2 1/2 lbs chuck roast, trimmed of fat and cut in bite-sized pieces
4 tablespoons flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 -3 jalapeno peppers, seeded and minced
3 cups beef stock
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F.
  • Toss meat pieces with flour, then brown quickly in oil in an ovenproof Dutch oven.
  • Add onion, garlic, jalapeño, beef stock, tomato paste, cumin and chili powder; bring to a simmer on the stove.
  • Cover Dutch oven and place in the preheated oven, baking for about 2 to 2-1/2 hours, until meat is extremely tender.
  • Serve as is, or on rice, or folded into warm tortillas.

1 pound beef stew meat, cut into 1-inch pieces
2 tablespoons all-purpose flour
1 tablespoon canola oil
1 (15 ounce) can black beans, rinsed and drained
2 medium carrots, peeled and chopped
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (14.5 ounce) can reduced-sodium beef broth
1 ½ teaspoons chili powder
1 teaspoon ground cumin

¼ teaspoon ground black pepper
1 cup frozen whole kernel corn
¼ cup Chopped avocado, cilantro, and/or crushed red pepper

Steps:

  • Line a 5- to 6-quart slow cooker with a Reynolds® Slow Cooker Liner.
  • Coat the beef with flour. Cook and stir beef in a large skillet in hot oil over medium-high heat about 5 minutes or until browned.
  • Place the beans, carrots, onion, and garlic into the prepared slow cooker liner. Top with the beef. Add tomatoes, broth, chili powder, cumin, salt, and pepper.
  • Cover and cook on low 7 hours or until the beef is fork-tender.
  • Stir in the corn gently with a rubber spatula. Cover and cook 10 minutes more or until heated through. If desired, serve with avocado, cilantro, and/or crushed red pepper.

This dish is a Chili con Carne made with stew meat rather than ground chuck. It is pretty enough to entertain with and made with top round rather than bottom, so it's lean enough to feel good about eating.

6 ancho chiles
2 cups beef stock
Vegetable or olive oil, for drizzling
4 ounces smoky good quality bacon, chopped
2 pounds beef top round, cut into bite-size chunks
Kosher salt and freshly ground black pepper
2 medium onions, finely chopped
4 large cloves garlic, finely chopped or grated
1 tablespoon ground cumin
1 tablespoon ground coriander
About 2 teaspoons unsweetened cocoa
About 1/2 teaspoon ground cinnamon
About 1/2 teaspoon ground cloves
One 12-ounce bottle Mexican-style lager beer (recommended: Negra Modelo)
One 14-ounce can whole, diced or crushed fire-roasted tomatoes
1 tablespoon honey
Juice of 1 lime
Sour cream
Fresh cilantro leaves
Warm or charred tortillas or rice
Black beans

Steps:

  • Preheat the oven to 275 degrees F.
  • Stem and seed the chiles and place in a pot with beef stock over high heat. Bring to a boil, then reduce the heat and simmer gently to reconstitute (see Cook's Note).
  • Heat a large Dutch oven with a drizzle of oil over medium-high heat, and add the bacon to the pan and stir until crisp. Remove with a slotted spoon. Pat the meat dry, season with a little salt and lots of black pepper, then add to the bacon drippings and brown evenly to caramelize the meat. Brown the meat in 2 batches if necessary in order not to crowd the pan. Remove the meat and add another drizzle of oil, if necessary. Add the onions, and garlic and soften a few minutes. Stir in the cumin, coriander, cocoa, cinnamon, and cloves, and stir to toast the spices and combine. Deglaze the pan with beer and evaporate.
  • In a food processor, puree the softened peppers and stock with tomatoes. Pour into the pot, slide the browned meat and bacon back in, and drizzle in the honey. Cover the pot and transfer to the oven for 2 1/2 hours or until the meat falls apart with a fork. Cool and store for a make-ahead meal. Reheat over medium heat and add the lime juice just before serving.
  • Garnish with sour cream and fresh cilantro leaves, and serve with tortillas or rice and warm black beans.

This is a tart and hearty stew with a southwestern flavor. I made it up after visiting a local Texas restaurant which declined to give me their recipe for the delicious stew I ate there. Although mine tastes similar to theirs, it is much more tart (which I like) and hot (which I love!) Check it out if you like something a bit different. You won't be disappointed.

