A mildly hot, and very delicious, Mexican sausage. Excellent for breakfast, lunch, or dinner. Can be made into patties and cooked in a skillet, or stuffed into natural hog or collagen casings and grilled at your next family gathering.

2 pounds boneless pork butt (shoulder), cut into 3/4-inch pieces
1 ½ tablespoons crushed Aleppo peppers
1 ½ tablespoons chili powder
4 cloves garlic, minced
2 teaspoons salt
1 teaspoon freshly ground black pepper
½ teaspoon dried oregano
½ teaspoon ground cumin
¼ teaspoon ground cloves
¼ teaspoon ground coriander
½ cup distilled white vinegar
2 tablespoons water
1 teaspoon vegetable oil

Steps:

  • Place the pork, Aleppo pepper, chili powder, garlic, salt, black pepper, oregano, cumin, cloves, and coriander into a bowl, and lightly toss the pork with the seasonings until thoroughly blended. Cover the bowl, and refrigerate the meat, your meat grinder's head assembly, and grinder hopper for 1 hour.
  • Fill a large mixing bowl with ice cubes, and place a smaller metal bowl in the ice cubes to catch the ground meat. Assemble the chilled meat grinder, and grind the pork and seasonings using a coarse cutting plate. Return ground meat to refrigerator for 30 minutes. Lightly stir the ground pork with the vinegar and water until thoroughly mixed, form into patties, and refrigerate overnight, covered, to let flavors develop.
  • Heat vegetable oil in a heavy skillet over medium-low heat, and pan-fry the patties until browned and no longer pink in the middle, 5 to 8 minutes per side.

When I first got married my husband didn't like the chili I made (my mom's recipe), so I have changed it until I found what he likes. Now he LOVES it. About and two hours before it's done, I add cheese hot dogs to the crock pot--it does change the taste slightly, but he loves to eat chili hot dogs on butter poppy seed rolls. But if you don't like hot dogs, don't add them. I also use 1 can each of light red and dark red kidney beans for color, but you can use two cans of the same if you want. ENJOY!

1 lb chorizo sausage, casing removed
1 (10 3/4 ounce) can condensed tomato soup
1 (15 ounce) can diced tomatoes with mild green chilies
1 (15 ounce) can dark red kidney beans, drained
1 (15 ounce) can red kidney beans, drained
1/2 cup onion, diced
1/2 cup mushroom, chopped
1 tablespoon garlic, minced
1 tablespoon parsley
1 tablespoon basil
1/8 teaspoon cayenne pepper

Steps:

  • cook chorizo breaking it up. drain. add all to crockpot cook at least 6 hours, stirring every so often.
  • optional: two hours until done add hotdogs( your choice) serve with favorite rolls.

1 package (1 pound) hot dogs
2 cans (15 ounces each) chili without beans
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (4 ounces) chopped green chiles
10 hot dog buns, split
1 medium onion, chopped
1 to 2 cups corn chips, coarsely crushed
1 cup shredded cheddar cheese

Steps:

  • Place hot dogs in a 3-qt. slow cooker. In a large bowl, combine the chili, soup and green chiles; pour over hot dogs. Cover and cook on low for 4-5 hours. , Serve hot dogs in buns; top with chili mixture, onion, corn chips and cheese.

1 finely chopped small onion
1 can (15 ounces) tomato puree
1/2 cup ketchup
2 tablespoons chili powder

1 tablespoon white vinegar

1 teaspoon hot pepper sauce
1 teaspoon onion salt

1 package (12 ounces) hot dog buns, split
Finely chopped red onion

Number Of Ingredients 10

1 large chopped onion
1 1/4 lb ground beef
10 oz pork chorizo
2 Tbsp mesquite seasoning
1 can(s) chili beans pureed
1 c beef stock
1 tsp cumin
1/4 c ketchup
1 tsp cinnamon
1-2 dash(es) sriracha sauce

Steps:

  • 1. In a large saute pan saute onions till opaque Add chorizo and ground beef with 2 tablespoon mesquite seasoning. Cook breaking up til no longer pink. Drain.
  • 2. Add back to pan with beef stock, ketchup,cumin and cinnamon. Stir. Puree whole can of beans, add to meat mix, stir and taste for seasoning. Then add your extra heat. I used one dash of sriracha. That was just enough heat for me, I like a little on the sweet side with just a touch of heat.
  • 3. Stir and simmer for about 30min. Serve on Your favorite hotdog with side of chopped onions and mustard. Make it more mexican and serve with mexican blend cheese. Best served on soft hog dog bun and if Your lucky to get sahlen's hot dogs!
