1 (16 ounce) package tri-color rotini pasta
1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can Mexican-style corn, drained
1 (4 ounce) can chopped green chilies
½ cup chopped red bell pepper
½ cup Italian-style salad dressing, or more to taste
½ cup shredded Mexican cheese blend
3 green onions, thinly sliced
⅓ cup minced fresh cilantro
1 slice onion, minced
2 tablespoons taco seasoning mix
½ lime, juiced

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Mix black beans, corn, green chilies, red bell pepper, Italian dressing, Mexican cheese, green onions, cilantro, onion, taco seasoning, and lime juice together in a bowl. Add rotini and lightly stir to combine.

⅔ cup chopped mango
½ cup matchstick-cut jicama
½ cup black beans
½ cup corn
½ cup shredded pepperjack cheese

⅓ cup chopped fresh parsley
½ cup lime juice
2 teaspoons white sugar
salt to taste
1 pinch ground black pepper

Steps:

  • Combine lettuce, grapefruit sections, mango, jicama, black beans, corn, pepperjack cheese, cilantro, and parsley in a large bowl.

3 tablespoons ranch dressing
1 dash dried ground chipotle chile pepper
1 teaspoon extra virgin olive oil
1/2 cup canned corn, drained
1/4 cup red pepper, cut into strips
1/4 cup red onion, cut into thin strips
1/4 teaspoon minced garlic
1/8 teaspoon chili powder
3 cups mixed salad greens
1 boneless skinless chicken breast, grilled

Steps:

  • Mix dressing and chipotle pepper together until combined. Refrigerate until ready to use.
  • Heat oil in skillet.
  • Add corn, red pepper, onions, garlic and chili powder; saute until vegetables are crisp-tender.
  • Place salad greens on plate, top with vegetable mixture, then grilled chicken breast, sliced into strips.
  • Pour on the dressing and enjoy!

1 large avocado, mashed
1/2 cup sour cream
2 tablespoons Italian dressing
1 teaspoon finely chopped onion
1 teaspoon chili powder
1/4 teaspoon salt
2 cups lettuce, shredded (roughly one head)
2 fresh tomatoes, chopped
1 -2 tablespoon chopped green chili (okay out of a can, but pat dry between papertowels)
1/2 cup chopped black olives
1 cup grated monterey jack cheese (can substitute for cheddar or pepperjack cheese)
1/2 cup crushed plain Doritos (my favorite flavor- Pepperjack, Okay to use Cool Ranch or Plain tortilla chips)
1/4 cup drained picante sauce

Steps:

  • Combine& mix all the dressing ingredients and set aside.
  • In large bowl, toss lettuce, tomatoes, chillies, and olives.
  • To serve, layer in the following order: 1/2 lettuce mixture, 1/2 dressing, 1/2 picante, 1/2 cheese, 1/2 chips.
  • Repeat the step above layering the remainder ingredients in the same order.
  • This is one of those recipes that can be changed up by adding other ingredients such as beans and using different types of cheeses.

1 (15 1/2 ounce) can black beans, rinsed
1 cup frozen corn, thawed
1/2 cup chopped red pepper
2 green onions, thinly sliced

1 tablespoon taco seasoning mix
1 tablespoon fresh lime juice

1/2 cup mayonnaise, Hellmans, Best Foods
1/4 cup green onion
2 tablespoons chili sauce
2 teaspoons cider vinegar
1 teaspoon onion salt
1/2 teaspoon chili powder
4 drops Tabasco sauce
1 head iceberg lettuce, chopped
1 (14 1/2 ounce) can corn, rinsed & drained
1 (6 ounce) can black olives, sliced, rinsed & drained
1 (14 1/2 ounce) can kidney beans, rinsed & drained
1 (14 1/2 ounce) can black beans, rinsed & drained

Steps:

  • For the dressing: Combine mayo, green onion, chili sauce, cider vinegar, onion salt, chili powder and tabasco in a small bowl. Whisk to combine. Then refrigerate.

1 teaspoon(s) chili powder
1 clove(s) garlic
1/3 cup(s) extra-virgin olive oil
2 tablespoon(s) grated parmesan cheese
a pinch(es) of salt and black pepper
2 cup(s) shredded cooked chicken (i use rotisserie or lefted over grilled chicken)
1 package(s) taco seasoning
2 package(s) or heads romaine lettuce, chopped
1 large tomato, chopped
1/2 cup(s) shredded mexican chesse blend
10 - tortilla chips, coarsley crushed

Steps:

  • Place eggs, lemon juice, chili powder and garlic into a bowl or food processor; process 30 seconds or until combined. with processor running, add oil in slow, steady stream until well combined. Add Parmesan and a pinch of salt and pepper; process until combined. Set aside!
  • In medium bowl, combine chicken and taco seasoning.

3 Tbsp lime or lemon juice
3 Tbsp olive oil
1-3/4 tsp sugar
3/4 tsp salt
1/4 tsp cayenne pepper
1 cup peeled, jicama matchsticks
5 radishes, sliced
1/2 cucumber, sliced
2 ripe avocados, halved, pitted and peeled
1 cup mandarin orange segments
6 cups mixed salad greens

Steps:

  • In bowl, combine juice, oil, sugar, salt, and cayenne pepper.
  • In medium bowl, combine jicama, radishes, cucumber, and 2 Tbsp. juice mix. Cut 1 avocado into 1/2" pieces. Stir into jicama mix. Top with orange segments. Let stand 10 minutes. Thinly slice remaining avocado.
  • In large serving bowl, toss greens with remaining juice mix. Top with jicama mix. Garnish with avocado slices.

2 cups cheddar cheese soup sharp, shredded
1 can chili beans without meat, 1 pound can, undrained
1/2 cup green onion, sliced
1/2 cup Catalina salad dressing, commercial
1 package corn chip, 11 1/2 ounce package

Steps:

  • In large bowl combine all ingredients (commercial Catalina dressing may be substituted with Catalina Dressing recipe in this cookbook) but corn chips toss. Just before serving, toss in corn chips.