1 -1 1/2 lb lean ground beef
2 -4 tablespoons yellow onions, finely minced
1 teaspoon garlic, crushed
1 -2 tablespoon bacon grease (olive oil may be substituted)

1 (4 -7 ounce) can green chilies, chopped
1 (10 ounce) can Rotel Tomatoes (or tomato and chili mix)
1 (6 ounce) can tomato paste

2 to 2 1/2 lb beef stew meat (or beef chuck roast or beef bottom roast, cut into 1-inch pieces)
4 tsp vegetable oil
1 tsp salt taste
1 tsp black pepper
1 large white onion, peeled and cut into chunks
1 large bell pepper, deseeded and chopped (any color - green, orange, yellow or red)
1 or 2 large fresh jalapeño peppers, deseeded and diced
5 clove garlic, minced
1 1/2 tsp ground cumin
3/4 tsp chili powder (or to taste - using sparingly, as it increases in heat over time)
3/4 tsp dried oregano (use mexican oregano, if you can find it)
4 Tbsp all-purpose flour
1 3/4 c low-sodium chicken broth
2 large tomatoes, diced
2 bay leaves
FOR SERVING (OPTIONAL SIDES AND GARNISHES)
1 pkg tortillas (corn or flour, your choice)
1 c crumbled queso cotija (or other mexican cheese)
1/2 c chopped cilantro
3 stalk(s) green onion (scallions), sliced

Steps:

  • 1. In a large skillet, heat 2 teaspoons oil over high heat. Add half of the meat in a single layer, season with salt and pepper, and sear on one side (about 5 minutes).
  • 2. Transfer to a 5- to 6-quart slow cooker along with remaining un-seared meat.
  • 3. In same skillet, add 2 more teaspoons oil, onion, bell pepper, jalapeño, and garlic over medium-high heat, stirring and scraping up browned bits with a wooden spoon, until vegetables are tender, 5 minutes.
  • 4. Add cumin, chili powder, oregano, and flour; cook 1 minute continuously stirring.
  • 5. Slowly pour broth into skillet, stirring until liquid is smooth, scraping up any bits stuck to the pan. Simmer 2 minutes.
  • 6. Transfer mixture to slow cooker, along with tomatoes and bay leaves. Taste, and add more salt and pepper, if desired.
  • 7. Cover and cook on Low heat setting for 8 to 10 hours. Alternatively, this can be prepared on a stovetop in a Dutch oven simmering over low heat for 2 to 2 1/2 hours. Or it can be baked in an oven at 325°F for 3 to 4 hours.
  • 8. Served the stew immediately, with a few corn tortillas for dipping or rolling in. Garnish servings (as desired) with crumbled queso cotija, chopped cilantro, or chopped green onions, if desired.

3 large red potatoes, quartered
2 large carrots, peeled and sliced

Steps:

  • Pre-heat electric pressure cooker; add 1 tablespoon oil to the pot.
  • Mix flour, paprika, salt, pepper, cumin, oregano, and garlic powder together in a mixing bowl. Toss cubed beef with flour mixture. Brown beef cubes in 3 batches in preheated cooker about 8 minutes per batch, adding an additional tablespoon of oil after each batch. As beef browns, transfer it to a dish.
  • Add minced garlic and 1 can of Hunt's® diced tomatoes to the empty pot; scrape and stir to release the browned bits from the bottom. Add beef broth and bay leaves; transfer browned beef back to the pot. Seal pressure cooker, close the vent, and set the timer to cook at pressure for 10 minutes. At the end of 10 minutes, allow pressure to naturally release.
  • Once the pressure has fully released, open lid and add the remaining can of Hunt's® diced tomatoes, crushed red pepper flakes, quartered potatoes, carrots, corn, and onion. Close the lid and vent. Cook under pressure for an additional 15 minutes.

2 can(s) diced tomatoes with green chilies, (rotel) medium or hot
1 Tbsp chopped garlic
1 large onion, chopped
2 large potatoes, peeled and cut into 1 1/2-inch pieces

3 can(s) diced tomatoes
1 bottle negra modelo (mexican lager style beer) or guinness
2 can(s) green chilies, 4 oz. cans
3/4 c fire roasted jalapenos, finely chopped
2 Tbsp ground cumin
1 Tbsp ground coriander seed
1 1/2 Tbsp chili powder
1 1/2 Tbsp badia's complete seasoning
4 Tbsp adobo sauce
3 - 5 medium chipotle peppers in adobo sauce
1 medium onion, chopped
5 cloves of garlic, chopped
2 medium green bell peppers, diced
3 Tbsp cilantro, dried
2 medium serrano chiles, seeds removed
1/4 c goya's sofrito, optional
flour for thickening if necessary
FOR CARNE GUISADA TACOS
2 dozen flour tortillas
fresh shredded blend of mexican cheeses
cilantro, fresh

