This recipe is anything but regular old meatloaf! Everyone will love this moist version made in the slow cooker, with milk, mushrooms, and a little sage for extra flavor.

2 eggs
¾ cup milk
⅔ cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
½ teaspoon rubbed sage
½ cup sliced fresh mushrooms
1 ½ pounds ground beef
¼ cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon Worcestershire sauce

Steps:

  • Combine eggs, milk, bread crumbs, onion, salt, sage, and mushrooms in a large bowl. Crumble ground beef over mixture and stir well to combine. Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low until a meat thermometer reads 160 degrees F (71 degrees C), 5 to 6 hours.
  • Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl; spoon sauce over meat loaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.

15-Minute Meatloaf Melts image

Satisfy your meat loaf craving in just 15 minutes by making thin patties and broiling them. These quick and comforting sandwiches have all the elements of a blue plate special-meat loaf, potatoes (in the form of a potato bun) and green beans. They're terrific just the way they are, but adding a couple strips of leftover bacon to each sandwich would be great too!

1 shallot
1 pound meat loaf mix or ground beef
1/2 cup plain breadcrumbs
1/3 cup ketchup
1 large egg, lightly beaten
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper
4 slices provolone or Swiss cheese
1-pound bag frozen cut green beans
2 tablespoons unsalted butter
4 potato hamburger buns, split
3 tablespoons mayonnaise
4 lettuce leaves

Steps:

  • Preheat the broiler.
  • Grate the shallot over a large bowl. Add the meat loaf mix, breadcrumbs, half the ketchup, egg, Worcestershire sauce, 1 teaspoon salt and several grinds of pepper. Use your hands to thoroughly combine the mixture, then divide it into 4 equal balls and shape each into a patty a little less than 1/2 inch thick. Arrange on a baking sheet and broil until the tops of the patties begin to firm up and brown, 3 to 4 minutes. Flip the patties with a metal spatula and continue to broil until cooked through, 2 to 3 minutes more.
  • Brush each patty with some of the remaining ketchup and top each with a slice of cheese. Continue to broil until the cheese melts, about 30 seconds more.
  • While the patties broil, put the green beans, butter, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a medium microwave-safe bowl. Cover and microwave until hot, 4 to 5 minutes.
  • Open the buns and spread the cut sides with mayonnaise. Place a lettuce leaf and patty in each. Serve each sandwich with a small bowl of green beans.

Mel is my mother. This is a very simple recipe that can easily be switched to a Salisbury Steak recipe (see Mel's Salisbury Steaks #67227), or my own quick-and-easy version (see Andy's Quick-and-Easy Meatloaf #67228).

1 large egg, beaten
8 ounces tomato sauce
1/8 lb soda cracker, crushed
1 lb lean ground beef
1/2 medium onion, chopped
1/2 medium green bell pepper, chopped
salt, to taste
ground black pepper, to taste
garlic powder, to taste
onion powder, to taste
celery salt, to taste
non-stick cooking spray

Steps:

  • Preheat oven to 350°F (175°C).
  • Beat egg slightly.
  • Add tomato sauce and combine.
  • Add soda crackers and mix well.
  • Add beef, onions, and bell pepper.
  • Add seasonings to desired amounts.
  • Combine well, and form into a loaf shape.
  • Spray glass meatloaf or casserole dish with non-stick spray.
  • Bake at 350°F (175°C) for about 1 hour.

2 large eggs
3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.
