MARVELLOUS MINI MEATLOAVES (WITH OPTIONS!) OAMC
A perfect addition to your OAMC collection because you can start with the base recipe and then make 1 or all of the variations so that you don't feel like you are eating the same thing for every dinner. This recipe is great for singles too because the mini loaves are individual servings and you can take out as many or as few as you need.

Steps:
- Preheat oven to 375 degrees.
- Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
- Press evenly into 12 greased muffin tins.
- Make a small indentation in the middle of each with the back of a spoon.
- Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
- Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
- Let stand 10 minutes before removing from baking pan.
- For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.

MINI GREEK MEATLOAVES WITH TZATZIKI SAUCE

- Heat oven to 350°F. Spray 8 regular-size muffin cups with cooking spray.
- In medium bowl, mix meatloaves ingredients. Scoop generous 1/3 cup meat mixture into each muffin cup, pressing down slightly.
- Bake 30 to 35 minutes or until meat thermometer inserted in center of one loaf reads 160°F. Let stand in pan 5 minutes.
- Meanwhile, in small bowl, mix tzatziki sauce ingredients; refrigerate until serving time. Serve meatloaves with tzatziki sauce.

- 1. Preheat oven to 375 degrees. Decide which meatloaf flavor you are going to make. The first ingredient is the seasoning, the 2nd one is the add-in and the 3rd one is the cheese.
- 2. Mix meat, stuffing mix, 1 cup water and seasoning until well blended. Press into 12 muffin cups sprayed with cooking spray; make an indentation in the center of each with spoon.
- 3. Spoon add-ins into center of each meatloaf.
- 4. Bake 30 minutes or until meatloaves are cooked through. Top with cheese; continue baking 5 minutes or until cheese is melted.

- Form into 4 loaves.

- Preheat oven to 450 degrees F.
- Combine first 4 ingredients in a large bowl. Stir in 1 tablespoons mint, 1 tablespoons thyme, 1/4 teaspoons salt, allspice, and next 3 ingredients (through egg). Press meat mixture into 8 muffin cups coated with cooking spray. Bake at 450 degrees for 7 minutes. Turn broiler to high; broil 3 minutes.
- Combine yogurt, feta, 1 tablespoons lemon juice, 1 teaspoons mint, and 1 teaspoons thyme in a mini food processor; pulse 10 times to combine.
- Combine 1 tablespoons oil, 1 tablespoons juice, 1/8 teaspoons salt, and pepper in a bowl; stir. Add arugula and cucumber; toss.
- Serve meat loaf with yogurt/feta sauce with arugula/cucumber salad on the side.
