Cinnamon & White Chocolate Cookies image

This is a recipe I threw together when craving something sweet with cinnamon and white chocolate. My youngest daughter, who does not like anything I make, absolutely loves these! For the best results, it is important to only use margarine, not butter or Crisco.

2 ¾ c flour
2 tsp cream of tartar
1 tsp baking soda
¼ tsp salt
¾ tsp cinnamon
1 c margarine
1 ½ c sugar
4 large egg whites
1 Tbsp light corn syrup
3 tsp pure vanilla extract
2 tsp vegetable oil
¾ c white chocolate chips

Steps:

  • 1. Preheat oven to 375°
  • 2. In a large bowl, combine flour, cream of tartar, baking soda, salt, and cinnamon. Set aside.
  • 3. In a medium bowl cream together margarine and sugar. Add in egg whites, corn syrup, vanilla, and vegetable oil. Mix well.
  • 4. Add sugar mixture to flour mixture and combine. Add in white chocolate chips. Dough will be stiff, but should stick together.
  • 5. Scope heaping tablespoon, and roll into a ball. Place on greased cookie sheet about 2 inches apart.
  • 6. Bake in preheated oven for about 7 -9 minutes. I pull my while still slightly raw in the middle. Place on cooling rack immediately!
