MEXICAN GRILLED CHICKEN

We love this chicken. The marinade whips up in a minute in the food processor or blender. Preparation time does not include time to marinate.

8 chicken thighs or 4 chicken breast halves, on the bone
1/2 onion
1 large garlic clove
1/4 cup olive oil
1/2 teaspoon Mexican oregano
1/2 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried chipotle powder
1 teaspoon paprika
1 limes, juice of or 2 tablespoons apple cider vinegar
1 handful cilantro leaf (optional)

Steps:

  • Put all marinade ingredients in the blender or food processor and liquify.
  • Put marinade in a gallon-size zip lock bag and add chicken pieces. Turn a few times to distribute marinade.
  • Refrigerate for at least 2 hours I leave it for about 10 hours.
  • Remove chicken from marinade and place on hot grill. Discard marinade.
  • Grill, turning occasionally, until chicken is cooked through.

CHILI'S MARGARITA GRILLED CHICKEN AND BELINDA'S MEXICAN RICE

I started with a copycat recipe, added more of my favorite (garlic salt) ingredient, and then made this for my son, as well as for my co-worker, who had just had a baby. Everyone's comment: "Wow! That was really tender, tasty chicken!" (I didn't tell them how incredibly easy it was!) I served it with my Mexican rice (another favorite)and black beans.

4 boneless skinless chicken breasts
1 cup margarita mix
1/4 cup tequila
1 tablespoon minced garlic
garlic salt, to taste
pepper, to taste
1 cup white rice
2 cups chicken broth
1/4 cup salsa
cumin, to taste
garlic salt, to taste
1 tablespoon vegetable oil

Steps:

  • Marinate chicken in margarita mix, tequila, and garlic in refrigerator for several hours, or overnight. (I soaked it overnight, and it was really flavorful.).
  • Remove chicken from marinade, and sprinkle with garlic salt and pepper.
  • Preheat George Foreman or gas grill. Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Serve with Mexican rice and black beans.
  • Mexican Rice:.
  • Cook rice in 1 tablespoon oil, until lightly browned.
  • Add chicken broth, salsa, cumin, and garlic salt; cover pan and simmer for about 25 minutes, or until rice is tender.

MEXICAN CITRUS MARINADE
1/4 c orange juice
1/4 c lime juice
1/4 c olive or vegetable oil
2 Tbsp cilantro, fresh-chopped
2 Tbsp onion, chopped
2 tsp chili powder
1 tsp ground cumin
1/2 tsp salt
1/4 tsp red pepper sauce

Steps:

  • 1. Prepare marinade in a resealable plastic bag.
  • 2. Tenderize chicken with kitchen mallet and place in marinade bag.
  • 3. Seal bag and refrigerate, turning chicken occasionally, at least 30 minutes to 3 hrs.
  • 4. Then throw them on the grill. They will only take 15 to 20 minutes to cook. Ole'!

Vegetable oil, for the grill
1 jalapeno pepper
1 pound tomatillos, husked and rinsed
1 orange, halved
2 limes, halved
1 small bunch cilantro, chopped 1 tablespoon fresh oregano
1 teaspoon chili powder
2 cloves garlic
Kosher salt and freshly ground pepper
1 1/2 pounds skinless, boneless chicken thighs (about 6)
3 assorted bell peppers, halved and seeded
1 poblano chile pepper, halved and seeded
2 small red onions, cut into 1-inch-thick rings
1/2 pineapple, cored and sliced ½ inch thick
6 corn tortillas
6 heads Little Gem or other baby lettuce, quartered
1/2 cup crumbled Cotija cheese

Steps:

  • Preheat a grill to medium high and brush the grates with vegetable oil. Make the dressing: Grill the jalapeno and tomatillos, turning, until well charred and softened, about 5 minutes for the jalapeno and 20 minutes for the tomatillos. Transfer to a platter. Grill the orange and 1 lime cut-side down until well marked, about 2 minutes. Remove to the platter. Turn off the grill.
  • Stem the jalapeno (remove the seeds for less heat); transfer to a blender. Add the tomatillos, the juice from the grilled orange and lime, the cilantro, oregano, chili powder and garlic. Season with salt and pepper; puree until smooth. Transfer half of the dressing to a large bowl; add the chicken and toss. Cover and refrigerate 4 to 6 hours. Refrigerate the remaining dressing until ready to serve.
  • Reheat the grill to medium high; brush the grates with more vegetable oil. Brush the bell peppers, poblano and red onions with vegetable oil. Grill, turning, until charred and softened, about 15 minutes; transfer to a cutting board. Meanwhile, remove the chicken from the marinade and grill, turning once, until cooked through, 10 to 12 minutes; transfer to the board. Brush the pineapple and the remaining halved lime with vegetable oil. Grill until marked, about 3 minutes; transfer to the board. Warm the tortillas on the grill.
  • Arrange the lettuce on a platter. Slice the bell pepper, poblano, chicken and pineapple. Arrange on top of the lettuce along with the red onions. Sprinkle with the cheese and season with salt and pepper. Serve with the grilled lime, tortillas and reserved dressing.

