MEXICAN GROUND BEEF TORTILLA LAYER CASSEROLE

1 1/2 lbs ground beef
1 onion, chopped
1 green bell pepper, seeded and diced
1 -2 tablespoon fresh minced garlic
1 large jalapeno pepper, seeded and finely chopped (optional)
2 -4 teaspoons cumin (or to taste)
salt and black pepper
2 (10 ounce) cans red enchilada sauce
1 (15 ounce) can black beans (rinsed and well drained)
2 cups frozen corn
9 corn tortillas
2 cups shredded Mexican blend cheese, divided (can use more or less)
2 plum tomatoes, finely chopped
sour cream
green onion
coarsley crushed tortilla chips

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
  • Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
  • Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
  • Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
  • Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
  • Repeat the layers twice but omitting the final cheese layer on top.
  • Drizzle any remaining canned enchilada sauce (from the second can) on top.
  • Cover with foil and bake in a 350 degree F oven for 25 minutes.
  • Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
  • Let stand 10-15 minutes before slicing.
  • Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.
  • Delicious!

A simple combination of yellow squash, ground beef, and Mexican spices. A great way to use up the bounty of summer squash in the garden.

1 lb ground beef or 1 lb Italian sausage
1 tablespoon oil
3 medium yellow squash, sliced
1 small onion, sliced
1 garlic clove, minced
1 (14 1/2 ounce) can diced tomatoes, undrained (OR 1 pint fresh tomato, diced and 1/2 cup water)
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
salt and pepper
1 cup cheddar cheese

Steps:

  • In a large skillet over medium heat, cook the ground beef until evenly brown. Drain and set aside.
  • Heat the oil in the skillet over medium heat. Mix in the squash, onion and garlic and sauté until tender.
  • Add the ground beef and tomatoes (and water if fresh tomatoes are used) into the skillet. Season with chili powder, cumin, paprika, salt, and pepper.
  • Turn mixture into an ovenproof casserole dish. Top with cheddar cheese. Bake in 400°F oven for 15 minutes.

1 1/2 cups white rice, prepared per instructions
1 teaspoon olive oil
1 lb lean ground beef (I used 96/4)
1/2 yellow sweet onion, diced
3 garlic cloves, minced
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2-1 teaspoon crushed red pepper flakes
sea salt & fresh ground pepper, to taste
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can tomato sauce
3 -4 tablespoons fresh cilantro, chopped (divided)
1 -2 cup shredded cheddar cheese
3 -4 tomatoes, sliced thickly
sour cream (topping)
salsa (topping)
guacamole (topping)

Steps:

  • Preheat the oven to 350 degrees. Prepare rice per instructions. While the rice is cooking heat the olive oil in a large skillet over medium heat. Once the skillet is hot, add the ground beef, making sure to break it up into crumbles. Cook the beef for 3-4 minutes then add the diced onion and all of the seasonings. Stir until well combined and cook for an additional 10 minutes or until the beef is cooked through and the onion is tender. Add the minced garlic and cook, stirring constantly for an additional 60 seconds. Add the cooked rice, drained and rinsed black beans, tomato sauce and a bit of cilantro (reserving some for garnishing) to the beef and onion mixture. Mix the ingredients thoroughly, taste and re-season if needed.
  • Coat a large baking dish with cooking spray and pour the rice mixture into the dish, spreading it evenly. Place the tomato slices on top of the rice mixture then top with cheddar cheese.
  • Spray a piece of tin foil with cooking spray (so the cheese won't stick) and cover the baking dish. Bake for 20 minutes then remove the tin foil. Bake for an additional 5-7 minutes or until the cheese is melted and golden brown. Remove from the oven and let sit for 5 minutes before slicing. Top with a dollop of sour cream and the remaining chopped cilantro. Enjoy.

1 pound ground beef
1 small onion, finely chopped
1 ½ cups water
¼ cup salted butter
1 (6 ounce) package cornbread stuffing mix (such as Kraft® Stove Top®)
1 (14.5 ounce) can diced tomatoes with jalapeno
1 (10 ounce) can diced tomatoes with green chile peppers
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon hot pepper sauce (such as Tabasco®), or more to taste
1 (8.75 ounce) can sweet corn, drained
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • While the beef is cooking, make stuffing. Bring water and butter to a boil in a medium saucepan. Stir in stuffing mix; cover. Remove from heat. Let stand for 5 minutes. Fluff with a fork.
  • Stir diced tomatoes, chili powder, cumin, and hot sauce into the beef mixture. Simmer for 2 minutes. Add corn and Cheddar cheese. Simmer until cheese is melted completely, about 1 minute. Transfer mixture to a casserole dish. Spread cornbread stuffing evenly over the top.
  • Bake in the preheated oven until browned, 20 to 30 minutes.
