FRESH MELON FRUIT SALAD
This fresh and light melon salad is a great addition to any party.

Steps:
- In large bowl, mix honey, lime peel and lime juice. Add remaining ingredients; toss gently to coat. Cover; refrigerate at least 1 hour to chill.
- Stir salad before serving. If desired, garnish with fresh mint.

MELON AND PROSCIUTTO WRAPS
Steps:
- Scoop out seeds from each melon half. Cut each half into 6 wedges. Remove melon skins. Wrap 1 or 2 slices of prosciutto around each wedge. Secure prosciutto with 4 toothpicks. Cut each wedge into 4 bite-sized pieces. Cover and refrigerate.
- Serve chilled.
- (Can be made 2 to 3 hours ahead of time and chilled. Make sure melon wedges are well wrapped so that they do not dry out.)
MELON FRUIT WRAP
Steps:
- Selection of melon wedges, such as cantaloupe and honey dew Commercially prepared fruit roll-ups (lemon and orange flavors) Shoestring licorice
- Arrange melon wedge in a fruit roll up. Roll it into a cone or cylinder shape. Tie with shoestring licorice.

Steps:
- Combine the honeydew, cantaloupe, watermelon, grapes, pineapple, pickled ginger, orange juice, lime juice, sugar, and chopped mint in a large bowl; stir to mix evenly. Cover the bowl with plastic wrap and refrigerate at least 1 hour.
- Gently fold the strawberries into the fruit mixture. Garnish with the mint sprigs to serve.
