SQUID INK RISOTTO

Good extra-virgin olive oil, for cooking and drizzling
1 large onion, cut into 1/4-inch dice
Kosher salt
2 cups arborio rice
1 1/2 to 2 cups dry white wine
3 to 4 cups chicken stock, kept HOT
2 tablespoons squid ink
10 ounces calamari tubes and tentacles, cleaned and tubes sliced into long strips
2 tablespoons unsalted butter
1/2 to 3/4 cup grated Parmigiano-Reggiano
Fresh chives or micro bull's blood, for garnish, optional

Steps:

  • Coat a large saucepan generously with olive oil over medium heat. Add the onions and salt and sweat until translucent, about 5 minutes. Bring the pan to a medium-high heat. Add the rice and cook, letting the rice slightly stick to the bottom of the pan and scraping it off, until it sounds crackly, 3 to 4 minutes.
  • Add the wine to the pan until it covers the surface of the rice. Season with salt and cook over medium-high heat, stirring continuously, until the wine has absorbed into the rice. Add the chicken stock to the pan until it covers the rice, about 4 minutes. Cook over medium-high heat, stirring continuously, until the stock has absorbed into the rice, about 6 minutes.
  • Repeat this process two more times with the hot chicken stock. When the third addition of the stock has absorbed and the rice is very creamy, bite a couple grains of rice to test how it is cooked. Add the squid ink and mix to incorporate. If the rice is still a little crunchy, add a little more stock and cook the rice for another couple of minutes. Add the calamari and allow to cook until tender and the rice is creamy but still flows and holds its own shape, 5 to 7 minutes. When the rice is cooked perfectly, remove it from the heat.
  • Toss in the butter and Parmigiano-Reggiano and fold to combine. Garnish with chives or micro bull's blood if using, and a big glug of good extra-virgin olive oil.

CALAMARI FILLED WITH SHELLFISH, SAFFRON RISOTTO AND INK SAUCE

1/2 cup white wine
1 pound mussels, scrubbed and debearded
1 pound clams, scrubbed
1 cup cooked, diced lobster meat
3 1/2 ounces crabmeat
Salt and freshly ground black pepper
Pinch saffron
14 ounces squid bodies, cleaned
1 onion, chopped fine
1 tablespoon chopped garlic
1 tablespoon chopped fresh thyme leaves
4 units squid ink
1/2 cup cream
Fresh herbs, as garnish

Steps:

  • Shellfish bouillon: Add the white wine to a saucepan and bring to a boil. When the white wine is boiling, add mussels, clams, and water to just cover, then cook until the shellfish open, about 5 to 8 minutes. Drain and reserve both the water and the shellfish. Remove the mussels and the clams from their shells - keep them separate. Discard the shells. Roughly chop the mussels and clams and combine with the lobster and crabmeat. Season with salt and pepper.
  • Add the saffron to the warm shellfish bouillon and bring to a simmer. Fill the squids (cleaned) with the lobster mix and add to the simmering bouillon. Cook for 5 minutes, then remove the stuffed squids and set aside. Reserve the bouillon.
  • Sauce: In a large skillet, saute the onion, garlic, and thyme until soft, about 5 minutes.
  • Add the reserved shellfish bouillon, squid ink and cream. Boil down until reduced by 1/3, about 10 minutes. Strain onto a small pot, then boil the sauce for another 10 minutes.
  • Serve the stuffed squid with the cream sauce and garnish with fresh herbs.

SQUID INK PAELLA

4 cups chicken stock
6 cloves garlic
1 teaspoon saffron
1 1/2 cups mayonnaise
2 tablespoons olive oil
1 tablespoon Piment d'Espelette
Zest and juice of 1 orange
1/4 cup olive oil
1 1/2 pounds Spanish chorizo
1 1/2 pounds squid (tubes and tentacles)
1 cup diced shallot
8 cloves garlic
1 1/2 cups halved cherry tomatoes
1/2 cup Castelvetrano olives
2 cups Bomba rice
1/2 cup white wine
3 teaspoons squid ink
2 teaspoons paprika
1/4 cup fresh parsley leaves
1/4 cup fresh chive batons (1-inch pieces)

Steps:

