1 7-ounce container 2% plain Greek yogurt (about 3/4 cup)
1/3 cup crumbled feta cheese (about 2 ounces)
1 Persian or Kirby cucumber, grated
2 tablespoons chopped fresh mint
2 cloves garlic, grated
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground turkey
2 tablespoons extra-virgin olive oil
4 sesame hamburger buns or potato rolls, split and toasted
Lettuce and tomato slices, for topping

Steps:

  • Combine the yogurt, feta, cucumber, mint, half of the garlic, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Refrigerate until ready to serve.
  • Combine the turkey, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 1/2-inch-thick patties. Heat a large nonstick skillet over medium-high heat. Add the olive oil, then add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Transfer to a plate.
  • Spread the yogurt sauce on the buns. Sandwich with the burgers; top with lettuce and tomato. Serve with potato chips.

This lovely recipe comes from the June 2007 issue of Family Fun magazine! I find plain turkey burgers to be very blah. These sound delicious. Haven't tried them yet, but will edit this recipe once I do.

1 1/2 lbs ground turkey
1 medium bosc pear, peel, cored and coarsely grated (firm)
1 egg, beaten (or 1/4 cup egg substitute)
1 cup panko breadcrumbs (Japanese style bread crumbs)
1/4 cup fresh flat-leaf parsley, chopped
2 garlic cloves, very finely minced
1 1/2 teaspoons fresh sage, finely chopped
1 1/2 teaspoons fresh rosemary leaves, finely chopped
1/4 teaspoon ground allspice
1 teaspoon coarse salt
1/4 teaspoon fresh ground pepper

Steps:

  • Mix together the turkey, pear, egg, panko, parsley, garlic, sage, rosemary, and allspice in a large bowl until well combined.
  • Add the salt and pepper or more to taste. (to test the flavor, cook a tsp or two of the meat mixture in the microwave or small skillet).
  • Divide the mixture into 6 equal portions and shape them into patties, gently pressing the center of each to create a slight indentation. This will prevent the patty from bulging in the center, so that you end up with a flat, evenly cooked burger.
  • Refrigerate the patties until the grill is ready.
  • Prepare a charcoal fire or a gas grill to medium-hot.
  • Wipe the rack with canola oil and lay the burgers on it indentation side up.
  • Let them cook, without pressing down on them, until the bottoms are well seared, about 5 to 7 minutes.
  • Flip the burgers and continue grilling until they are completely cooked through (the juices will run clear) another 5 to 7 minutes.

I wanted a healthy burger recipe, and I think I created one that is healthy AND tasty!

1 lb ground turkey
1/2 tsp dried oregano
1/2 tsp italian seasoning
1/2 tsp dried parsley
1/2 tsp onion powder
1 1/4 tsp garlic powder
black pepper, to taste
feta cheese

Steps:

  • 1. Mix all ingredients (except feta cheese) together in a bowl.
  • 2. Form into 4 patties.
  • 3. Grill, or cook in a frying pan on the stove, about 10-20 minutes.
  • 4. Top with sliced tomatoes, feta cheese, and Tzatziki sauce (I have posted this recipe as well!).
  • 5. You can do these with or without a bun.

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
1-1/2 tsp. garlic powder
1 pkg. (16 oz.) 93%-fat-free ground turkey
1/3 cup panko bread crumbs
1/2 tsp. dried oregano leaves
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1/2 cup shredded cucumbers
1/8 tsp. dill weed
5 ciabatta sandwich rolls, split
1 cup tightly packed baby spinach leaves
1 jar (4 oz.) roasted red peppers, drained

Steps:

  • Heat grill to medium heat.
  • Mix first 3 ingredients until blended. Mix turkey, 2/3 cup cream cheese mixture, crumbs and oregano just until blended; shape into 5 (1/2-inch-thick) patties.
  • Grill 5 to 6 min. on each side or until done (165°F).
  • Meanwhile, mix remaining cream cheese mixture, feta, cucumbers and dill; spread onto cut side of rolls. Fill rolls with spinach, peppers and burgers.
