These are very nice with a side of spanish rice and some sliced tomatoes and avocados. We sometimes have them on toasted buns with monterey jack cheese for really good sandwich.

4 boneless skinless chicken breasts, small
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon cayenne
1 tablespoon vegetable oil
1/3 cup mayonnaise
3/4 teaspoon lime zest
2 tablespoons chunky salsa
1/8 teaspoon fresh ground pepper

Steps:

  • Pound chicken between wax paper to 1/4 inch thick. In small cup, combine chili powder, salt, cumin, and cayenne. Sprinkle over both sides of chicken.
  • In large skillet, heat oil over medium-high heat. Cook chicken 2 to 3 minutes per side, until cooked through; set aside.
  • Combine mayonnaise, lime peel, salsa and pepper.
  • Serve mayonnaise mixture on the side as a dipping sauce for the cutlets.

4 skinless, boneless chicken cutlets (about 1 pound in all), pounded to 1/4-inch thickness
Juice of 2 limes
2 teaspoons soy sauce
1 teaspoon Maggi sauce
1/3 cup olive oil
Lime wedges for garnish

Steps:

  • Place the chicken in a bowl or shallow dish, add the lime juice, soy sauce, and Maggi sauce, and turn to moisten evenly with the marinade. Cover the dish and refrigerate for 1 hour, turning the chicken occasionally.
  • Remove the chicken from the marinade, drain well, and blot dry with paper towels. Reserve the marinade.
  • In a skillet large enough to hold the cutlets in one layer, heat the oil over medium-high heat until rippling. Add the chicken and sauté, turning once, for about 3 minutes per side, or until just cooked through. If desired, transfer the cutlets to a heated platter, add the marinating liquid to the skillet, and boil over high heat for 1 minute. Pour over the chicken. Serve at once, with lime wedges.

4 skinless, boneless chicken breasts
cooking spray
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin
1 cup salsa
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste; place in hot skillet. Cook until brown on both sides and no longer pink, 10 to 15 minutes.
  • Transfer chicken to 9x13-inch baking dish or casserole dish, top with salsa and cheese, and bake in preheated oven until cheese is bubbly and starts to brown, 15 to 20 minutes.