  • For the saffron mayo: Add chicken stock and 1 cup water to a medium pot and bring to a simmer. Keep on low heat until ready to use. Poach garlic in the pot of stock and water for 5 minutes, then remove from the stock (keep the stock over low heat).
  • Pour 2 spoons of the hot stock over the saffron in a small bowl to bloom it. Add saffron stock, garlic cloves, mayonnaise, olive oil, Piment d'Espelette and orange zest and juice to a blender and puree until smooth. Set aside.
  • For the paella: Heat a paella pan over medium-high heat and add olive oil to coat. Once oil shimmers, add chorizo and squid and cook, stirring, until squid begins to brown and chorizo renders out some of the fat. Remove chorizo and squid from pan and set aside.
  • Reduce heat to medium and add shallots, garlic, cherry tomatoes and olives. Stir to combine and cook until shallots become translucent and tomatoes begin to burst, about 4 minutes. Add the rice and mix to coat, then cook for an additional 2 minutes. Add the white wine and bring to a boil, then reduce down to a simmer. Add the squid ink, paprika and warmed stock and mix to combine. Turn heat to medium and allow to cook, uncovered, without stirring, until you can hear some sizzling at the bottom of the pan and it starts to crisp on the bottom, for about 25 minutes. Add the chorizo and squid back to the pan and distribute evenly on top. When squid is heated through, remove paella from heat and serve right out of the pan. Serve with dollops of saffron mayo, parsley and chives.

12 manilla clams

Steps:

  • Black Pasta Dough;
  • Sauce;
  • Combine the flour and salt in a standing mixer with a dough hook attachment. Add the eggs, egg yolks and olive oil and work the dough until it comes together. Then turn it out onto a floured board and knead it a couple times.
  • To make the black pasta dough follow the same procedure only mix the squid ink into the eggs with an immersion blender before adding it to the flour.
  • Roll out the dough through the pasta rolling machine in stages being sure not to over work it and make the dough excessively tough.
  • To make the striped pasta, run layers of the egg and squid pasta through the pasta machine being sure not to have too much flour and not folding the pasta on top of each other so the pasta colors don't bleed.
  • Add pasta to a large pot of boiling water and cook until tender, being careful not to overcook, about 2 to 3 minutes.
  • In a large saute pan over medium-high heat, add the oil. Once heated, add the garlic and the crushed red pepper and saute until fragrant. Add the clams and clam juice and reduce. Add the squid and saute until cooked through and tender. Season with salt and pepper, to taste. Add the cooked pasta and toss together.

SQUID INK TAGLIATELLE WITH SQUID AND WHITE WINE-TOMATO SAUCE

2 tablespoons olive oil
2 cloves garlic, smashed
Pinch red chile flakes
3 Roma tomatoes, diced
4 sprigs fresh oregano, leaves chopped, some reserved for garnish
Kosher salt
1/4 cup white wine
1 1/2 pounds squid, cleaned, skin removed, bodies cut into 1/4-inch rings, tentacles reserved for another use
1 recipe Chef Anne's All-Purpose Pasta Dough with Squid Ink, see recipe, rolled into pasta sheets and hand cut into tagliatelle
Grated parm, for sprinkling
Big fat finishing oil, for drizzling

Steps:

  • Add the olive oil, smashed garlic and red chile flakes to a large saute pan. Turn the heat to medium-high and allow the garlic to become fragrant and the oil heated. Once heated, add the tomatoes and oregano, and season with salt. Stir to combine. Cook until the tomatoes release their water, 2 to 3 minutes. Deglaze the pan with the white wine. Cook until the wine is bubbling and has begun to reduce, about 1 minute. Add the squid, stir to combine, and cook until the squid becomes opaque in color--be careful not to overcook it! Taste and adjust the seasoning as needed.
  • Meanwhile, bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 2 minutes. Remove the pasta from the water and add it directly to the sauce along with about 2 tablespoons of the pasta water, some more oregano, some grated parm and a drizzle of big fat finishing oil. Gently toss to combine.
  • Plate and garnish with more grated parm.