  • 1. Gather your ingredients.
  • 2. Rinse off the beef cubes and pat dry. Place flour in a bag or bowl and coat the beef cubes. Next, heat your oil in a pan and brown the meat for about 5 minutes and then place in your crockpot.
  • 3. Next, saute your onions, garlic and bell peppers. Pour your bottle of beer over the meat in the crock pot and then add your sauteed vegetable. Next, add the rest of your ingredients. No need to cut up the chipotle or serranos as they break down while cooking. Cook this on low and slow for 8 to 10 hours. Serve in warm flour tortillas with shredded cheese and a small dollop of sour cream if desired or a squeeze of lime and fresh cilantro. (This is a thick stew, so if it's not thick enough add a mixture of flour and water.)
  • 4. SUPREME TACO: Alright, now if you really want this Carne Guisada to go along way you can make a Supreme Taco and the base starts with refried beans.
  • 5. SUPREME TACO: Heat the beans in a skillet until nice and hot. Then, spread the beans out on the flour tortilla.
  • 6. SUPREME TACO: Add your Carne Guisada on top of beans, maybe 4 pieces of meat and a generous amount of Mexican cheese blend. Next, add sour cream and some fresh chopped cilantro. Now, if you are going to make this for a larger crowd make up the tacos yourself and wrap then in a square piece of tinfoil. You can get a nice big box of already cut square tinfoil at Sam's Club. When you wrap them up the cheese is going to melt and they are just wonderful.
  • 7. 11-26-13 ---Made this for Girl's Night In which was perfect for the chilli night we had here in Ohio. I served it with some Mexican rice, warmed tortillas and a non-alcoholic Sangria. We had a broccoli salad before and apple dumplings w/vanilla ice cream for dessert.
  • 8. 10/20/14 --- Cooked up my Carne Guisada in my Ninja as I had to get it done faster than I usually do with a 8 to 10 hr cook in the traditional crock-pot. I was able to cook it up in 4 1/2 hours. I served it with Mexican rice, cheesy dip & chips for dinner.

  • Place sweet potatoes in large saucepan; cover with water. Bring to a boil; cook 12 to 15 minutes or until tender. Drain, reserving 1/4 cup cooking liquid. Return potatoes and reserved cooking liquid to saucepan; add butter, if desired, chipotle pepper, adobo sauce, salt and ancho chile pepper. Mash potatoes until just blended and slightly chunky.
  • Serve stew over sweet potatoes.

This is a great crockpot recipe to serve on a cold winter day. I serve it with a little grated cheese to put on top and cornbread. This will put some pep in your step!!!

1 1/2 lbs beef stew meat, cut into 1 inch pieces
2 tablespoons flour
1 tablespoon vegetable oil
1 cup onion, coarsley chopped
1 (15 ounce) can pinto beans, drained
1 (16 ounce) can whole kernel corn, drained
1 (10 3/4 ounce) can beef consomme or 1 (10 3/4 ounce) can beef broth
1 cup chunky salsa (I use Pace)
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon garlic powder or 2 cloves minced garlic

Steps:

  • Dredge the beef with the flour.
  • Heat the oil in a skillet over medium high heat and brown beef.
  • Stir often.
  • Place beef, onion, beans, corn, consome, salsa, chili powder, cumin and garlic powder in 3 1/2 quart slow cooker.
  • Cover and cook on LOW for 8-10 hours or until beef is done.
  • You may also cook it on high for 4-5 hours if you are pressed for time.

I had the opportunity to live near Mexico. I learned to cook many dishes from friends. This is just one type of Puchero. The flavors are more intense if you refrigerate,then heat.Two methods of cooking. For large groups the slow method. For small groups, cut in half or thirds and put all in a pressure cooker. Dinner in less than an hour for fast method.