3 pounds boneless skinless chicken thighs (trim off most of the fat)
1 tablespoon sunflower oil or any mild flavored oil
2 tablespoons extra virgin olive oil
2 tablespoons honey
2 tablespoons brown sugar
¼ cup fresh lime juice
1 teaspoon finely grated fresh ginger
1 teaspoon cumin
1 teaspoon coriander
1 teaspoondry oregano
3 medium cloves garlic finely chopped or grated
1 teaspoon kosher salt

Steps:

  • Instructions Combine all marinade ingredients in a sauce pan and stir well. Transfer 3 tablespoons of marinade to a zippered bag and add chicken. Massage bag well to coat all chicken pieces. Marinate for at least 30 minutes and up to 12 hours. Heat remaining marinade over medium heat till mixture comes to a boil. Continue to cook (watch carefully so that mixture does not overflow pan) until syrupy and reduced to one half original volume, about 1-2 minutes. Set aside to cool. 1 tablespoon Oregano - fresh, use 1 tsp if dried

1/4 teaspoon Cayenne
1 pinch Cround cloves
1 tablespoon Peanut or other oil
2 tablespoon Fresh squeezed orange juice
2 tablespoon Freshly squeezed lime juice
1.5 pound Boneless chicken thighs
1 Chopped cilantro for garnish

Steps:

  • Preheat a gas grill, start a wood or charcoal fire or preheat a broiler; the fire should be moderately hot, and the rack should be about 4 inches from the heat source.
  • Combine the garlic, onion, oregano, cumin, cayenne, cloves, salt, pepper and oil in a blender or small food processor, and blend until fairly smooth. Add the juices, taste and adjust seasoning; the flavors should be powerful.

1/3 c olive oil
4 clove garlic minced
1 Tbsp paprika
1 tsp chili powder
2 tsp kosher salt

  • 1. Preparation - Mexican-style Grilled Chicken you can use on beef and pork too Place the chicken in a 9-by-13-inch pan. In a medium bowl, combine the remaining ingredients except the garnish. Pour over the chicken and marinate for 1 hour or, ideally, overnight in the refrigerator. Take the chicken out of the refrigerator an hour before cooking. Heat the grill to medium high. Grill the chicken for about 10 to 12 minutes per side, turning often to avoid burning. Remove and serve on a platter with cilantro sprigs. To grill chicken indoors: Preheat the oven to 400 degrees F and place a baking sheet on the middle rack. Heat a grill pan on the stove over high heat. 1 cup black beans (drained)

  • Place the chicken in a 9-x-13-inch pan. In a medium bowl, combine the remaining ingredients, except the garnish. This recipe is similar to tequila lime chicken without the tequila. : ) Prep time does not include marinating time.

2 garlic cloves, minced
3 Tbsp fresh lime juice
3 Tbsp orange juice
1 tsp ground cumin
2 Tbsp cilantro, minced
1/2 jalapeno pepper, seeded and minced
1 tsp morton lite salt
1/4 tsp pepper
3 Tbsp oil
4 skinless, boneless chicken breasts pounded (i generally cut through the chicken breast lengthwise to make a thinner breast)
fat-free sour cream

Steps:

  • 1. Combine the first nine ingredients in a large bowl. Add the chicken breasts and toss to coat. Cover and refrigerate for as little as 30 minutes or up to 4 hours.
  • 2. Grill the chicken over medium heat until just cooked through, being careful not to overcook as they will dry out.
  • 3. Serve with a squeeze of lime juice and a dollop of fat-free sour cream.

1/4 cup orange juice
1/2 teaspoon chili powder
1/4 teaspoon cumin
2 cloves garlic, minced
4 boneless skinless chicken breast halves
3 cups hot cooked instant rice
1/2 cup salsa

Steps:

  • In shallow non-metal pan or dish, combine orange juice, chili powder, cumin and garlic; mix well.
  • Add chicken breast halves; turn to coat well.
  • Let stand at room temperature for 15 minutes to marinate.
  • If marinating chicken for more than 15 minutes, cover and refrigerate.
  • Meanwhile, heat grill.
  • Cook rice as directed on package, omitting margarine and salt.
  • When ready to grill, oil grill rack.
  • Remove chicken from marinade; discard marinade.
  • Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals.
  • Cover grill; cook 5 to 7 minutes on each side or until chicken is fork-tender and juices run clear.
  • Thinly slice each chicken breast half.
  • Serve over hot cooked rice; top with salsa.
  • Broiler directions: Marinate chicken and prepare rice as directed above.
  • Line broiler pan with foil; spray rack with non-stick cooking spray.
  • Remove chicken from marinade; discard marinade.
  • Place chicken on sprayed rack.
  • Broil 4 to 6 inches from heat for 5 to 7 minutes on each side or until chicken is fork-tender and juices run clear.
  • Serve as directed above.
