1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 celery ribs, chopped
1 small sweet red pepper, chopped
4 green onions, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons spicy brown mustard
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (5 ounces each) albacore white tuna in water
4 cups shredded lettuce
1/2 cup crumbled feta or blue cheese, optional

Steps:

  • In a large bowl, combine the beans, celery, red pepper and green onions. In a small bowl, whisk the oil, vinegar, mustard, basil, salt and pepper. Pour over bean mixture; toss to coat. Gently stir in tuna., Serve over lettuce. Sprinkle with cheese if desired.

This recipe was given to me by a friend of my sister's, who is a nutritionist/dietitian for a living. I thought it might be bad, but holy crap it was so easy to make and tasted like heaven. Even if you don't like one of the ingredients, try it and THEN judge! ;o)

1 cup brown rice
1 cup fresh green beans
1 cup celery, chopped
1 cup red bell pepper, diced
1 cup red onion, diced
1/2 cup fresh basil, chopped
3 (6 ounce) canned tuna, in water
1/4 cup extra virgin olive oil
1/4 cup beef broth
1/2 teaspoon sea salt
black pepper, to taste

Steps:

  • Cook rice according to package directions; after, set aside to cool.
  • While rice cools, steam the green beans until tender-crisp; then rinse under cold, running water.
  • Transfer the green beans to a large serving bowl and add the celery, bell pepper, onion and basil.
  • Add the rice and dressing (the dressing is comprised of the last 4 ingredients listed).
  • Toss to combine, then add tuna.
  • Toss to combine and eat immediately or cover and refrigerate until serving time. (I prefer to refrigerate for a few hours.).
  • (Additional notes: you can also use frozen green beans in lieu of fresh for the recipe if necessary, but please use FRESH basil! It makes all the difference to not be using a dried spice. Also, I love to serve these as tacos/burritos on whole wheat tortillas, but you can serve them however you want!).

4 (6 ounce) cans chunk light tuna, drained well
14 ounces artichoke hearts, drained and coarsely chopped
1/2 cup chopped red pepper
3/4 cup Greek olive, coarsely chopped
1/2 small red onion, minced
1/4 cup Italian parsley, minced
1/4 cup basil, minced
2 garlic cloves, minced (1 teaspoon)
1 teaspoon dried oregano or 1 tablespoon fresh oregano
1 cup mayonnaise
3 tablespoons lemon juice
fresh ground black pepper

Steps:

  • In a large bowl, combine the tuna, artichoke hearts, red pepper, olives, onion, parsley, basil, garlic, oregano, mayonnaise, lemon juice, and pepper. Mix all the ingredients together well. Serve on bread, on top of a green salad or in lettuce cups.

3/4 cup artichoke hearts, marinated in oil or 3/4 cup artichoke heart, water-packed
1/2 cup pitted kalamata olive, coarsely chopped
2 green onions, finely diced
1/2 cup diced fresh tomato
2 teaspoons dried oregano
3/4 cup feta cheese, crumbled
3 -4 tablespoons olive oil (to taste)
1 -2 tablespoon balsamic vinegar (to taste)
salt and pepper, to taste

Steps:

  • Drain tuna and flake into a mixing bowl.

4 teaspoons red wine vinegar
8 slices whole wheat bread
2 (6 ounce) cans tuna in water, drained and flaked
1/3 cup sun-dried tomato packed in oil, drain and chop
1/4 cup kalamata olive, sliced
1/4 cup red onion, finely chopped
3 tablespoons low-fat mayonnaise (I double the mayo)
2 teaspoons capers
1/4 teaspoon fresh ground black pepper
4 romaine lettuce leaves

Steps:

  • Combine olive oil and red wine vinegar in a small bowl; brush oil mixture evenly over 1 side of each bread slice.
