1 lb lean (at least 80%) ground beef
1 cup diced red bell pepper (1 large)
1 cup diced onion
1 package (1 oz) Old El Paso™ taco seasoning mix
1/4 cup water
1/4 cup milk
1 egg
2 cups shredded 4-cheese Mexican cheese blend (8 oz)
4 cups frozen Tater Tots™ potatoes (from 32-oz bag)
Fresh toppings: diced tomatoes, guacamole, sour cream, cilantro

Steps:

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
  • In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. Return beef mixture to pan; add taco seasoning mix and water. Cook and stir over medium-high heat 1 to 2 minutes or until well mixed. Remove from heat. Cool 2 minutes.
  • Meanwhile, in large bowl, mix milk and egg. Stir in cheese. Stir beef mixture into egg mixture, then pour into pie plate. Spread evenly.
  • Top beef mixture with Tater Tots™. Bake 37 to 39 minutes or until mixture is set and Tater Tots™ are browned. Cool 10 minutes. Top with fresh toppings, as desired.

A shepherd's pie with a real twist - top a chilli con carne style filling with cheesy mash and tortilla chips

1 tbsp cumin seed
300g jar hot salsa
500g pack lean minced beef
1 beef stock cube
400g can red kidney beans
1kg potato , cut into chunks
50g butter
100g mature cheddar , grated
50g cheese-flavoured tortilla chip

Steps:

  • Heat oven to 180C/160C fan/gas 4. Warm the cumin seeds in a large pan and toast for a few secs. Tip the salsa into the pan, then stir in the mince, breaking it up with a wooden spoon. Crumble in the stock cube, tip in the beans with their juice and add a little less than a can of water. Season, then part-cover and simmer for 40 mins, stirring occasionally. If there is still a lot of liquid after 30 mins, remove the lid completely and allow it to reduce a little until thickened.
  • Meanwhile, boil the potatoes until tender, then drain and mash with the butter and seasoning. Spoon the mince into an ovenproof dish and top with the potato, smoothing to cover the meat completely. Mix the cheese with the tortillas, then scatter on top of the pie and bake for 10 mins to melt the cheese - take care that the tortillas don't burn.

2 lbs ground pork or 2 lbs ground turkey
1/2 cup chopped onion
1/4 cup chopped green chili
2 teaspoons chili powder
8 ounces tomato sauce
1/2 teaspoon garlic powder
8 ounces cheddar cheese, shredded
1/2 cup sour cream
1 egg white, beaten stiff

Steps:

  • Heat oven to 375°F.
  • Cook ground beef. Drain.
  • Add to the cooked ground beef: onion, green chiles, chili powder, tomato sauce, and garlic powder. Simmer 8-10 minutes.
  • Grease an 8 x 8 baking pan. Put meat mixture in pan.
  • Beat together cheese, sour cream and egg white. Put on top of meat mixture.
  • Bake 25-30 minutes.

3/4 cup light sour cream

1 (7 ounce) package uncooked spaghetti
1/2 cup shredded monterey jack cheese

  • Cook pasta 8 minutes, drain.
  • Mix pasta shell ingredients and toss with pasta.

1 tablespoon canola oil or 1 tablespoon light olive oil
2/3 cup potato, peeled and diced to 1/2-inch
1 cup yellow onion, peeled and cut to 1/2-inch
1/3 cup green bell pepper, diced to 1/2-inch
1/3 cup red bell pepper, diced to 1/2-inch
1/2 cup black beans, drained and rinsed
1/2 cup frozen whole sweet kernel corn
1/4 cup green onion top, thinly snipped
2 tablespoons cilantro leaves, minced
2 fresh large garlic cloves, minced
3 tablespoons all-purpose flour
2 cups red enchilada sauce
2 teaspoons lime juice
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon dried Mexican oregano
salt & freshly cracked pepper, to taste
2 (12 ounce) cans chunk roast beef, drained
2/3 cup colby-monterey jack cheese, shredded

Steps:

  • PREHEAT oven to 375°F; SPRAY a 2 quart deep baking dish with non-stick cooking spray and set aside; CUT potato, onion, bell peppers and garlic to specifications; THAW 1/2 cup frozen corn; KNEAD and juice enough limes to yield a total of 2 tablespoons juice if using fresh (bottled lime juice is okay); SHRED 1 cup Colby-Jack cheese; DRAIN two 12-ounce cans chunk roast beef.
  • HEAT 1 tablespoon oil in a nonstick 2 quart skillet over medium heat; ADD the potatoes and cook, scraping and stirring often, until softened; ADD the yellow onion and bell peppers; COOK until softened; STIR in the black beans, corn, green onion, cilantro and garlic; COOK for 1 minute longer.
  • SPRINKLE 3 tablespoons flour over mixture; TOSS mixture well until all flour has absorbed; STIR in 2 cups enchilada sauce, 2 teaspoons lime juice, 1 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon oregano.
  • BRING to a gentle boil; REDUCE the heat and simmer until fully thickened, about 5 minutes; SEASON to taste with salt (if needed) and freshly cracked black pepper; REMOVE from heat; FOLD in the drained roast beef and 2/3 cup of the cheese (don't over-stir!).
  • POUR meat mixture levelly into prepared baking dish; PLACE baking dish onto a baking sheet.
  • INTO a medium bowl, add the cornbread mix, 1 egg, 1/3 cup water, 4 teaspoons lime juice, and 1/8 teaspoon table salt; STIR just until blended; SPREAD batter carefully and evenly over the meat mixture; TOP with the remaining cheese.
  • BAKE dish on baking sheet for 15 minutes (keep oven ON); REMOVE tray with pie; SPLASH with 8-12 dashes red hot sauce; DECORATE with sliced black olives or snipped green onion tops (or both, or whatever you find festive!).

1 large onion, chopped
2 large tomatoes, chopped
1 (10 ounce) package frozen whole kernel corn

2 beef bouillon cubes or 2 chicken bouillon cubes
1 cup hot water
1 1/2 cups yellow cornmeal
3 1/2 cups water
1/4 teaspoon salt (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Heat a skillet over medium heat. Add beef and saute for about 5 minutes.
  • Pour beef into a paper towel lined strainer and drain well.
  • Return beef to skillet. Add onions and cook until onions are translucent, about 3 minutes.
  • Dissolve bouillon cube in 1 cup of hot water. Add to skillet, along with tomatoes, corn, green pepper, chili powder, and Worcestershire sauce. Simmer, uncovered, 20 minutes.
  • Combine cornmeal, 3 1/2 cups water, salt, and margarine in a saucepan and bring to a boil, stirring constantly. Cook until thickened, about 3 minutes.
  • Place beef mixture in 2-quart baking dish. Spoon cornmeal mixture over beef, spreading to cover.

1 onion, finely chopped
500 g minced beef
425 g chopped tomatoes
420 g kidney beans, drained & rinsed
420 g corn kernels, drained
140 g tomato paste
1 (35 g) packet burrito seasoning mix
4 burrito-size flour tortillas
1/2 cup grated cheese
1/2 cup sour cream
1 avocado, diced
6 cherry tomatoes, halved
1 spring onion, finely chopped

Steps:

  • Heat oil in large saucepan. Saute onion until tender. Add beef. Brown well.
  • Stir in tomatoes, beans, corn and paste. Reduce heat and simmer for 10 minutes. Add seasoning mix and simmer for further 2 minutes to thicken slightly.
  • Spray a 20cm pie dish with oil and lay torillas over base and sides of dish, overlapping each one to form a shell.
  • Bake in a moderate oven (180c) for 10-15 minutes or until golden and firm.