2 lbs beef stew meat
2 lbs veal, cut up
1 veal knuckle, bone
2 teaspoons salt
2 teaspoons cumin
2 teaspoons chili peppers
1 (28 ounce) can chopped tomatoes with juice
1 (28 ounce) can yellow hominy, with juice
2 tablespoons white sugar or 2 tablespoons sugar substitute
6 ears corn, each cob cut into 3 pieces
6 yellow onions, peeled
1 lb fresh green beans, end cuts, kept whole
3 turnips, peeled, kept whole
6 pattypan squash or 6 crookneck yellow squash, vine end cut off
2 large green chili peppers, whole
2 hard green apples, peeled and sliced
1 fresh lemon, cut in half

Steps:

  • Slow method for Large Groups:.
  • In large stockpot,add beef, veal and knuckle bone. (ask butcher to save you one).
  • Fill with cold water just to cover, no more.
  • Add salt, cumin and chili powder.
  • Cover and cook to a boil for 10 minutes.
  • Skim the white scum from water.
  • Add tomatoes and hominy to stockpot with juices. Add sugar. Stir.
  • In old clean pillowcase or cheescloth bag, layer the vegetables in the order given, starting with corn ending with chili peppers.
  • Take one lemon half, squeeze the juice out, as much as you can get, place the lemon cut side down.Add the apple slices and squeeze juice from other lemon half.Pul the lemon half in the sack. Close the sack with twist tie or string.
  • Simmer on low heat for 3 hours.
  • Dump out the vegies on a large platter and cut in serving pieces.
  • Serve meat and juice in a large tureen.
  • Serve with tortillas, mexican hot chocolate or beer.
  • Fast method:.
  • Place everything in a pressure cooker except the apple slices. Cook at 15 pounds pressure for 20 minutes. Take off burner and let steam decrease. After pressure is gone, release lid, and spoon out vegetables on platter, serve meat and broth in a tureen.

6 tablespoons vegetable oil, divided
2 large onions, cut into 1/2 inch pieces
8 cloves garlic, minced
1 jalapeno pepper, minced with seeds
3 tablespoons tomato paste
1 1/2 cups red wine
2 cups beef stock
2 cups chicken stock
1 (28 ounce) can Italian plum tomatoes, undrained
1 smoked ham hock
1/2 teaspoon cayenne pepper
11 ounces smoked kielbasa, cut into 1 inch pieces
2 red bell peppers or 2 yellow bell peppers, cored,seeded,and cut into 1 1/2 inch triangles
2 poblano chiles, cored,seeded,and cut into 1 1/2 inch triangles
3 zucchini, cut into 1 inch thick rounds
minced fresh cilantro
3 1/2 teaspoons ground cumin

Steps:

  • For seasonings; In a small bowl, combine cumin, coriander, chili powder, oregano, thyme, allspice, cloves, and cinnamon.
  • Store in a air tight container.
  • Makes about 1/2 c.
  • In a large soup pot over medium-high heat, place beans and over with water.
  • Bring just to a boil; remove from heat, cover, and let stand 1 hour.
  • Drain and rinse beans; set aside.
  • Place beef pieces in a large bowl; season with salt and pepper.
  • Add 2 teaspoons Santa fe seasoning; toss well.
  • Add flour and toss to coat.
  • In a large pot or a dutch oven over medium-high heat, heat 4 tablespons vegetable oil.
  • Add beef piecs in batches and brown well; using a slotted spoon, transfer to a bowl.
  • Add 2 tablespoons vegetable oil; reduce heat to medium.
  • Add onions and tomato paste; stir 2 minute.
  • Add red wine and bring to a boil, scraping up browned bits.
  • Add beef and chicken stocks, tomatoes, ham hock, and cayene pepper; reduce heat to low and bring to simmer.
  • Add beef pieces; cover partially and simmer 30 minutes, stirring occasionally.
  • Add beans, cover partially, and simmer another 1 hour.
  • Uncover, add remaining Santa fe seasoning, and simmer an additional 45 minutes or until beef pieces and beans are tender.
  • Stirring occasionally.
  • Degrease stew if necessary.
  • Remove ham hock; trim off fat.
  • Cut ham into 1/2-inch pieces and add back into stew.
  • In a large frying pan over medium heat, add kielbasa sausage and cook 2 minutes per side.
  • Tranfer to a plate.
  • Add bell peppers, poblano chilies, and zucchini; saute another 5 minutes or until crisp-tender.
  • Mix sausage and vegetables into stew; simmer 5 minutes longer or until just tender.
  • Sprinkle with cilantro.
  • Ladle into soup bowls and serve with bread.
