1 large eggplant (1-1/2 lbs.)
@ 1/4 cup olive oil, or olive oil spray
8 oz. can tomato sauce
10 oz. can Rotel tomatoes
1/2 cup sliced green onions
2 oz. can sliced olives, drained
1/2 teaspoon garlic salt
1 - 1/2 cups shredded Cheddar cheese
@ 1/2 cup sour cream for garnish

Steps:

  • Preheat oven to 450 degrees Cut unpeeled eggplant into 1/2 inch slices and brush all sides with oil (or spray will olive oil) Arrange in a single layer on a rimmed baking sheet. Roast, uncovered in 450 degree oven until soft, about 20 minutes. Turn down oven to 350 degrees after you remove eggplant. In bowl, combine tomato sauce, Rotel tomatoes, green onions, garlic salt & olives. Salt eggplant more, if desired. Spread a few Tablespoons of sauce on bottom of 1- 1/2 quart casserole dish. Line bottom with half of eggplant, overlapping slightly. Spoon on half the sauce and half the cheese. Repeat, ending with cheese on top. Bake, uncovered, at 350 degrees until hot and bubbly, about 25 minutes. Pass sour cream to spoon over individual servings.

I don't cook a lot of eggplant, but I use this recipe when I want something different to vary my diet. It's quick, easy, and good!

1 pound ground beef
¼ cup chopped onion
1 tablespoon all-purpose flour
1 (8 ounce) can tomato sauce
¼ cup chopped green bell pepper
1 teaspoon dried oregano
1 teaspoon chili powder
1 eggplant, cut into 1/2-inch slices
salt and ground black pepper to taste
1 cup shredded Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Sprinkle flour over the beef mixture and toss to coat. Stir tomato sauce, green bell pepper, oregano, and chili powder through the beef mixture.
  • Season eggplant slices with salt and pepper; arrange over the beef mixture. Place a cover on the skillet and continue to simmer until the eggplant is tender, 10 to 15 minutes. Top with Cheddar cheese to serve.

Based on Zarela Martinez's recipe, we changed it a bit and included cooking the eggplant in the sauce instead of frying it. Delicious!

Number Of Ingredients 21

1 large globe eggplant (and salt)
3 tablespoons extra virgin olive oil
1 1/2 cups chopped fresh yellow onions
5 garlic cloves, minced
4 ounces canned chopped mild green chilies
4 -5 large ripe tomatoes, chopped fine (you can use canned, roughly chopped, too)
1 teaspoon small caper
5 large pimiento-stuffed green olives (cut in halves or thirds, use more if you like green olives)
2 dried bay leaves
2 tablespoons dried parsley
1 teaspoon ground dried ancho chile powder
1/2 teaspoon ground cumin
1/4 teaspoon crumbled dried thyme
1/4 teaspoon crumbled dried marjoram
1/4 teaspoon crumbled dried Mexican oregano
1/2 teaspoon salt, to taste
1/4 teaspoon ground mild cinnamon
1/4 cup dry sherry
salt & freshly ground black pepper, to taste
8 prepared polenta, rounds for serving (broiled or fried)
1/4 cup Mexican crema, for serving

Steps:

  • Cut the peel from the eggplant and cut into approximate 1/2 to 3/4 inch strips. Add them a handful at a time to a colander, salting them well between layers, until all of them are in the colander. Set aside for 30 minutes to allow them to "sweat" their bitterness out and lose liquid.
  • While the eggplant is in the colander, make the sauce. In a large, heavy pot (I use my Le Creuset), heat the olive oil. Add the onion and sauté until just translucent. Add the garlic and chiles, stir well, and sauté, stirring occasionally, for an additional 7-10 minutes until onion is soft.
  • Add the tomatoes and stir well. Sauté, stirring occasionally, for 10-15 minutes and the liquids are reduced by about half.
  • Rinse the salted eggplant and drain well.
  • Add all the remaining ingredients (including eggplant) to the pot, stir well, and cover. Cook for 15-20 minutes until eggplant is well-cooked and the sauce is the consistency that you like (you may want to remove the cover for the last 5 minutes to reduce the sauce a bit). Remove bay leaves.
  • Serve with polenta rounds or squares (or some other favorite method of prepared polenta), drizzled with a little crema. Enjoy!

This dish is kinda seasonal, when you want fresh eggplant. We used to have this when the eggplant was just coming off. It is something you wate for just like fried green tomatoes.

1 large eggplant
2 small cans tomato sauce
1/4 c green onion thinly sliced
1/4 c mild green chilies drained
8 black olives sliced
2 clove garlic minced
1/2 tsp cumin
8 oz jack cheese grated
1/2 c sour crean
basil leaves for garnish

Steps:

  • 1. Roll eggplant in egg and flour. Fry in butter or put in oven until tender.
  • 2. In a 1 1/2 quart saucepan combine tomato sauce, green onions, chilies, garlic, and cumin, and let simmer 10 minutes.
  • 3. Put eggplant on bottom of a 9 by 13 baking dish and spread sauce mix on top.
  • 4. Put cheese on top of sauce and bake at 350 degrees until hot and bubbly about 25 minutes.
  • 5. Serve with sour cream and garnish with black olives and basil leaves.

1 1 1/2 - 2 pound purple eggplant
3 cups of prepared salsa
1/2 pound monteray jack cheese shredded
1/2 pound chedder cheese shredded
1 large vidalia onion thinly sliced
1 medium pablemo pepper roasted, peeled and chopped
1 medium green bell pepper chopped
1 medium red bell pepper chopped
flour
bread crumbs
egg
oil for frying
1 t. cilantro
ceyanne pepper to taste
garlic powder to taste
onion powder to taste
1 egg

Steps:

  • Pre-heat oven to 325 degrees. Peel and slice the eggplant into 1/2 inch slices. Dredge in seasoned w/spices flour, egg and bread crumbs. Fry in frying pan untill golden brown turning to each side. Oil bottom of 9 x 13 pan the deeper the pan the better. Make layers of eggplant, vegtables, salsa and cheese untill the pan is full. Bake for 40-45 minutes at 325 degrees.
