-wide egg noodles
1 (16 ounce) container sour cream
1 (16 ounce) container small curd cottage cheese
1 (7 ounce) can diced green chilies
1 tablespoon chives or 1 tablespoon snipped green onion top
1 (8 ounce) package shredded Mexican blend cheese, divided
chives or snipped green onion top
sliced black olives (reserved 12 slices)

Steps:

  • SET oven rack in center position; PREHEAT oven to 350°F ; SPRAY a 13 x 9 baking dish with non-stick cooking spray and set aside; GET all ingredients needed for recipe and place in work station; OPEN ingredient containers and have ready for when needed; BRING 3 quarts salted water to a boil.
  • BROWN 1 lb. lean ground beef in a skillet over medium heat.