SQUID RISOTTO

1 lb cleaned squid
1 tablespoon olive oil
2 teaspoons chopped fresh oregano, or to taste
1/2 teaspoon chopped fresh rosemary
Pinch of dried hot red pepper flakes
4 garlic cloves, minced
5 1/2 cups fish stock, or 2 (8-oz) bottles
clam juice mixed with 3 cups water
1 1/4 cups Arborio rice (8 oz)
1 cup dry white wine
3/4 cup fresh flat-leaf parsley
1 teaspoon fresh lemon juice, or to taste
Accompaniment: lemon wedges

Steps:

  • Pat squid dry, then cut bodies lengthwise into 1/4-inch-wide strips and quarter tentacles lengthwise. Season with salt and pepper.
  • Heat 1 teaspoon oil in a 12-inch nonstick skillet over high heat until hot but not smoking, then cook oregano, rosemary, red pepper flakes, and 1 teaspoon garlic, stirring, until fragrant, about 30 seconds. Add squid strips and tentacles and sauté, stirring constantly, until opaque and curled, about 1 minute. (Do not overcook, or squid will toughen.) Transfer to a sieve set over a bowl to catch juices squid releases.
  • Combine squid juices from bowl with fish stock in a saucepan and bring to a simmer. Season with salt and keep at a bare simmer.
  • Heat remaining 2 teaspoons oil in a large heavy saucepan over moderate heat until hot but not smoking, then cook remaining garlic, stirring frequently, until pale golden, 2 to 3 minutes. Stir in rice and cook, stirring constantly, until rice is translucent, 4 to 5 minutes. Add wine and cook, stirring constantly, until absorbed. Stir in 1 cup simmering broth mixture and cook at a strong simmer, stirring frequently, until broth is absorbed. Continue cooking at a strong simmer and adding broth, 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next, until rice is tender but still al dente and creamy looking, 18 to 20 minutes total. (There may be broth left over.)
  • Stir in squid and parsley and cook just until heated through, about 1 minute. Add lemon juice and salt and pepper to taste.

RISOTTO NERO WITH SQUID

Squid ink is an extraordinarily delicious ingredient; it adds indescribable complexity, even when it's used in small quantities. You can buy it online or from Italian, Spanish and Japanese shops, and in some upscale grocers. Most fishmongers carry it in 1-ounce packets. (If you are up for it, collect your own ink from whole fresh squid.) To make this black risotto, first simmer the squid with tomato, wine and squid ink until tender. Fold the flavorful stew into plain risotto just toward the end of cooking.

2 tablespoons extra-virgin olive oil, plus more for drizzling
1 large onion, finely diced (about 2 cups)
Salt and black pepper
3 garlic cloves, minced
Pinch of saffron
Pinch of crushed red pepper or cayenne
1 pound squid, bodies cleaned and cut into 1/8-inch slices, tentacles halved
1/2 cup chopped tomato, canned or fresh
1 bay leaf
1/2 cup dry white wine
2 teaspoons squid ink (sometimes sold as cuttlefish ink)
2 tablespoons unsalted butter
1 cup Carnaroli or Arborio rice
4 cups unsalted fish, chicken or vegetable broth, plus more as needed
1 teaspoon lemon zest
2 tablespoons roughly chopped flat-leaf parsley

Steps:

  • Put olive oil in a saucepan over medium-high heat. Add half the diced onion and cook, stirring, until softened and barely colored, about 5 minutes. Season generously with salt and pepper, then add garlic, saffron and red pepper and cook for 1 minute more.
  • Add squid bodies and tentacles, stir well to coat and season with salt. Add tomato, bay leaf and 1/4 cup white wine. Add 1 cup water and reduce heat to a simmer. Cook for 10 minutes, then stir in squid ink. Simmer for 10 minutes more, until squid is tender. Taste and adjust seasoning. Set aside.
  • Melt butter in a heavy-bottomed saucepan over medium heat. Add remaining onion, season with salt and cook until softened, about 5 minutes. Add rice, stir to coat, and cook for 2 minutes more.
  • Keeping heat brisk, add remaining 1/4 cup wine and 2 cups of the broth and simmer, stirring, until most of the liquid has been absorbed. Add another cup broth and cook for 5 minutes, stirring. Add the last cup of broth and all of the squid mixture. Cook, stirring, for 5 to 7 minutes more, until rice is just done. Taste and adjust seasoning.
  • Add a little more broth, as necessary, to keep rice moist and loose, but not too soupy. Stir in lemon zest and parsley, then spoon into warm shallow soup bowls. Drizzle with a little olive oil and serve immediately.
