POTATO/YOGURT SOUP
I threw this together for my infant son and my "big girls" all thought it was a treat and begged for a taste. At supper, I had to break up fights of girls stealing spoonfuls from each other. My grandmother made soup like this when I was growing up, but this is a healthier version.

Steps:
- First peel and slice potatoes and rinse in cold water.
- Place potatoes in a heavy large pan and cover with water, just to cover.
- Boil until soft but not mushy.
- Pour about half of the water off of the potatoes, but save half, the starch that boils off the potatoes helps the soup to thicken and holds more nutrients.
- Add yogurt and spices and simmer 5-10 minutes to let the flavors mingle, and serve.
- I like a little shredded cheese in mine, Grew up with Cheddar, but like Mozzarella now.

STRAWBERRY YOGURT SOUP
An elegant chilled soup for the summer. This recipe is courtesy of Vita-Mix. If you are using a blender, cut the strawberries in quarters before adding to the container.

CHILLED CUCUMBER YOGURT SOUP
This recipe is slightly adapted from Celebrity Cruise Line's "Excite the Senses - A Culinary Journey with Celebrity Cruises" cookbook. I am a travel agent, and also write recipe reviews from cruise line's cookbooks on my company blog. I knew after tasting this one that I'd be doing it again and again! Not only is it healthy, but it also fulfilled my three E's of cooking: easy, elegant and economical. "Cook" time is minimum chilling time. I only use Greek yogurt, but feel free to use whatever you'd like.

- Mix all the ingredients in a blender on high speed until smooth. Chill in the refrigerator for at least two hours.

MADZOON OV KUFTEH (MEATBALL YOGURT SOUP)
This is an Armenian recipe from my Mom. The bulgar can be found in any Middle Eastern grocery store.

- Mix together salt, beef, bulgar, onion, red pepper, black pepper, one egg. Use food processor if necessary to blend. Dip hands in cold roll into balls about a size of a quarter.
- For broth crack egg in yogurt and mix well with mint. Heat up 2 cans broth along with 2 cups water, add yogurt mix and keep stirring so soup will not curdle. Add butter and stir until melted.
- Once broth is nearly boiling add meatballs and heat for ten minutes.
- Note: If you want a richer soup, add a pea size pat of butter in the middle of each meatball. It helps if they are cut up and then frozen when rolling the meatball.

SPINACH AND YOGURT SOUP

- Wash and drain spinach; remove any large stems.
- Cut into strips.
- Heat oil in large saucepan and saute garlic, onion, and green onions until soft.
- Stir in rice; add 3 1/2 cups water and the turmeric.
- Season to taste with salt and pepper.
- Simmer for 15 minutes, then add spinach, cooking 5-7 minutes more, until rice is tender.
- Lower heat on soup.
- Stir yogurt briskly, then add to soup.
- Stir only to blend, and heat just until soup is heated through.
- Do not boil, or yogurt will curdle.
- Serve.
- As a suggestion, serve with fresh flatbreads with olive oil, olives, lemon wedges, and a plate of fresh herbs.

- Blend yogurt, water, egg and flour with beater.
- Cook until it boils, stirring constantly with wooden spoon.
- Add salt, cooked wheat and remove from heat.
- Saute onion in butter, add mint and parsley.
- Combine with soup.
- Simmer 5 minutes.
